Abstract:Objective Measure the content of heavy metals in edible fish in Chancheng District, Foshan City, analyze the characteristics of average content, and conduct health risk assessment. Methods Direct mercury measuring instrument was used to determine the Hg content in edible fish; microwave digestion method was used for pre-treatment, and inductively coupled plasma mass spectrometry (ICP-MS) was used to determine As, Cd, Cr ,Pb and other 13 heavy metals content; used high performance liquid chromatography-inductively coupled plasma mass spectrometry (HPLC-ICP-MS) to measure inorganic arsenic content. The nutritional quality index method was used to evaluate the nutritional value of different fish; according to the GB 2762-2017 National Food Safety Standards Limits of Contaminants in Food, the target risk coefficient method was used to evaluate the health risk of single and compound heavy metal intake of different fish. Results The high detection rate of harmful heavy metals As and Hg in common food fish in Chancheng District were both 99.4%; the average contents of As, Cd, Cr, Hg and Pb were 1.312, 0.048, 0.010, 0.030, 0.015 mg/kg respectively; the average inorganic arsenic content was 0.003 mg/kg; the adult nutritional quality index INQ of Se, K, and Mg in fish was greater than 1; the single health risk index and the compound health risk index of heavy metals ingested by adults due to fish consumption were both less than 1.Conclusion The average content of the five harmful heavy metals As, Cd, Cr, Hg and Pb in the muscle of edible fish in Chancheng District were all lower than the standard limit, which meets the national food safety standards; the nutritional value of Se, K and Mg in fish meat was rich; The health risks of eating fish ingesting harmful heavy metals were not obvious, and the safety was good.
