摘    要:采用二次回归正交旋转组合设计对核桃渣磨浆工艺进行了优化,建立了水溶性蛋白质的得率(Y)对固液比(X1)、浸泡时间(X2)、温度(X3)及碳酸氢钠添加量(X4)四个实验因素的正交回归模型:Y=30.59497-0.08315X1+3.20393X2+1.79671X3+0.78024X4-3.40536X21+0.05604X22-0.10458X23-2.87313X24-0.33233X1X2+0.11190X1X3+0.64483X1X4+0.64483X2X3+0.11190X2X4-0.33233X3X4。从模型推知,当固液比为1∶8、磨浆温度为60℃、浸泡时间3h、碳酸氢钠浓度为0.6%时,可溶性蛋白质得率最大值达到39.01%,验证实验结果与模型值基本相符。为提高工作效率,在模型得出的最佳条件基础上,浸泡时间缩短为2.5h条件下,可溶性蛋白得率为37.02%。
