摘    要:稳定同位素溯源是利用不同地域动植物体内稳定同位素自然丰度的差异,来达到识别动植物环境的目的,近年来已经成功应用于食品掺假鉴别和食品产地溯源中,并显示出其独特的优势。本文基于国内外食品溯源的研究成果,梳理了稳定同位素技术在动物源食品和植物源食品溯源中的应用进展,在此基础上分析了同位素溯源技术的推广应用难点及发展方向,可为食品安全溯源体系的完善提供理论基础。

Abstract:The traceability of stable isotopes is to use the differences of natural abundance of stable isotopes in animals and plants in different regions to identify the animals and plants environment.In recent years,it has been successfully used in food adulteration and food origin verification,and has shown unique advantages.Based on the research results of food traceability at home and abroad,this paper reviews the application and progress of stable isotope technology in animal and plant food traceability,analyzes the difficulty and development direction of isotope traceability technology,which can provide theoretical basis for the perfection of food safety traceability system.
