| 摘 要： | 魔芋葡甘聚糖是一种高分子量水溶性的非离子型多糖,资源丰富,应用广泛。综述了魔芋葡甘聚糖的化学结构、理化特性以及物理、化学和复合改性研究进展,提出了在其改性研究中存在的问题,并对其未来开发方向进行了展望。

| Abstract: | The konjac glucomannan is a high-molecular weight,water-soluble and non-ionic polysaccharide.It is widely used in many fields.In this article the recent advancement in the research on the chemical structure,physical-chemical characteristics,physical modification,chemical modification,and compound modification of konjac glucomannan were generalized.The existing problems were pointed out and the exploitation direction of KGM in the future was expected. |
