乳清蛋白是牛奶乳清中存在的一类优质蛋白质,含有β-乳球蛋白、α-乳白蛋白、牛血清蛋白、免疫球蛋白、乳铁蛋白、乳过氧化物酶、糖巨肽属活性蛋白等多种生物活性成分.研究表明,乳清蛋白具有抗氧化、抗癌、免疫调节、抗菌、抗病毒、抗炎、增加益生菌等多种生物学效用,在婴儿配方奶粉、蛋白质补充剂、运动营养品以及美容产品等领域均有广泛的应用前景.本文就乳清蛋白的生物学作用研究进展进行了综述. 相似文献

乳清蛋白是牛奶乳清中存在的一类蛋白质,其必需氨基酸种类齐全、数量充足且比例适当,是一种营养价值较高的优质蛋白,在维持机体肠道、肌肉组织的健康和补充体内的GSH数量、抗氧化系统健康方面有重要作用.乳清蛋白中还含有β-乳球蛋白、α-乳白蛋白、血清白蛋白、免疫球蛋白、乳铁传递蛋白以及乳过氧物酶等多种生物活性蛋白.这些物质参与构成机体非特异性防御屏障,在抗茵、抗病毒、免疫调节等方面发挥积极作用. 相似文献

初乳不同于常乳,它是哺乳动物为自己的后代准备的第一份食品。牛初乳不仅含有哺乳动物所必需的各种营养物质、矿物元素和氨基酸,还含有很多具有生物活性的多肽、底聚糖类物质。其中研究较多的有:非肽类营养因子(nonpeptide trophic factors),激素(hormones),细胞因子(cytokines),生长因子(growth factors),表皮生长因子受体配基家族(epidermal growth factor receptor ligand family),表皮生长因子(epidermal growth factor),转移生长因子(transforming growth factor),转化生长因子β家族(transforming growth factor β family),胰岛素样生长因子(insulin-like growth factors),生长调节素及其结合蛋白(somatomedins,and their binding proteins),血小板衍生的生长因子(platelet-derived growth factor),(vascular endothelial growth factor),乳铁蛋白(lactoferrin),生长激素及其释放因子(growth hormone and its releasing factor)和抗体等。本文就初乳的特性、这些生理因子的作用、应用、分离提纯和研究进展进行系统综述,并从哺乳动物进化的角度分析初乳这些功在新生个体发育和分化和先天免疫中的作用。 相似文献

Milk proteins have received much awareness due to their bioactivity. However, their encapsulation functions have not attracted enough attention. Milk proteins as encapsulation walls can increase the bioavailability of bioactive compounds. As the benefits of bioactive compounds are critically determined by bioavailability, the effect of interactions between milk proteins and active substances is a critical topic. In the present review, we summarize the effects of milk proteins as encapsulation walls on the bioavailability of active substances with a special focus. The methods and mechanisms of interactions between milk proteins and active substances are also discussed. The evidence collected in the present review suggests that when active substances are encapsulated by milk proteins, the bioavailability of active substances can be significantly affected. This review also provides valuable guidelines for the use of milk protein-based microcarriers. 相似文献

The article of discussion character is devoted to a problem of adequacy of breast milk substitutes to a true breast milk composition. The data on a multiple composition of breast milk including both nutrients and factors of growth--biologically active substances of breast milk are resulted. In paper was accentuated that the solution of a problem of adequate nutrition of children during first year of life in the first place is connected to propagation of need of breast feeding, health nutrition of mother in the pregnancy period and breast feeding and also with further adaptation of breast milk substitutes with the count of physiological need of infant organism in a wide diversification macro- and micro-nutrients. Milk contains components that provide critical nutritive elements, immunological protection, and biologically active substances to both neonates and adults. Milk proteins are currently the main source of a range of biologically active peptides. Concentrates of these peptides are potential health-enhancing nutraceuticals for food and pharmaceutical applications. Several bioactive peptides may be used as nutraceuticals, for example, in the treatment of diarrhea, hypertension, thrombosis, dental diseases, as well as mineral malabsorption, and immunodeficiency. Minor whey proteins, such as lactoferrin, lactoperoxidase, lysozyme, and immunoglobulins, are considered antimicrobial proteins. Milk also contains some natural bioactive substances. These include oligosaccharides, fucosylated oligosaccharides, hormones, growth factors, mucin, gangliosides, and endogenous peptides, which are present in milk at secretion. Most of the claimed physiological properties of milk bioactive components have been carried out in vitro or in animal model systems, and these hypothesized properties remain to be proven in humans. Whether these milk bioactive components will replace drugs entirely in the immediate future is still unclear, but the increasing appreciation of "drug foods" or nutraceuticals plays a complementary rather than a substitutional role to the synthetic pharmacological drugs. 相似文献
