白酒健康与健康白酒综述

综合古代中医药学对酒与健康的研究及现代科技装备、先进的分析检测方法对白酒健康因子的找寻研究进行归纳总结。同时，对健康白酒的发展现状进行分析，为“健康饮酒、理性饮酒”，“适量饮酒、有益健康”，“喝健康白酒、喝明白白酒”的倡导提供科学依据。提出以生物工程、发酵工程技术为动力，充分利用已知的健康因子，发掘天然未知的健康因子，把天然健康因子通过生物工程、发酵工程技术融合到白酒发酵工艺中，开发富含健康因子的白酒。
