后背鲈鲤肌肉营养成分分析与评价

摘    要:采用常规生化分析方法对后背鲈鲤肌肉营养成分进行分析和评价。结果显示:后背鲈鲤肌肉中粗蛋白含量为(17.80±0.33)%,粗脂肪含量为(1.03±0.17)%。肌肉干样中共检测出17种氨基酸,总量为(51.44±1.97)%,其中必需氨基酸7种,必需氨基酸的构成比例符合FAO/WHO 的标准;赖氨酸的氨基酸评分(AAS)和化学评分(CS)均最高,分别为0.98和0.75;肌肉干样中含有11种脂肪酸,其中饱和脂肪酸4种,占脂肪酸总量的(47.74±5.45)%,不饱和脂肪酸7种,占脂肪酸总量的(51.19±4.71)%。矿物元素10种,各元素比例均衡合理。结论:后背鲈鲤肌肉味道鲜美,营养价值丰富,有较大开发潜能。

Analysis and evaluation for the nutrition components of Percocypris retrodorslis muscles
Abstract:The muscular nutritional content of Percocypris retrodorslis was analyzed and evaluated by conventional biochemical analysis methods. The results showed: The crude protein content and crude fat content of fresh muscle samples in P. retrodorslis were (17.80±0.33) % and (1.03±0.17) %. There were 17 amino acids in the dry samples of muscles, and the content of total amino acid contained (51.44±1.97) %, including 7 essential amino acids. The proportion of essential amino acids in P. retrodorslis samples was consistent with FAO/WHO standards. The lysine (Lys) had the highest amino acid score (AAS) and chemical score (CS) of 0.98 and 0.75, respectively. There were 11 fatty acids in the dry samples of muscles, including 4 saturated fatty acids (47.74±5.45) % and 7 unsaturated fatty acids (51.19±4.71) %. A total of 10 mineral elements were detected in P. retrodorslis samples and the proportion of these mineral elements were reasonable. According to the results, P. retrodorslis is delicious and nutritious, and has great development potential.
