摘    要:利用离子色谱法测定在不同条件下凤凰茶汤中NO3^-和NO2^-的浓度,以科学数据说明饮茶的误区。实验结果表明:在泡茶水温为90—95℃,茶叶浸泡时间为30秒,茶汤放置时间不超过5分钟的条件下凤凰茶汤中的N3^-和NO2^-的浓度最低,从而制定科学健康的饮茶方式,以提高饮茶的质量。同时,也为潮汕工夫茶的发展提供有力的科学依据。

Abstract:NO3- and NO2- in fenghuang tea drink were determined by ion chromatography,thereby making a more reasonable tea drinking proposal by indicating the misunderstanding of habitual tea drinking with scientific data.The results indicated that: the NO3-and NO2-concentrations in Fenghuang tea liquor are the lowest under the steeping conditions of 90-95 ℃ water temperature,30 seconds soak time and no longer than 5 minute keeping.This also provides a beneficial scientific basis for the development of Chaoshan Gongfu Tea.
