| 摘 要： | HACCP体系是一种预防性质量控制体系,在食品工业中的应用不断增多。介绍了HACCP体系的原理和特点,综述了HACCP体系与食品安全性的关系、HACCP体系在食品工业中的应用及其自动控制系统和控制软件。对HACCP体系在食品工业应用方面所面临的问题进行讨论,并介绍了HACCP体系在食品分配流通等领域应用的进展。

| Abstract: | HACCP system is one kind precaution control system, increase by unceasingly in food industry. This paper introduced the principle and characteristic of HACCP, and summed up between HACCP with food security. The paper also discussed that the problems applying to food industry, and introduced that its research progress. |
