摘    要:辣椒具有很高的营养价值及多种保健功效。干燥加工是辣椒产业精深加工主要方式之一。主要介绍了辣椒干燥技术研究现状、存在的问题以及辣椒干燥产业的发展趋势,旨在为辣椒加工产业的发展提供参考和帮助。
