潲水油与合格食用油鉴别方法的研究

摘    要:主要研究了潲水油的鉴别方法。通过对潲水油的各项理化指标和电导率测定分析,潲水油过氧化值、羰基值和色泽均高于合格食用油;经冷冻试验,潲水油有析出物,油脂呈混浊;实验研究表明:潲水油的电导率大于合格食用油;可利用电导率的特异性快速测定、鉴别潲水油。

Abstract:In this essay the author does research on the extracted hogwash fat after recovery and refining , and contrast with the edible oil , testing each physical and chemical index of hogwash fat and eletroconductivity. By the detection we found the peroxide value, carbonl value and colour are bigger in hogwashfat than in edible oil. Proceeding with experiment, there are something separate from hogwash oil which has consequently made the oil thickness. After the testing of oil eletroconductivity, we found eletroconductivity of hogwash fat is bigger than that of edible oil. Based on the specificity of the oil physical and chemical index, this method could discriminate hogwash fat and edible oil.
