This study investigated the digestibility of proteins in a pea protein-fortified sponge cake, as well as the impact of the degree of structure of the bolus produced by elderly subjects on the digestibility of proteins by combining ex vivo and in vitro approaches via the standardized protocol INFOGEST. The sponge cakes were consumed by a group of 20 elderly subjects with contrasting physiology, their boli were recovered just before swallowing, and their apparent viscosity was measured to delineate the bolus degree of structure. According to this criterion, two pools were formed with boli from subjects selected at the extremes: low viscosity and high viscosity, with apparent viscosity values (at 120 s−1) of 124 ± 18 and 208 ± 19 Pa s, respectively. The sponge cakes and the two pools underwent in vitro digestion. Protein hydrolysis kinetics was followed by measuring the released primary amino groups (NH2) and by sodium-dodecyl-sulfate polyacrylamide gel electrophoresis at different time points. For all samples, the representative bands of pea proteins disappear gradually during digestion, accompanied by the appearance of bands indicating the presence of proteins with MW < 15 kDa. In addition, the NH2 concentrations increase over time and do not differ between sponge cake and pea protein isolate. Moreover, the degree of structure of the food bolus has no significant effect on the concentration of NH2 released. These results showed that pea proteins in a fortified sponge cake are bioaccessible under standardized conditions and that the degree of structure of the bolus did not influence protein digestibility for these foods.  相似文献

Flow of information is of utmost importance during product development (PD) endeavours with timely feedback supporting the resolution of higher risk elements. PD task size, multitasking and resource utilisation levels of the PD system influence information flow and the value ultimately realised from the investment in PD. In this paper, a model incorporating a methodology developed using queuing theory, and in particular, results obtained for Jackson networks are extended to help engineering management to improve PD task flow and consequently become more ‘lean’. Considered factors include: optimal PD task size and multitasking (focus) level as well as the utilisation level of PD resources. Empirical data were collected from a case study company and compared to optimal values. The benefits of the proposed model and approaches are discussed.  相似文献

Although partner support represents a significant source of help amongst people (Beach, Fincham, Katz, & Bradbury, 1996; Cutrona, 1996), few valid and reliable measures of couple support are available. The current study presents the elaboration and validation of the “Questionnaire de soutien conjugal” (QSC), a brief measure evaluating given and received support within conjugal relationship. A sample of 270 French-Canadian couples completed the QSC and a short version of the Dyadic Adjustment Scale (Spanier, 1976; Sabourin, Valois, & Lussier, 2005). One year later, 160 couples agreed to complete the same measures again. Exploratory Factor Analyses supported the two-factor structure of the measure (provided support and received support); those factors predicted current and future couple satisfaction. QSC scales also showed good internal consistency as well as good test–retest reliability after a 1-year period. These findings reveal satisfactory psychometric properties and justify the QSC's use in clinical settings and research protocols. Eleven peptides, selected on the basis of physicochemical characteristics and their theoretical release from β-lactoglobulin (β-Lg) and α-lactalbumin (α-La) by trypsin or chymotrypsin, were chemically synthesised to evaluate their immunomodulating properties. Murine splenocyte proliferation in the absence and presence of mitogen and different peptide concentrations were measured after 72–96 h incubations. β-Lg f78–83 had no effect on proliferation; β-Lg f15–20, f55–60, f84–91, f92–105, f139–148, f142–148 and α-La f10–16 stimulated proliferation to different extents; β-Lg f1–8, f102–105 and α-La f104–108 showed a cytotoxic effect. Regression analysis revealed the relationship of positive charge, hydrophobicity and length to the stimulatory proliferative effect. β-Lg f15–20, f55–60 and f139–148 also induced various inhibiting and/or stimulating effects on cytokine secretion. The results confirm that peptides releasable by digestive enzymes from α-La and β-Lg have the potential to influence the specific immune response through the modulation of splenocyte proliferation and cytokine secretion.  相似文献

Effect of combined microwave (MW) and enzymatic hydrolysis on the human immunoglobulin E (IgE)-binding properties of ??-lactoglobulin (??-lg) and other whey proteins (WP) was investigated. Separated ??-lg and full whey protein isolate (WPI) were hydrolyzed with trypsin, chymotrypsin, mixture of trypsin/chymotrypsin, and pepsin at three microwave power levels: 50?W during 1 and 5?min, 100 and 200?W during 1 and 3?min. The immunoreactivity of the obtained hydrolysates resulting from combined microwave protease treatment was assessed using sera of young patients allergic to bovine whey proteins. The application of microwave treatment at 200?W enhances the hydrolysis of ??-lg by pepsin in 3?min and decreases significantly its immunoreactivity. The extensive hydrolysis of the microwave-treated ??-lg and WPI with trypsin, chymotrypsin, and the mixture of trypsin with chymotrypsin did not have an impact on the IgE binding of the products obtained in all the studied conditions.  相似文献

Although the relevance problem in recommender systems, which typically refers to the similarity between the preference of the user and the items the system recommends, has been well studied, the issue of making recommendations in right orders has barely been mentioned before. The order defines the way in which items should be better consumed in relation to each other. The analysis of real-world data sets demonstrates strong item consumption patterns in the degree of order. In this paper, we propose a novel method to tackle the right-order recommendation problem based on a graph structure that incorporates the item consumption orders. The proposed method can combine relevance and order effects in recommendations. We attempt to recommend the relevant items in the consecutive steps within a user session so that the user’s selected items in the consecutive steps can be stringed together in a right order. The experimental evaluation conducted on three real-world data sets shows that the recommendation accuracy is improved by considering item consumption orders compared with the baseline recommendation methods. In addition, the study on right-order recommendation contributes to the exploration on recommendation appropriateness besides relevance.  相似文献

The fractionated crystallization of high density polyethylene dispersed in a poly(ethylene terephthalate) matrix at composition of 15 wt-% was studied. The effect of the molecular weight of polyethylene with and without compatibilization was particularly addressed regarding its influence on the morphology of the blends. For non-compatibilized blends, the dramatic influence of the molecular weight of the polyethylene on the viscosity ratio and therefore on the dispersion is reflected on the relative intensities of the twin crystallization peaks of polyethylene that are developed upon cooling. These peaks reflect two sets of particles that are nucleated by more or less active heterogeneities. The influence of the addition of an ethylene-glycidyl methacrylate copolymer on the morphology and on the crystallization of the blends was also investigated. For a high molecular weight polyethylene, the compatibilizer shows less efficiency as far as dispersion is concerned.  相似文献

During iterative, UML-based software development, various UML diagrams, modeling the same system at different levels of abstraction are developed. These models must remain consistent when changes are performed. In this context, we refine the notion of impact analysis and distinguish horizontal impact analysis–that focuses on changes and impacts at one level of abstraction–from vertical impact analysis–that focuses on changes at one level of abstraction and their impacts on another level. Vertical impact analysis requires that some traceability links be established between model elements at the two levels of abstraction. We propose a traceability analysis approach for UML 2.0 class diagrams which is based on a careful formalization of changes to those models, refinements which are composed of those changes, and traceability links corresponding to refinements. We show how actual refinements and corresponding traceability links are formalized using the OCL. Tool support and a case study are also described.  相似文献
