超高压杀菌技术在食品加工中的商业应用已经有20多年的历史,而第一次在乳品中应用的实验可追溯至1899年。该项技术和其他的杀菌方法一样通常用于杀死食品中的致病菌和腐败菌。恒天然公司经过多年的研究改进了该技术,在杀死大部分或全部的有害微生物的同时使食品中的营养成分成功的得以保留下来,以此创造崭新的功能性产品。正如名称所示,超高压杀菌技术采用非常高的压力作为杀菌方法替代热处理杀菌,从而达到保藏食品的目的。这种技术类似于把食品放置于海洋深处一段时间,然后再把食品从海洋深处打捞出来,唯一不同之处在于超高压杀菌技术采用的压力要远远高于食品在海洋中承受的压力。例如马里亚纳海沟的最深处的压力大约在1OOOBar左右,而超高压杀菌技术采用的压力可以高达7000Bar。目前超高压杀菌技术已经在果汁、果酱、水产品和肉制品等行业得以应用,恒天然公司开创了其在乳品和含有乳原料的产品中的应用。恒天然公司对超高压杀菌技术经过长达4年的研究,到目前为止已经在30多个国家取得或正在申请包括在酸奶和发酵食品、乳蛋白和酶处理、包含活性成分的食品中应用的专利。 相似文献

由于超高压杀菌技术实现了常温或较低温度下杀菌和灭酶,保证了食品的营养成分和感官特性,因此被认为是一种最有潜力和发展前景的食品加工和保藏新技术。广泛的应用于含液体成分的固态食品或液态食品的杀菌。本实验尝试以酱料食品为样本,研究超高压杀菌技术对半固体膏状调味品的微生物卫生指标的影响,探讨非热力抑菌技术在半固体膏状调味品生产的应用。分别对压力、保压时间、温度进行单因素实验,结果为300MPa为最佳压力,20min为最佳保压时间,32℃为最适温度。 相似文献

对于半固体膏状调味品,常规热力抑菌措施很难有效保障产品的安全。但是超高压杀菌技术实现了常温或较低温度下杀菌和灭酶,保证了食品的营养成分和感官特性。本实验尝试以涮肉调料为样本,探讨非热力抑菌技术在半固体膏状调味品生产的应用。采用Box-Behnken响应曲面法分析压力、温度、保压时间等三因素的交互影响,得出影响的主次顺序为:压力>温度>保压时间,压力330MPa,保压时间16min,温度37℃的条为最佳参数。其结果为菌落总数为18000cfu/g,大肠菌群数<3.0(MPN/100g)。本次试验大肠杆菌均未检测出超标情况,大肠菌群阴性,MPN/g<3.0。 相似文献

Throughout the last decade, high pressure technology has been shown to offer great potential to the food processing and preservation industry in delivering safe and high quality products. Implementation of this new technology will be largely facilitated when a scientific basis to assess quantitatively the impact of high pressure processes on food safety and quality becomes available. Besides, quantitative data on the effects of pressure and temperature on safety and quality aspects of foods are indispensable for design and evaluation of optimal high pressure processes, i.e., processes resulting in maximal quality retention within the constraints of the required reduction of microbial load and enzyme activity. Indeed it has to be stressed that new technologies should deliver, apart from the promised quality improvement, an equivalent or preferably enhanced level of safety. The present paper will give an overview from a quantitative point of view of the combined effects of pressure and temperature on enzymes related to quality of fruits and vegetables. Complete kinetic characterization of the inactivation of the individual enzymes will be discussed, as well as the use of integrated kinetic information in process engineering. 相似文献

High pressure processing is a novel food preservation technology, applied for over 15 years in the food industry to inactivate spoilage and pathogenic microorganisms. Many studies have shown the differential resistance of bacterial cells to high pressure. Listeria monocytogenes is a bacterium able to grow at refrigerated temperature and to survive for a long time in minimally processed foods such as raw smoked fish. The freezing process does not cause significant decline of L. monocytogenes. The phase diagram of water under pressure permits a pressure treatment under subzero temperature, without the disadvantages of freezing for food quality. The aim of this study was to estimate if combined effects of pressure and subzero temperature could increase the destruction of L. monocytogenes in buffer and in smoked salmon. We investigated effects of high pressure processing (100, 150, and 200 MPa) combined with subzero temperatures (-10, -14, and -18 degrees C) and pH (7.0 and 4.5). Results showed that the most effective high-pressure treatment to inactivate L. monocytogenes was 200 MPa, -18 degrees C, and pH 4.5. The relevance of pressure holding time and the synergistic effect of pressure coupled with the subzero temperature to inactivate bacteria are highlighted. Modifications of physical properties (color and texture) were a lightening of color and an increase of toughness, which might be accepted by consumers, since safety is increased. 相似文献
