In this paper, a mathematical model for forced-air precooling of spherical food products in bulk is developed. The foods are arranged in horizontal layers stacked one above the other to form a rectangular parallelepiped with a vertical gap in between the product layers. The foods are cooled by chilled air blown along the height of the package. The governing equations for the conduction heat transfer in the foods, simultaneous heat and mass transfer at the food-air interface and in the air stream are solved numerically using finite-difference methods. A comprehensive numerical study is performed by varying the process parameters over a wide range. Typical results showing the variation of moist air properties along the height of the package and the effect of each parameter on the process time are presented. The ranges of parameters for advantageous operation of the precooling system are identified. Correlations are obtained for the process time based on the product center and mass-averaged temperatures in terms of process parameters. 相似文献

Kinetics of oxidation of indigo carmine (IC) by sodium hypohalites, NaOX (X ? Cl or Br), in alkaline buffer of pH 9–11 has been studied spectrophotometrically at λ = 610 nm. The experimental rate law obtained is ?d[IC]/dt = k[OX?][IC][OH?]x where x <1. Variation of ionic strength or dielectric constant of the medium had no effect on the reaction rate while the addition of halide ions slightly retarded the rate. A most plausible mechanism proposed on the basis of experimental results involves the formation of isatin sulphonate which undergoes further oxidation to anthranilate. A protonation and dynamic structural study of doxylamine succinate, a 1:1 salt of succinic acid with dimethyl-[2-(1-phenyl-1-pyridin-2-yl-ethoxy)ethyl]amine, in solution using one- and two-dimensional 1H and 13C NMR experiments at variable temperature and concentration is presented. The two acidic protons of the salt doxylamine succinate are in 'intermediate' exchange at room temperature, as evidenced by the appearance of a broad signal. This signal evolves into two distinct signals below about -30 degrees C. A two-dimensional 1H-1H double quantum filtered correlation experiment carried out at -55 degrees C shows protonation of one of the acidic protons to the dimethylamine nitrogen. A two-dimensional rotating frame 1H-1H NOE experiment at the same temperature reveals that the other proton remains with the succinate moiety. Comparison of the 1H and 13C chemical shifts and the 13C T1 relaxation times of the salt with those of the free base further substantiate the findings. 相似文献

Carbonylation of an ethanolic solution containing ruthenium trichloride and the arsine at room temperature yieldtrans dicarbonyl compounds of the formula RuCl2(CO)2 (Ph2RAs)2. The osmium monocarbonyls OsX2(CO) (Ph2RAs)3 (X=Cl, Br; R=Me, Et) react with NaBH4 in methanol to yield complexes of the composition OsHX(CO) (Ph2RAs)3. The analogues of elastin sequences, glycyl‐glycyl‐alanyl‐proline (GGAP), glycyl‐glycyl‐phenylalanyl‐proline (GGFP), and glycyl‐glycyl‐isoleucyl‐proline (GGIP) were synthesized by classical solution phase method and characterized. The kinetics of oxidation of these tetrapeptides (TETP) by Mn(III) has been studied in the presence of sulphate ions in acidic solution at 25°C. The reaction was followed spectrophotometrically at λmax = 500 nm. A first‐order dependence of rate on both [Mn(III)] and [TETP] was observed. The rate is independent of the concentration of the reduction product, Mn(II), and hydrogen ions. The effects of varying the dielectric constant of the medium and addition of anions such as sulphate, chloride, or perchlorate were studied. Activation parameters have been evaluated using Arrhenius and Erying plots. The oxidation products were isolated and characterized. A mechanism involving the reaction of TETP with Mn(III) in the rate‐limiting step is suggested. An apparent correlation was noted between the rate of oxidation and the hydrophobicity of these sequences, where increased hydrophobicity results in increased rate of oxidation. © 2001 John Wiley & Sons, Inc. The design and characterization of an open eight-stranded beta-sheet in a synthetic, 2-fold symmetric 70-residue peptide is described. The design strategy involves the generation of a 35-residue four-stranded beta-sheet peptide in which successive hairpins are nucleated by appropriately positioned (D)Pro-Xxx sequences. Oxidative dimerization using a single Cys residue positioned at the center of the C-terminal strand results in a disulfide-bridged eight-stranded structure. Nuclear Overhauser effects firmly establish an eight-stranded beta-sheet in methanol. In water, the outer strands are frayed, but a well-defined four-stranded beta-sheet stabilized by a disulfide bridge and a hydrophobic cluster is determined from NMR data. Comparison of the precursor peptide with the disulfide-bridged dimer reveals considerable enhancement of beta-sheet content in the latter, suggesting that the disulfide cross-link is an effective strategy for the stabilization of beta-sheets. 相似文献

Sodium N-chlorobenzenesulfonamide (chloramine-B, CAB), sodium N-bromo-p-toluenesulfonamide (bromamine-T, BAT) and N,N′-dibromo-p-toluenesulfonamide (dibromamine-T, DBT) are employed as analytical reagents for estimating indigocarmine (IC) in solution. A four-electron stoichiometry is observed within 30 min in the following media: CAB, 0.1–1.0 N HCl or H2SO4 and pH 1 buffer; BAT, 0.01–0.10 N NaOH; DBT, glacial acetic acid. The back titration methods are fairly rapid, simple, and accurate. The product of oxidation, isatinsulfonate, was estimated by spectrophotometric measurements at 410 nm. The sulfonamides formed by reduction of the haloamines are detected by TLC and paper chromatography. 相似文献
