| 摘 要： | 本文以橙红Ｇ为染料，对染料结合法测定小麦蛋白质进行了系统的研究，并对影响该法的一些因素（样品粒度、ｐＨ、浓度、温度和时间等）进一进行了研究，结果表明该法有实际应用价值。
