基于超高压的稻谷亮白曲霉杀菌效应及其萌发特性研究

摘    要:以人工表面污染亮白曲霉的稻谷作为试验对象,研究了超高压加工参数(压力、保压时间、预浸泡时间)的杀菌效果及加工后稻谷的萌发特性。结果表明,压力、保压时间、预浸泡时间等参数对稻谷亮白曲霉的杀菌效果均有显著影响。当压力大于300 MPa时,亮白曲霉存活量开始有明显的下降,且保压时间越长亮白曲霉存活量下降幅度越明显。而在超高压处理前对稻谷进行预浸泡也可有效提高超高压的杀菌效果,且预浸泡时间越长提高效果越明显。此外,超高压加工可有效实现稻谷的休眠,在较低压力(100 MPa)下即可使稻谷完全失去萌发能力,而浸泡预处理对于稻谷的萌发能力略有保护作用。

Abstract:Researchs were made in the inactivation of Aspergillus candidus on artificially contaminated unhulled rice as well as the germination characteristic using high hydrostatic pressure in different parameters(pressure, holding time and pre-soaking time). All these parameters affected the inactivation of high pressure. A obvious reduction of candidus was observed after treated at a pressure higher than 300MPa, the longer the holding time the greater the degree of pressure inactivation. Furthermore, pre-soaking rice prior to high pressure treatment also enhanced pressure inactivation of candidus. High pressure has fatal affections on the germination ability of rice, and a complete loss of viability was found after treated at 100MPa.
