| 摘 要： | 为研究杏仁蛋白对血脂的影响,先用盐析法从山杏仁中提取杏仁蛋白,并用胰蛋白酶水解部分杏仁蛋白,然后采用大鼠脂代谢紊乱模型进行动物实验。选用初体重100g左右的Wistar大鼠在实验环境下适应4d后,以体重无差异分成3组(每组6只):对照组、蛋白组和水解组。每组在试验期间自由摄入高脂饲料,经口定量(300mg/kg.d,每只大鼠)给予水或杏仁蛋白、杏仁蛋白水解物10d,然后禁食16h,心脏取血,测定血清总胆固醇、甘油三酯、高密度脂蛋白胆固醇、低密度脂蛋白胆固醇水平。结果表明,杏仁蛋白具有显著降低血脂作用,杏仁蛋白水解产物的降血脂的作用更明显一些。
