洋葱不同溶剂提取物体外抗氧化活性评价

摘    要:通过测定还原力、螯合能力及其对羟基自由基、DPPH自由基、超氧阴离子自由基的清除能力等实验研究了洋葱5种不同溶剂提取物的体外抗氧化活性。实验结果表明:洋葱水提物的还原力最强,对DPPH自由基、超氧阴离子自由基和羟基自由基清除能力也最强;丙酮提取物对Fe2+的螯合能力最强。综合评价,洋葱水提取物的抗氧化活性最强。

Abstract:Antioxidant activities of five different solvent extracts from onion in vitro were evaluated by measuring its reducing power,chelating ability and its scavenging capacity on the hydroxyl radical,DPPH radical and superoxide anion radical.The experimental results showed that the aqueous extract from onion posses strongest reducing power,best scavenging activity to DPPH radical,hydroxyl radical and superoxide anion radical,however,the acetone extract from onion posses strongest chelating activity on Fe2+,conclusively,the aqueous extract from onion posses best antioxidant activity.
