摘    要:以莲子钻芯粉为原料,采用水提醇沉方法提取水溶性功能成分,以黄酮含量及浸膏含量为指标考察提取方法的有效性,在制取的浸膏中添加糖粉和麦芽糊精制备固体饮料。结果表明:提取温度60 ℃,料液比1∶20(g∶mL),回流提取2次,每次1.5 h。将水提液浓缩至密度为1.15~1.20液体时,加入3倍体积分数为80%的乙醇沉淀36 h。在此优化水提醇沉条件下,黄酮含量为1.458 mg/g,浸膏含量为24.70%。在浸膏中加入2倍糖粉及麦芽糊精制成的莲子钻芯粉固体饮料具有莲芯的清香,便于服用。

Abstract:Using cored lotus seed powder as raw material, water-soluble functional ingredients were extracted with water extraction and alcohol precipitation method. Flavonoids yield and extract content was investigated to examine the effectiveness of the extraction method. The results showed that the optimal condition was extraction temperature 60 ℃, solid-liquid ratio 1∶20 (g∶ml), time 1.5 h for 2 times. When the density of the water extract was 1.15~1.20, three times volume 80% concentration enthonal was added for participation for 36 h. At the optimized condition, the flavonoids content was 1.458 mg/g, extract yield was 24.70%. Two times sugar powder and maltodextrin was added into the extract, the product was well mixed and granulated, and the lotus seed beverage was with clean aroma and easy to drink.
