摘    要:针对国家标准GB/T 17892-1999《优质小麦、强筋小麦》、GB/T 17893-1999《优质小麦、弱筋小麦》的质量指标多,检验仪器昂贵,操作繁锁,测定时间长,无法满足粮食收购过程中的检验、定等和定价工作的需要。研究并利用湿面筋、面筋指数与蛋白质、面团稳定时间的相关性,建立通过测定湿面筋及面筋指数来推算蛋白质含量、面团稳定时间的方法,为小麦收购现场检验工作提供快捷、简便的方法依据。

Abstract:In view of the plentiful quality indexes, costly detecting instruments, fussy operation, and long detecting time of national standard GB/T 17892-1999 "High quality wheat- Strong gluten wheat" and GB/T 17893-1999 "High quality wheat-Weak gluten wheat", which can't meet the needs of detecting, grading and pricing for grain procurement, the correlations between wet gluten content and gluten index, protein content and dough stability time were studied. A method for extrapolating the content of protein and the dough stability time by detecting the content of wet gluten and gluten index was established, which is a rapid and simple method for wheat procurement on site.
