卓越绩效管理在大米和糙米乳饮料生产企业HACCP管理的应用探究

目的]考察卓越绩效管理在大米和糙米乳饮料生产企业HACCP管理中的应用效果。方法]以糙米和大米为原料,经烘烤、糊化、液化酶解等工艺生产米乳饮料。通过对原料、关键生产工序及影响产品安全的人为因素进行危害分析,建立HACCP计划表,同时将卓越绩效管理应用于HACCP体系的运作中。结果]将卓越绩效管理与HACCP有机结合应用,能更好地发挥HACCP管理体系的预防功效,将潜在危害因子降低到最低;卓越绩效管理在HACCP体系的有效执行,可使产品品质得到充分保证,达到最佳质量管理效果。结论]研究可为今后卓越绩效管理与HACCP有机结合应用提供参考依据。

Study on the Application of Excellent Performance Management in HACCP System of Rice and Brown Rice Milk Beverage Production Enterprises

Abstract Objective ~ To investigate the application of excellent performance management in HACCP system of rice and brown rice milk bever- age production enterprises. Method ] With brown rice and rice as raw material, the beverage was obtained by process of baking, gelatinization, enzymatic liquefaction. Through damage analysis on raw material, the key production processes, and anthropogenic factors affecting product safe- ty, HACCP plan table was esablished, the excellent performance management was applied in HACCP system. Result] The combination use of excellent performance management and HACCP could better play the prevention effect of HACCP management system. The product quality can be fully guaranteed, achieve the best effect of quality management.
