Expansion properties and ultrastructure of legumes: Effect of chemical and enzyme pre-treatments

Expanded cereals and legumes are commonly used as ready-to-eat breakfast foods or as ingredients in food formulations. The use of horse gram and pigeon pea in food formulations and in legume composite flours is limited due to the presence of high levels of antinutritional factors, poor functional and expansion properties. Sodium bicarbonate and protease pre-treatments altered the cell wall structure of these legumes leading to the development of expanded grains. Expansion processing of pre-treated legumes resulted in statistically significant (P < 0.05) increases in grain size and expansion volume compared to control grains. Highest yield of expanded grains were obtained with sodium bicarbonate pre-treatment (80 grains/100grains in pigeon pea and 96 grains/100 grains in horse gram), whereas, protease treatment yielded 68 and 94 expanded grains per 100 grains of pigeon pea and horse gram, respectively. Pre-treated expanded grains had lower bulk densities in the range of 480-510 g/L compared to untreated controls (about 760 g/L). Increased porosity and decreased cell wall thickness in expanded grains resulted in the collapse of cell walls and the appearance of large void spaces within the intercellular matrix. These results suggest the potential utility of under-utilized expanded pigeon pea and horse gram grains or their flours as ingredients in food processing or in legume composite flours.

某铁矿基建竖井-50 m水平马头门及巷道位于含水泥质灰岩夹褐铁矿层中,因矿层上部有河床,河水顺导水断层进入矿区,造成施工被迫中断。为防治该断层导水,经现场勘察,对该水平的竖井马头门及部分巷道采用帷幕注浆工艺进行了涌水封堵,快速通过含水带,取得了良好的效果,为同类工程施工提供了借鉴。

A rapid,semi-quantitative test for detection of raw and cooked horse meat residues

Intentional mislabeling and adulteration of meat products with undeclared horse meat is a concern for religious, ethnic, and health reasons and is illegal under regulations mandated and enforced by food regulatory agencies and the Federal Meat Inspection Act. Nonetheless, recent analysis of the meat industry has revealed an apparent increase in the frequency of meat adulteration including intentional horse meat contamination, necessitating a broader use of meat authentication testing. As existing methods for meat speciation are cumbersome and require specialized equipment and/or training, we developed a highly specific lateral flow immunoassay that can rapidly identify raw and cooked horse meat down to 0.01% and 1.0% contamination, respectively in xenogeneic meat sources in about 35 min with no false positive signals observed. Specificity analysis revealed no cross-reactivity with serum albumins or meat derived from chicken, turkey, pig, cow, lamb, and goat. The results of method comparison showed that the assay had similar if not better sensitivity than the commercial ELISA kit and PCR, and required considerably less time to perform than either method. The development of a highly robust and rapid test method capable of detecting trace amounts of horse meat residues should aid food control authorities in their continued efforts to monitor for horse meat adulteration.

Political communication scholars have long noted the prevalence of sports metaphors in media coverage of campaigns, especially through references to the “horse race.” During the 2012 presidential election, however, a cluster of terms associated with science and math emerged as an alternative model for monitoring the campaigns' progress. This “statistical frame” was best symbolized by Nate Silver, a former baseball analyst whose attention to politics was among the most celebrated aspects of the 2012 election. This essay evaluates the rhetorical effect of the statistical frame, which helps to shift attention away from outmoded political communication practices associated with predictions and punditry. This shift has implications for political media, political campaigns, and our understanding of the relationship between politics and sport.
