摘    要:在优化溶菌酶水解参数的基础上,运用3-甲基-2-苯并噻唑酮腙(MBTH)比色法研究了溶菌酶对不同脱乙酰度的壳聚糖的水解敏感性。结果表明:在70℃、pH值4.5、壳聚糖质量浓度5 mg/mL的条件下,溶菌酶在壳聚糖的脱乙酰度为41.7%时体现出最高敏感性。

Abstract:Based on optimization of hydrolysis parameters of lysozyme, the susceptibility of lysozyme to the chitosan with different degree of deacetylation is studied by 3-Methyl-2-benzothiazolinonehydrazone (MBTH) assay. The resuhs show that the optimal temperature is 70℃, pH value is 4. 5 and the chitosan concentration is 5 mg/mL. Under the optimum conditions, the susceptibility of lyso- zyme reaches a maximum at 41.7% degree of deacetylation.
