微波加热下食品球形物料温升状态的研究

摘    要:微波加热温升状态研究是传热传质学研究的基本内容之一,也是食品微波加热、于煤、杀菌必定涉及的内容.微波加热过程是一种复杂的非稳态过程,它与物料的物性、形状尺寸,微波功率、频率及场分布等有关.本文对均匀场内球形物料加热过程进行了实验和理论研究,测定了多种物料的温度分布,提出了过程的传热传质的数学模型,在若于简化条件下,求出了温度分布的数值解,与实验结果接近。并利用数学模型对过程进行了分析

Abstract:The study on temprature rise under microwave heating is one of the basic statements of heat amd mass tranfer, it,s also concerned with microwave food heating, drying and sterilization. Microwave heating is a complex, ron-stable processing, it,s related to the sample characteristics and shape, the microwave output, frequency and field profiles. This paper has made some experiments and theoretical studies on the heating processing of round sample in the even field, measured their temprature profiles, put forwand the heat and mass trarsfer mathematical model of the processing, got the root of temprature profiles with simplification and it's identical with the experiments. The paper has also analyzed the processing with the model.
