摘    要:“食品工程原理”是食品科学与工程专业的基础课程,也是学生从专业基础课转向专业核心课程学习的基础。基于成果导向教育(OBE)教育理念,将其应用到“食品工程原理”课程教学中,以成果为导向,探讨在理论教学、实验操作和虚拟仿真方面的运用,达到培养学生自主学习创新、探索未知领域能力的目的,从而提高教学质量。

Abstract:The Principle of Food Engineering is not only the basic course of food science and engineering,but also the basis for students to learn from the basic course to the core course.Based on the concept of outcome based education(OBE),this paper applied it to the teaching of Food Engineering Principles,and discussed the application of OBE in theoretical teaching,experimental operation and virtual simulation,aimed to cultivate students'ability of independent learning,innovation and exploration of unknown fields.
