白酒健康与健康白酒综述

摘    要:综合古代中医药学对酒与健康的研究及现代科技装备、先进的分析检测方法对白酒健康因子的找寻研究进行归纳总结。同时,对健康白酒的发展现状进行分析,为“健康饮酒、理性饮酒”,“适量饮酒、有益健康”,“喝健康白酒、喝明白白酒”的倡导提供科学依据。提出以生物工程、发酵工程技术为动力,充分利用已知的健康因子,发掘天然未知的健康因子,把天然健康因子通过生物工程、发酵工程技术融合到白酒发酵工艺中,开发富含健康因子的白酒。

Abstract:The research of ancient traditional Chinese medicine on alcoholic drink and health, modern technology and equipment, advanced detection methods on Baijiu (Chinese liquor) health factor were summarized. At the same time, the development status of healthy Baijiu were analyzed, which could provide scientific basis for the advocacy that 'healthy drinking, responsible drinking', 'moderate drinking is good for health', 'drinking healthy Baijiu, understanding the Baijiu '. The research and developing direction that using the bioengineering and fermentation engineering technology as power, the known health factors were fully utilized, natural unknown health factors were discovered, natural health factors were fused into the Baijiu fermentation process by biological engineering, fermentation engineering technology, to develop the Baijiu rich in health factors.
