摘    要:应用穿流式干燥试验台对红枣进行热风干燥单因素试验,分析了在不同风温(45,55,65℃)、不同风速(0.5,1.0,2.0m/s)、不同比表面积(2.1,2.3,2.5cm3/cm)及不同排布密度(12,14,16 kg/m2)条件下红枣的干燥特性和干燥速率。试验表明:红枣在整个干燥过程中降速干燥表现最为明显,风温对干燥速率及品质的影响最大。该研究结果为红枣制干生产、工艺优化和示范提供了理论与技术依据。

Abstract:In this paper,the drying characteristics and drying rate of jujubes were investigated under different air temperatures(45,55,65℃),air velocities(0.5,1.0,2.0m/s),specific surface areas(2.1,2.3,2.5 cm3/cm) and densities of arrangement(12,14,16kg/m2),which conducted in a convective dryer.Such a reduction on drying rate was observed by the drying process.Air temperature has affected drying rate and drying quality of jujubes significantly.This research can provide theoretical and technical basis for drying conduction of jujubes and also an important reference value for optimizing processing technology.
