摘    要:利用PCR—DGGE技术分析了酒醅入窖前后的菌群变化。结果表明,发酵前微生物群落结构呈明显多样分布,发酵结束后优势菌明显改变,经同源性比较,Laetobacillus plantarum成为绝对优势菌,Weissella属细菌在酒醅中稳定存在。根据细菌菌群的变化及分布推测,在盛夏习酒(浓香型)酒醅发酵过程中,Lactobacillus和Weisselln细菌为重要菌群。

Abstract:The change in microflora of fermented grains bef ore and after pit entry was analyzed by PCR-DGGE.The results showed that microflora structure displayed diverse distribution before the fermentation,after the fermentation,dominant bacteria changed evidently,Lactobacillus plantarum became the absolute dominant bacteria through homologous comparison,and Weissella existed stably in fermented grains.It was predicted according to the change in microflora and their distribution that Lactobacillus and Weissella wer...
