摘    要:为探索制丝过程中不同档次卷烟配方叶组化学成分及相关酶活性的变化,分析了制丝过程的6个生产工序高、中、低档烤烟型卷烟配方叶组的多酚、淀粉、总糖、还原糖、烟碱、总氮含量以及多酚氧化酶和淀粉酶活性。结果表明:①在制丝过程的6个工序中,除贮片工序还原糖含量略有增大外,高、中、低档卷烟配方叶组的多酚、淀粉、总糖、还原糖、烟碱和总氮均持续降低;②多酚氧化酶活性和淀粉酶活性从投料口至第1次润叶后均有所增加,之后工序中多酚氧化酶活性持续降低,淀粉酶活性至贮片工序后仍有所增加,之后持续降低;③在制丝过程的6个工序中配方叶组的多酚、总糖及还原糖含量、碱氮比及糖碱比与最佳值接近程度、淀粉酶活性与其卷烟档次成正比,而烟碱、总氮、淀粉含量及多酚氧化酶活性与其卷烟档次成反比。
