摘    要:  目的  改善低次醇化烟叶的质量, 提高其利用率。  方法  利用紫外光对烟叶进行照射, 考察不同紫外光照射时间下其物理特性、感官质量、淀粉、蛋白质、常规化学成分和致香成分的变化。  结果  单因素方差分析得到15~60 min的紫外光照射对烟叶各方面的品质有不同程度的提升效果, 30 min照射的烟叶总体品质最佳, 填充值、糖碱比和致香成分总量提升, 淀粉和蛋白质含量降低, 感官质量有所改善。75 min后, 随着紫外照射时间的延长, 烟叶样品的加工性能逐渐降低, 致香物质总量减少, 香型风格有所改变。  结论  在适宜的照射时间下, 紫外光照射能够改善醇化烟叶的品质, 照射时间过长则会对部分理化性质产生负面影响。

Effect of UV irradiation time on quality of low grade aging tobacco leaves

Abstract:  Objective  This study aims to improve the quality and utilization of low grade aging tobacco leaves.  Methods  Tobacco leaves were irradiated by UV, and the changes of physical characteristics, sensory quality, starch content, protein content, routine chemical components and aroma components of aging tobacco leaves under different UV irradiation time were comprehensively investigated.  Results  The results showed that the quality in all aspects of tobacco leaves treated by UV irradiation for 15 minutes to 60 minutes was improved in varying degrees. The improvement effect was obtained for tobacco leaves treated by 30 minutes of UV irradiation. The filling value, sugar-to-nicotine ratio and the total amount of aroma components increased, the contents of starch and protein decreased, and the sensory quality was improved under such UV irradiation scheme. After 75 minutes of UV irradiation, the processability of tobacco leaves became worse, and the total amount of tobacco aroma decreased gradually, and the flavor style was changed with the extend of time.  Conclusion  UV irradiation time in an appropriate range could improve the quality of aging tobacco leaves to a certain extent. However, if the irradiation time is too long, some of the physical and chemical properties would be adversely affected.
