摘    要:介绍了检测乳及乳制品中L-羟脯氨酸的常用方法,主要包括高效液相色谱法、高效液相色谱-质谱联用法、氨基酸自动分析仪测定法,毛细管电泳-激光诱导荧光检测法和分光光度法,并对今后乳及乳制品中动物水解蛋白检测技术的发展趋势进行了分析。

Abstract:This paper reviews several methods to detect the L-hydroxyproline,including high performance liquid chromatography,high performance liquid chromatography mass spectrometry,automatic amino acid analyzer,capillary electrophoresis-laser induced fluorescence detection,and spectrophotometry.In addition,the trends of related techniques to detect hydrolysis of animal protein in milk and dairy products were predicted.
