Walnut flour (WF), a by-product of walnut oil production, is characterised by high polyunsaturated fatty acids, proteins, and fibre contents and presents suitability for bakery products. However, when using non-traditional ingredients, it is essential to evaluate the effect on the quality properties of the final product. So, this work aimed to assess the impact of WF on the technological, physicochemical, and sensory properties of gluten-free (GF) cakes. WF was added at a flour blend (cassava (CS) and maize (MS) starches and rice flour) at 0, 10%, 15%, and 20%. The results showed that WF modified starch gelatinisation, increased amylose–lipid complex (ALC) content, and made crumbs easier to chew. Besides, the total dietary fibre (TDF) and protein content significantly increased. Cakes with 15% WF presented the highest specific volume (SV) and no differences in overall acceptability with respect to control. Hence, WF is a suitable ingredient for gluten-free bakery products.  相似文献

Sustainability is generally associated with a definition by the World Commission on Environment and Development, 1987: "... development that meets the needs of the present without compromising the ability of future generations to meet their own needs ..." However, there is no mathematical theory embodying these concepts, although one would be immensely valuable in humanity's efforts to manage the environment. The concept of sustainability applies to integrated systems comprising humans and the rest of nature; the structures and operation of the human component (society, economy, law, etc.) must be such that they reinforce the persistence of the structures and operation of the natural component (ecosystem trophic linkages, biodiversity, biogeochemical cycles, etc.). One of the challenges of sustainability research lies in linking measures of ecosystem functioning to the structure and operation of the associated social system. We review the nature of this complex system including its ecological, social, economic, and technological aspects, and propose an approach to assessing sustainability based on Information Theory that bridges the natural and human systems. These principles are then illustrated using a model system with an ecological food web linked to a rudimentary social system. This work is part of the efforts of a larger multidisciplinary group at the U.S. Environmental Protection Agency's National Risk Management Research Laboratory.  相似文献

There has been a growing interest in applying human computation – particularly crowdsourcing techniques – to assist in the solution of multimedia, image processing, and computer vision problems which are still too difficult to solve using fully automatic algorithms, and yet relatively easy for humans. In this paper we focus on a specific problem – object segmentation within color images – and compare different solutions which combine color image segmentation algorithms with human efforts, either in the form of an explicit interactive segmentation task or through an implicit collection of valuable human traces with a game. We use Click’n’Cut, a friendly, web-based, interactive segmentation tool that allows segmentation tasks to be assigned to many users, and Ask’nSeek, a game with a purpose designed for object detection and segmentation. The two main contributions of this paper are: (i) We use the results of Click’n’Cut campaigns with different groups of users to examine and quantify the crowdsourcing loss incurred when an interactive segmentation task is assigned to paid crowd-workers, comparing their results to the ones obtained when computer vision experts are asked to perform the same tasks. (ii) Since interactive segmentation tasks are inherently tedious and prone to fatigue, we compare the quality of the results obtained with Click’n’Cut with the ones obtained using a (fun, interactive, and potentially less tedious) game designed for the same purpose. We call this contribution the assessment of the gamification loss, since it refers to how much quality of segmentation results may be lost when we switch to a game-based approach to the same task. We demonstrate that the crowdsourcing loss is significant when using all the data points from workers, but decreases substantially (and becomes comparable to the quality of expert users performing similar tasks) after performing a modest amount of data analysis and filtering out of users whose data are clearly not useful. We also show that – on the other hand – the gamification loss is significantly more severe: the quality of the results drops roughly by half when switching from a focused (yet tedious) task to a more fun and relaxed game environment.  相似文献

A new technique for producing steady metallic jets is proposed. It allows the production of supercritical jets with Weber numbers well below unity, which entails important technological advantages over existing techniques. The metallic liquid is injected through a micrometer converging nozzle located inside a gas stream. Both the liquid jet and the coflowing gas current cross an orifice located in front of the nozzle. The gas stream stabilizes the jet by sweeping away the capillary waves growing on the free surface. In this way, one can steadily produce microjets with a kinetic energy much lower than the interfacial energy, a possibility that has been predicted theoretically (Gañán-Calvo in Phys Rev E 78:026304, 2008). Experiments were conducted with mercury to assess the performance of the new technique. The experimental results agreed remarkably well with the predictions calculated from the convective/absolute instability transition of the jet. The jet breakup mechanism did not correspond to classical Rayleigh instability, but to the growth of surface waves over a capillary column which ends at a fixed location. The results were compared with those obtained with the well-established flow focusing method to show that the new technique considerably favors the jet’s stability.  相似文献

Literature reviews examining the relationship between heavy equipment vehicle (HEV) operation and the development of musculoskeletal disorders have generally been qualitative in nature and have not employed an evidence-based assessment procedure. This research determines the extent to which whole-body vibration/shock and working postures are associated with lower back and neck disorders among HEV operators, while accounting for individual (i.e. age, gender, prior history of back or neck disorders) and occupational (i.e. material handling, climatic conditions, psychosocial factors) confounders. Published articles were obtained from a search of electronic databases and from bibliographies in the identified articles. A critical appraisal of these articles was conducted using an epidemiological appraisal instrument (Genaidy et al. 2007). The meta-analysis was conducted using statistical techniques employing fixed-effect and random-effect models. Eighteen articles reporting observational studies satisfied the inclusion criteria adopted for this research. The methodological qualities of the published studies ranged from marginal to average. The meta-relative risk was found to be 2.21, indicating that operators exposed to driving HEVs are at more than twice the risk of developing lower back pain in comparison to those not exposed to driving HEVs. Therefore, it seems possible that there is a causal relationship between working as a HEV operator and development of lower back disorders. Prospective cohort studies are urgently needed to confirm the outcomes of this evidence-based methodology (based in part on the meta-analysis) and the biological plausibility should be further explored. The reported findings point to a need for improved ergonomic design of HEVs.  相似文献

Automatic segmentation of multiple sclerosis (MS) lesions in brain MRI has been widely investigated in recent years with the goal of helping MS diagnosis and patient follow-up. However, the performance of most of the algorithms still falls far below expert expectations. In this paper, we review the main approaches to automated MS lesion segmentation. The main features of the segmentation algorithms are analysed and the most recent important techniques are classified into different strategies according to their main principle, pointing out their strengths and weaknesses and suggesting new research directions. A qualitative and quantitative comparison of the results of the approaches analysed is also presented. Finally, possible future approaches to MS lesion segmentation are discussed.  相似文献

This research evaluated the in situ physicochemical changes and alterations occurring in an electrolytic chromium coated steel (ECCS), surface protected by polyethylene teraphthalate (PET) copolymer, after inducing a fracture on the coating in an acid acetic‐acetate medium. The delamination was characterized in the front of the failure by means of anodic and cathodic electrochemical mechanisms, and the resistance and degradation of the metal‐polymer composite's substrates were analyzed by means of Raman vibrational spectroscopy. The application of an electrochemical cell to generate in situ delamination, simulating the formation of pores or artificial defects, provided information on the activity inside the substrates of the PET‐coated ECCS composite as a result of the effect of the acetic acid. The anodic delamination mechanism is based on the diffusion of the electrolyte through the metal‐polymer interface and the pre‐existence of pores on the polymer layer. Magnetic resonance imaging (MRI) is frequently used to detect and segment multiple sclerosis lesions due to the detailed and rich information provided. We present a modified expectation-maximisation algorithm to segment brain tissues (white matter, grey matter, and cerebro-spinal fluid) as well as a partial volume class containing fluid and grey matter. This algorithm provides an initial segmentation in which lesions are not separated from tissue, thus a second step is needed to find them. This second step involves the thresholding of the FLAIR image, followed by a regionwise refinement to discard false detections. To evaluate the proposal, we used a database with 45 cases comprising 1.5T imaging data from three different hospitals with different scanner machines and with a variable lesion load per case. The results for our database point out to a higher accuracy when compared to two of the best state-of-the-art approaches.  相似文献
