摘    要:HACCP质量管理体系是一种先进的卫生管理体系,将其应用于保健酒生产过程中,可减少产品的卫生安全问题,它可将危害分析分解到生产的各个环节,评价其产生危害的可能性和严重性,并制订相应的控制方法,以提高保健酒产品的卫生质量和安全性.保健酒的关键控制点有:原材料中药材的质量、原材料的筛选加工、浸泡容器的清洗、过滤和包装等.(丹妮)

Abstract:HACCP quality control system is an advanced sanitary management system.Its use in health wine prodution could reduce the sanitary and safety problems.The system could decompose hazard analysis in each production procedure to assee the possibility and the severity of the hazard in each procedure.In addition,the formulation of relative control methods could improve the sanitary quality and the safety of health wine products.The key control points of health wine cover the quality of herbs in raw materials,the selection and processing of raw materials,the cleaning of soaking containers,filtration and packing etc.(Tran.by YUE Yang)
