儿茶素类化合物的体外抗氧化作用研究

摘    要:本实验通过DPPH·法、硫氰酸铁法等方法测定儿茶素清除DPPH·自由基、抗脂质过氧化和还原能力.研究结果表明儿茶素在清除自由基、抗脂质过氧化及还原能力方面均有一定作用,尤其是清除自由基和还原能力较对照品Vc强,差异性较显著;但在抗脂质过氧化方面儿茶素并未表现出剂量-效应关系,然而当加入表面活性剂后,增强了儿茶素的抗脂质过氧化活性.因此,儿茶素在清除自由基和还原能力方面均较优越,但在抗脂质过氧化方面较差,当加入适量的表面活性剂可以改善其活性.

Abstract:The ability of tea catechins in free radical removing,lipid peroxidation resisting and reduction has been studied by DPPH and FTC in this paper.All the results showed that tea catechin was active in all the three aspects mentioned above,especially in free radical removing and reduction,the difference was more significant compared with ascorbic acid(Vc).Though there was no dose-effect relation showed in lipid peroxidation resisting ability,it was enhanced after adding of surfactants.Therefore,tea catechin was more superior in the activities of removing free radical and reducing,while it was relatively poor in inhibition of lipid peroxidation,which could be improved by adding of moderate surfactants.
