摘    要:超高压技术是食品和农产品加工的高新技术之一,在果蔬产品、蛋白质产品、乳制品、肉制品、速冻食品、水产品等加工中有着广泛应用.我国在运用超高压技术方面尚处在起步阶段,有着广泛的发展空间.

Abstract:As one of the new high processing techniques for food and agricultural products,superhigh pres- sure technology finds wide application in processing fruit and vegetable products,protein products,dairy products,meat products,quick-frozen products,aquatic products and etc.At present the pressure tech- nology in our country is still at the beginning stage and has a very broad space for its development.
