Food quality is directly linked to the food's appearance, texture and flavor. All three components must be in harmony for the food to be considered delicious. Understanding how various textures can be designed requires a comprehensive approach of evaluating food structure, oral processing and sensory evaluation. Oral processing considers the physiological processes in first bite, mastication and swallowing. Sensory stimuli during oral processing are used to determine the acceptance of texture. Recent research has focused on how milk proteins can be used to create desirable textures. Whey protein–polysaccharide mixtures were used to show how microstructure can be manipulated to produce a range of textures and control water release. The importance of microstructure in determining a variety of texture terms was demonstrated in whey protein emulsion gels. Finally, fat content in Cheddar cheese was shown to be critical to producing a desirable breakdown pattern. These and other applications will be discussed.  相似文献

The purpose of this study was to evaluate the knowledge, attitudes and practices among food service staff with regards to food hygiene in hospitals in Edirne, Turkey, and to provide baseline data for implementing HACCP in hospital food services by carrying out a questionnaire by a face-to-face interview. The current study shows that food service staff in Edirne hospitals have insufficient knowledge regarding the basics of food hygiene. And also revealed a discrepancy between attitudes and practices towards food hygiene. There is an immediate need for continuous training among food handlers regarding safe food handling practices.  相似文献

BACKGROUND: Recent studies indicate that microalgal cultivation using organic carbon sources has the potential to provide high yields. Haematococcus pluvialis and Chlorella zofingiensis, two important carotenoid producers, were selected for co‐culture cultivations to utilize the unique advantages of both organisms. A co‐culture production process was investigated in terms of the effects of organic carbon source, co‐cultivation method, and light intensity on carotenoid production. RESULTS: The addition of 5 g L?1 glucose resulted in a growth rate of 0.60 day?1 for H. pluvialis and 0.59 day?1 for C. zofingiensis, which were higher than those for other carbon sources tested and the control group. Incremental increase of light intensity instead of direct increase to 170 µE m?2s? prevented cell loss in both cultures. Co‐cultivation based on cell numbers (60% H. pluvialis and 40% C. zofingiensis) prevented population domination of one microalgae over the other. The biomass production rate of the co‐culture was higher (0.61 g L?1 day?1) in glucose‐enriched medium. The total carotenoid content of the co‐culture in the control culture was higher (0.83 mg total carotenoids g?1 cell) than that obtained in glucose‐enriched medium (0.54 mg total carotenoids g?1 cell) but not as high as the amounts reached in mono‐cultures. CONCLUSION: Total carotenoid content of the mono‐cultures gave higher yields in standard bold basal medium (BBM). Preliminary high performance liquid chromatography (HPLC) studies indicated a variation in the amounts of astaxanthin isomers produced. Further studies are in progress to determine the effects of carbon‐enriched media and co‐cultivation on the type of isomers and caretenoids produced. We describe the reconstruction of a phylogeny for a set of taxa, with a character-based cladistics approach, in a declarative knowledge representation formalism, and show how to use computational methods of answer set programming to generate conjectures about the evolution of the given taxa. We have applied this computational method in two domains: historical analysis of languages and historical analysis of parasite-host systems. In particular, using this method, we have computed some plausible phylogenies for Chinese dialects, for Indo-European language groups, and for Alcataenia species. Some of these plausible phylogenies are different from the ones computed by other software. Using this method, we can easily describe domain-specific information (e.g., temporal and geographical constraints), and thus prevent the reconstruction of some phylogenies that are not plausible. This study aimed to improve XOs production by enzymatic hydrolysis of xylans from various lignocellulosic waste biomasses namely corn cob, cotton and sunflower stalks, rice hull, wheat straw by using two commercial xylanase preparations, Shearzyme 500L and Veron 191. Shearzyme 500L showed better xylan hydrolysis capacity with high amount of xylose liberation. Xylobiose was the main hydrolysis product in each case. Even though the enzymatic hydrolyses using Shearzyme 500L resulted higher reducing sugar production compared to those of Veron 191, the hydrolysis of complex xylan structures was improved and the production of undesirable xylose was lowered by the co-utilization of xylanase preparations. By the co-utilization of xylanase preparations, the reducing sugar production from wheat straw, corn cob and sunflower stalk originated xylans was increased by 36%, 33% and 13%, respectively, compared to the expected reducing sugar yields. The highest reducing sugar production was obtained from complex corn cob xylan. The depolymerization of cotton and sunflower stalk xylan was poorest even though they have simple structures. Poor utilization of these xylans might be related to their high residual lignin content which might hinder the accessibility of xylan by the xylanases. However, the utilization of sunflower and cotton stalk xylan was improved when they were hydrolyzed within a xylan mixture containing equal amounts of each of five different xylans. In short, XOs production efficiency from agricultural waste materials was improved by the co-utilization of suitable xylanase and/or xylan mixtures considering the heterogeneous structures of xylan and different substrate specificities of xylanases.  相似文献

Superalloys are used in aggressive atmospheres in aero-engines and land-base gas turbines. IN738LC is an important superalloy used in gas turbines. Strengthening Ni3(Al,Ti,Nb) type precipitate phase in this superalloy goes through size and morphological changes with time and temperature. Experimental observations suggest precipitate motion as a whole in the matrix leading to agglomeration of nearby precipitates for coarsening, which is in contrast to the traditional Ostwald ripening. Likewise, contrary to the conventionally accepted view of constant activation energy, experimental data in this study indicate varying activation energy, which causes coalescence and relates to the precipitate size in the form of an increasing polynomial.  相似文献
