| 摘 要： | 以白酒酒糟为研究对象,采用超滤、反相高效液相色谱法(reverse phase high-performance liquid chromatography, RP-HPLC)分离制备酒糟中的水溶性多肽组分,并利用超高效液相色谱-四极杆飞行时间质谱联用技术(ultra-performance liquid chromatography-quadrupole-time-of-flight-mass spectrometry, UPLC-Q-TOF-MS)共分离鉴定出30种多肽,包括6种血管紧张素转换酶(angiotensin converting enzyme, ACE)抑制肽AAPK、KAGP、TVPK、YE、VPGK、TPF,2种抗氧化肽VPSGK、LH和1种抑制紫外线引起红斑的功能短肽HP。研究结果表明,白酒酒糟中含有多种生物活性肽。
