肠溶性益生菌微胶囊的研究

摘    要:研究了以嗜酸乳杆菌为心材,海藻酸钠为壁材,复乳法制备益生菌微胶囊的工艺过程和方法。通过正交试验。确定了益生菌微胶囊化的较佳工艺:海藻酸钠浓度2%,乳化时间10min,搅拌速度400rpm,菌胶比例l:6。以该工艺制备的微胶囊具有较好的耐酸性和肠溶性,包封率在59.20%左右。

Abstract:The technological processes about preparing microcapsulation of LA with complex emulsifi-cation method were studied. The sodium alginate was used as shell- material and LA as core- material,the optimal technological conditions of making the microcapsule were determined through orthogonalexperiment. The results showed that the optional conditions were as follows: concentration of sodiumalginate was 2 %, emulsification time was10 min, stirring speed was 400 rmp, proportion of LA andsodium alginate was 1:6.This method can prepare microcapsules which have good enteric solubility andacid resistance, embedding rate was 59.20 %.
