Texture,sensory and swallowing characteristics of high-pressure-heat-treated pork meat gel as a dysphagia diet 总被引:2,自引:0,他引:2
To develop a soft meat product for a dysphagia diet, high-pressure technology was applied. Pressure-heat-treated ground pork meat (PH) was prepared from ground pork mixed with water (ground meat: water, 1:0.5 or 1:1) and salt (1.5%). PH-gels were made from these meat homogenates by treatment at 400 MPa for 20 min, followed by heat treatment. Heat-treated pork meat homogenates (H) were also prepared. The hardness and adhesiveness of the 1:1PH-gel was lower than those of the 1:1H-gel. The PH-gel scored higher in sensory evaluations of elasticity, smoothness and ease of swallowing. Scanning electron micrographs indicated that the superior textural property of the 1:1PH-gel was caused by a network of myosin filaments. Videofluoroscopic examination of swallowing revealed that the 1:1PH-gel was easy to swallow and left little residue in the oropharynx. These results proved the utility of pressurization in creating a dysphagia meat diet. 相似文献

In the current design practices of steel-strip reinforced earth walls (SSREWs), the length of the reinforcing material is determined based on the equilibrium between the reinforcement tension and the earth pressure acting on the wall. Here, the resistance of the reinforcing material laid in the active failure zone (AFZ) is not considered. Moreover, the mechanical role of the reinforcing material against the integrity of the SSREW has not been sufficiently verified. Regarding the seismic stability of SSREW, although it is investigated by treating the entire reinforced earth wall as a rigid body, this inspection method is for gravity-retaining walls, and the difference in the seismic behavior between the SSREW and the rigid body is not clear. In this study, therefore, dynamic centrifuge model tests on 6 types of SSREWs were conducted to clarify the following items: (1) the basic earthquake behavior of a SSREW, (2) the mechanical role of the reinforcing material laid in the AFZ and (3) the mechanical role of the reinforcing material against the integrity of the SSREW. The results indicated that the reinforcing material laid in the AFZ can restrain the amount of deformation of the wall during earthquakes. During a 3-year monitoring survey (April 2002-March 2005) of pesticide residues in agricultural products, 592 samples (324 domestic; 268 imported) collected in Hyogo prefecture, Japan were analyzed. The number of pesticides tested increased from 232 in FY 2002 to 323 in FY 2004. The purpose of the study was to clarify the residue status by accumulating information about pesticides detected frequently, to allow effective and efficient regulation under the new "Positive List" legislation to be implemented in FY 2006. Overall, 47% of domestic and 61% of imported samples contained detectable residues and ca. 60% of positive samples contained multiple residues. The limit of quantitation was set at 0.01 microg/g and the limit of detection was 0.001-0.003 microg/ g. Most of the residues were present at low concentrations: 80% of the detections in samples excluding imported citrus fruits were < 0.05 microg/g. More than 5 different pesticides (> 0.01 microg/g) were detected simultaneously in 13 samples. The sum of the ratios of residues to MRLs was calculated as one of the indexes to represent the risk of multiple residues, and they exceeded 100% in 3 imported frozen vegetables; baby kidney bean, spinach, Welsh onion. Samples in violation of the Food Sanitation Law were not found in our survey, but 1.9% of the samples might be in conflict with the new "Positive List" legislation. 相似文献

Fruit-juice concentrate of Japanese apricot (Prunus mume Sieb. et Zucc.) has been shown to be effective against influenza A infection in MDCK cells. In this study, we isolated five components from the fruit-juice concentrate of Japanese apricot, 5-(hydroxymethyl)-2-formylfuran (HMF), 1-[5-(2-formylfuryl)methyl]dihydrogen 2-hydroxypropane-1,2,3-tricarboxylate (mumefural, MF), 2-[5-(2-formylfuryl)methyl]dihydrogen 2-hydroxypropane-1,2,3-tricarboxylate (MF‘), 1-[5-(2-formylfuryl)methyl]hydrogen 1-hydroxyethane-1,2-dicarboxylate (MA1) and 2-[5-(2-formylfuryl)methyl]hydrogen 1-hydroxyethane-1,2-dicarboxylate (MA2), and investigated their inhibitory activities against the novel influenza A/Narita/1/2009 (H1N1) pandemic virus hemagglutinin and neuraminidase functions, which are essential for viral attachment and budding, respectively. An hemagglutination inhibition assay indicated that MF and MF‘ were effective at minimum hemagglutination concentrations of 3.1 and 6.3 mM, respectively. An inhibition study for sialidase activity of the neuraminidase spike showed that MF was the most active anti-sialidase compound with an IC50 value of 0.21 ± 0.01 mM, followed by MA2 (IC50, 0.71 ± 0.09 mM), MA1 (IC50, 1.64 ± 0.31 mM) and MF‘(IC50, 1.62 ± 0.22 mM). Furthermore, MF was shown to inhibit the growth of the pandemic virus in a dose-dependent manner (62 ± 3% inhibition at 5 mM). The results suggest that MF, a citric acid ester linked to HMF at the 1-position of the propane backbone, might be a lead compound for the development of anti-influenza A inhibitors. 相似文献

对一种新合成的两性界面活性剂N,N,N-三甲胺-N′-油酸酰亚胺在二维通道内的减阻特性进行了实验研究.为了能进行低温测试,以20%的甘醇不冻液为溶剂.溶液质量浓度范围为(5×10-5)~(1×10-3),测试温度为-5℃和25℃.用粒子成像测速仪对减阻流动的湍流特性进行了测量.实验表明,这种新型界面活性剂溶液呈现明显减阻特性,且减阻特性与浓度和温度均有很大的关系,最大减阻值可高达83%.该界面活性剂中加入NaNO2,在低温和低浓度条件下能有效改善减阻效果,而在常温和高浓度条件下反而降低减阻效果.添加界面活性剂抑制了湍流速度脉动和湍流涡脉动,使雷诺剪切应力完全消失. 相似文献

Pyrolysis is a promising technique for the recovery of useful gas, tar, and solid products from biomass waste. However, the low tar yields obtained from lignocellulosic biomass are a significant drawback. To enhance tar yields, sugarcane bagasse, which is the most abundant agricultural waste in Fiji, was pretreated at ambient temperature and atmospheric pressure using various sulfuric acid (H2SO4) concentrations. Here, the ether bonds of cellulose, hemicellulose, and lignin were partially hydrolyzed. The pretreated samples were then pyrolyzed at 500 °C, and it was confirmed that H2SO4-pretreatment disrupted the bagasse cell structure, with the thermogravimetry and differential thermogravimetry results confirming that decomposition occurred at lower temperatures after pretreatment. In addition, tar yields were significantly enhanced from 5.6 wt% to 13.4 wt% for the untreated and 3 M H2SO4-pretreated samples respectively. The main components detected in this tar product were levoglucosan, andcellulose-and hemicellulose-derived products, whose proportions were increased following pretreatment. Thus, our work demonstrates that dilute acid pretreatment enhances tar production from sugarcane bagasse due to the production of shorter chain components via the partial hydrolysis of ether bonds. 相似文献

Epoxy/vapor grown carbon nanofiber composites (VGCF) with different proportions of VGCF were fabricated by the in situ process.The VGCFs were well dispersed in both of the low and high viscosity epoxy matrices, although occasional small aggregates were observed in a high viscosity epoxy of 20 wt.%. The dynamic mechanical behavior of the nanocomposite sheets was studied. The storage modulus and the glass transition temperature (Tg) of the polymer were increased by the incorporation of VGCFs.The electrical and mechanical properties of the epoxy-VGCFs nanocomposite sheets with different weight percentages of VGCFs were discussed. The results were that both had maximum tensile strength and Young’s modulus at 5 wt.% for both materials and reduced the fracture strain with increasing filler content. The electrical resistivity was decreased with the addition of filler content. Mechanical, electrical and thermal properties of low viscosity epoxy composites were resulted better than that of the high viscosity composites. 相似文献

Steel corrosion under atmospheric conditions is a critical issue in the maintenance of structures such as electric transmission towers and bridges during their long-term operation, which are generally located at many places over a wide area. Since a major factor causing corrosion is airborne salt particles coming from the sea, wide-area distributions of the long-term cumulative amount of sea salt deposited on surfaces are needed. Moreover, since the amount of airborne sea salt varies locally with the topography, it is also important to consider the effects of topography. In this paper, a method combining a computational fluid dynamics model and a statistical procedure is proposed to efficiently estimate wide-area distributions of the cumulative amount of airborne sea salt by considering the local topography. The predicted amount of airborne sea salt decreases with increasing distance from the coast and varies with the topography and the offshore wind. A comparison between predicted and observed amounts revealed that: (1) this method appropriately estimates topographical effects on sea-salt transport and enables the estimation of deposited sea salt on structure surfaces, and (2) consideration of the trapping efficiency of sea-salt particles on structure surfaces improves the prediction accuracy. 相似文献

Bulk heterojunction solar cells utilizing soluble phthalocyanine derivative, 1,4,8,11,15,18,22,25-octahexylphthalocyanine (C6PcH2) have been investigated. The active layer was fabricated by spin-coating the mixed solution of C6PcH2 and 1-(3-methoxy-carbonyl)-propyl-1-1-phenyl-(6,6)C61 (PCBM). The photovoltaic properties of the solar cell with bulk heterojunction of C6PcH2 and PCBM demonstrated the strong dependence of active layer thickness, and the optimized active layer thickness was clarified to be 120 nm. By inserting MoO3 hole transport buffer layer between the positive electrode and active layer, the FF and energy conversion efficiency were improved to be 0.50 and 3.2%, respectively. The tandem organic thin-film solar cell has also been studied by utilizing active layer materials of C6PcH2 and poly(3-hexylthiophene) and the interlayer of LiF/Al/MoO3 structure, and a high Voc of 1.27 V has been achieved. 相似文献
