This review gives an overview of the importance of interactions occurring in dairy matrices between Lactic Acid Bacteria and milk components. Dairy products are important sources of biological active compounds of particular relevance to human health. These compounds include immunoglobulins, whey proteins and peptides, polar lipids, and lactic acid bacteria including probiotics. A better understanding of interactions between bioactive components and their delivery matrix may successfully improve their transport to their target site of action. Pioneering research on probiotic lactic acid bacteria has mainly focused on their host effects. However, very little is known about their interaction with dairy ingredients. Such knowledge could contribute to designing new and more efficient dairy food, and to better understand relationships between milk constituents. The purpose of this review is first to provide an overview of the current knowledge about the biomolecules produced on bacterial surface and the composition of the dairy matter. In order to understand how bacteria interact with dairy molecules, adhesion mechanisms are subsequently reviewed with a special focus on the environmental conditions affecting bacterial adhesion. Methods dedicated to investigate the bacterial surface and to decipher interactions between bacteria and abiotic dairy components are also detailed. Finally, relevant industrial implications of these interactions are presented and discussed.  相似文献

微波具有萃取效率高、加热均匀、节省时间等特点,而恒能量同步荧光法应用于多环芳烃的检测可提高选择性,导数技术又能放大窄带灵敏度,抑制宽带,改善分辨能力。本文结合恒能量同步荧光扫描技术与导数技术,采用家用微波炉,建立了食品中苯并(α)芘(BaP)的微波辅助萃取-二阶导数恒能量同步荧光法。探讨了影响微波萃取效率的主要因素,如萃取溶剂的类型及使用量、微波萃取时间及冷却时间、微波辐射功率等,并与超声萃取做了比较。对低脂肪样品直接用混合溶剂微波萃取即可进行光谱扫描检测食品中的BaP;对高脂肪样品将皂化和微波辅助萃取这两步操作同时进行,简化操作步骤,缩短样品的前处理时间,使样品的整个分析过程可在1h内完成。该方法操作简单、快速、费用低廉,已应用于实际样检测,低脂肪样品的加标回收率为90.0%~105.0%,高脂肪样品的为83.3%~94.6%,方法重现性好,结果令人满意。  相似文献

Fast and accurate detection of complex samples in either medical diagnosis or food safety analysis are of great significance for the safeguarding of human health. Magnetic relaxation switches (MRS) technique based on superparamagnetic nanoparticles (SMP) is the combination of nano-biotechnology, nuclear magnetic resonance, chemistry and immunoassay. MRS assay has the characteristics of high sensitivity and specificity, as well as nondestructive and time-saving, and can be used in turbid complex samples. In this paper, with a brief discussion about the detection theory of superparamagnetic nanosensor, the target type, structural characteristics, limit of detection, state of magnetic nanoparticles and the change of T2 value of MRS were reviewed. The research progresses of magnetic relaxation switch sensor in medical diagnosis of different biomarkers and the analysis of food hazard factor were also summarized. Accordingly, future research targets from three aspects, e.g., preparation and modification of magnetic nanoparticles, the improvement of detection sensitivity and construction of high flux magnetic relaxation switch sensor, were put forward.  相似文献

A method for the determination of sterols in vegetable oils by CEC with UV–Vis detection, using methacrylate ester‐based monolithic columns, has been developed. To prepare the columns, polymerization mixtures containing monomers of different hydrophobicities were tried. The influence of composition of polymerization mixture was optimized in terms of porogenic solvent, monomers/porogens and monomer/crosslinker ratios. The composition of the mobile phase was also studied. The optimum monolith was obtained with lauryl methacrylate monomer at 60:40% (wt:wt) lauryl methacrylate/ethylene dimethacrylate ratio and 60 wt% porogens with 20 wt% of 1,4‐butanediol (12 wt% 1,4‐butanediol in the polymerization mixture). Excellent resolution between sterols was achieved in less than 7 min with an 85:10:5 v/v/v ACN–2‐propanol–water buffer containing 5 mM Tris at pH 8.0. The limits of detection were lower than 0.04 mM, and inter‐day and column‐to‐column reproducibilities at 0.75 mM were better than 6.2%. The method was applied to the determination of sterols in vegetable oils with different botanical origins and to detect olive oil adulteration with sunflower and soybean oils.  相似文献

建立了在线自动化柱前衍生.高效液相色谱法测定食品中组胺的新方法.通过对测定过程中各个影响因素进行优化,如自动化衍生程序的设定,衍生试剂的用量,衍生体系pH影响等,确立了适宜的测定条件.在该条件下,对于组胺的检出限为0.01 μg/mL,在0.05~100 λg/mL范围内,线性关系良好(r2>0.999).通过对样品基质进行加标,检出限为0.20 mg/kg.将所建立的方法应用于金枪鱼罐头,烟熏鲣鱼,冻鲭鱼等样品中组胺的测定,测得的组胺含量为0.59~167 mg/kg,加标回收率均大于97%,测定值的相对标准偏差均小于5%.所建立的方法适用于大量样品的常规分析测定.  相似文献

Additives added to food packaging materials can migrate to food in contact with them during storage and shelf life. A novel simple, fast and sensitive analyte extraction method based on fabric phase sorptive extraction (FPSE), followed by analysis using ultra-high performance liquid chromatography and mass spectrometry detection (UPLC-MS) was applied to the analysis of 18 common non-volatile plastic additives. Three FPSE media coated with different sol-gel sorbents characterized with different polarities including sol-gel poly(dimethylsiloxane), sol-gel poly(ethylene glycol) and sol-gel poly(tetrahydrofuran) were studied. All three FPSE media showed very satisfactory results. In general, compounds with low logP values seemed to have higher enrichment factors (EFs), especially with poly(tetrahydrofuran) and poly(ethylene glycol) media. For compounds with high logP values, the use of sol-gel poly(dimethylsiloxane) improved the enrichment capacity. Sample preparation time was optimized at 20 min for sample extraction and 10 min for solvent desorption. Acetonitrile was selected as desorption solvent since recoveries were over 70% for 13 out of 18 selected compounds in all FPSE media. The best extraction recovery values were obtained when compounds were dissolved in aqueous acetic acid solution (3%), where 17 out of 18 compounds showed improvement in their signal intensity after FPSE extraction and 10 obtained enrichment factors above 3 for all the tested FPSE media. When FPSE extracts were concentrated under nitrogen, 11 out of 18 compounds reached EFs values above 100.  相似文献

Paper spray mass spectrometry (PS-MS) combined with partial least squares discriminant analysis (PLS-DA) was applied for the first time in a forensic context to a fast and effective differentiation of beers. Eight different brands of American standard lager beers produced by four different breweries (141 samples from 55 batches) were studied with the aim at performing a differentiation according to their market prices. The three leader brands in the Brazilian beer market, which have been subject to fraud, were modeled as the higher-price class, while the five brands most used for counterfeiting were modeled as the lower-price class. Parameters affecting the paper spray ionization were examined and optimized. The best MS signal stability and intensity was obtained while using the positive ion mode, with PS(+) mass spectra characterized by intense pairs of signals corresponding to sodium and potassium adducts of malto-oligosaccharides. Discrimination was not apparent neither by using visual inspection nor principal component analysis (PCA). However, supervised classification models provided high rates of sensitivity and specificity. A PLS-DA model using full scan mass spectra were improved by variable selection with ordered predictors selection (OPS), providing 100% of reliability rate and reducing the number of variables from 1701 to 60. This model was interpreted by detecting fifteen variables as the most significant VIP (variable importance in projection) scores, which were therefore considered diagnostic ions for this type of beer counterfeit.  相似文献
