气体吸收剂对鲜切莴苣褐变抑制效果的研究

摘    要:用气体吸收剂对鲜切莴苣进行低温贮藏保鲜试验,测定了莴苣的色泽变化以及感官评定指标并进行保鲜效果分析。结果表明:脱氧剂、乙烯脱除剂、二氧化碳脱除剂等气体吸收剂对鲜切莴苣贮藏中的褐变具有明显的抑制效果,能够有效延长鲜切莴苣的贮藏期。

Abstract:Low-temperature and preserving experiment of fresh-cut Lactuca satival was carried out in gas absorbents.By detecting the color variation and sensory index of Lactuca satival,preserving effect was analyzed.Result showed that oxygen scavengers,ethylene scavengers,carbon dioxide scavengers and other gas absorbents had inhibiting effect on the browning of fresh-cut Lactuca satival and could prolong the storage period of Lactuca satival.
