External laminar oscillatory shear applied during crystallization in combination with different temperature fields was used to modify the microstructure and physical properties of edible oil organogels. Crystallization at a high cooling rate (30 °C/min) resulted in a spherulitic microstructure with a higher oil-binding capacity, lower storage modulus and lower yield stress compared with a material (with a fibrillar microstructure) crystallized at a slow cooling rate (1 °C/min). The application of an oscillatory shear resulted in the formation of novel microstructures depending on the cooling regime used. The application of an oscillatory shear (strain > 500 % and frequency = 1 Hz) resulted in the thickening of fibers observed in the slow-cooled material and an increased incidence of spherulite nucleation in the rapidly cooled material. Increasing the frequency of the oscillatory shear applied did not change the microstructure for the slow-cooled gel but further increased the incidence of nucleation for the rapidly cooled gel. The application of controlled-strain oscillatory shear to the crystallizing gel at either cooling rates resulted in an oily and very soft, paste-like material. This material had a lower storage modulus and poorer oil-binding capacity compared with the same gel crystallized statically. Reduction of the oscillatory strain from a maximum of 1500 to 500 % moderately mitigated the loss of mechanical properties and oil-binding capacity although these properties were in no way comparable to those obtained from static crystallization. The study shows that the application of oscillatory shear and different cooling regimes can be used to tailor a crystalline organogel. However, the application of continuous shear must be done with care as application of excessive shear can result in a complete breakdown in gel structure and large amounts of oil loss.  相似文献

Chemical and enzymatic interesterification are used to create spreadable fats. However, a comparison between the two processes in terms of their acute metabolic effects has not yet been investigated. A randomised crossover study in obese (plasma TAG > 1.69 mmol/L, and BMI > 30 (BMI = kg/m2) or waist circumference > 102 cm, n = 11, age = 59.3 ± 1.8 years) and non-obese (plasma triacylglycerol (TAG) < 1.69 mmol/L, and BMI < 30  or waist circumference < 102 cm, n = 10, age = 55.8 ± 2.2 years) men was undertaken to compare the effects of chemical versus enzymatic interesterification on postprandial risk factors for type 2 diabetes (T2D) and cardiovascular disease (CVD). TAG, cholesterol, glucose, insulin and free fatty acid concentrations were measured for 6 h following consumption of 1 g fat/kg body mass of non-interesterified (NIE), chemically interesterified (CIE), enzymatically interesterified (EIE) stearic acid-rich fat spread or no fat, each with 50 g available carbohydrate from white bread. Interesterification did not affect postprandial glucose, insulin, free fatty acids or cholesterol (P > 0.05). Following ingestion of NIE, increases in serum oleic acid were observed, whereas both oleic and stearic acids were increased with CIE and EIE (P < 0.05). While postprandial TAG concentrations in non-obese subjects were not affected by fat treatment (P > 0.05), obese subjects had an 85% increase in TAGs with CIE versus NIE (P < 0.05). The differences in TAG response between non-obese and obese subjects suggest that interesterification may affect healthy individuals differently compared to those already at risk for T2D and/or CVD.  相似文献

A woven inorganic silica fabric loaded with Fe-ions (EGF-Fe) was tested under simulated solar light during hydroquinone degradation. The abatement of hydroquinone was observed to attain about 80% within 3 h. The photo-catalyst was also tested to inactive Escherichia coli K12 at “natural” pH and in the presence of a low concentration of H2O2. Addition of H2O2 (10 mg L−1) did not by itself to bacterial inactivation. Total bacterial inactivation was mediated by EGF-Fe fabrics in the presence of H2O2 (10 mg L−1) under solar light irradiation. A sample containing active (culturable) bacteria (105 CFU mL−1) decreased to values <1 CFU mL−1 within 3 h reaction. Fe-mediated homogeneous process decreased the bacterial CFU content by about two orders of magnitude within 4 h. During the degradation of hydroquinone only a small amount of iron ions were found in solution of about 1.2 mg L−1, within 90 min decreasing to values ≤0.5 mg L−1 after 180 min. The leaching of Fe-ions did not affect the photo-catalyst performance since EGF-Fe fabric did not deactivate after five or more cycles. The Fe-ions founds in solution mineralized hydroquinone to levels below 37% of its initial content. The present study presents the first report on the beneficial role of a heterogeneous iron supported catalyst leading to efficient bacterial inactivation in aqueous solution with iron leaching <0.1 mg L−1, the detection limit for Fe-analysis in solution. No bacterial re-growth was observed during a post-irradiation period up to 24 h in the dark.  相似文献

The objective of the present work is to evaluate the effectiveness of a self-feed device for coated electrodes. This device is able to eliminate disturbances from manual operation or the use of automatic control systems during the study of coated electrode behaviour. The conjugation of different methods such as short-circuit time statistical analysis and metallographic analysis (penetration, heat-affected zone, shape and mean distance between successive solidification fronts) together with the analysis of the electric arc and electrode melting parameters allows us to obtain relationships between arc behaviour, mass transfer processes and bead appearance. This permits the extraction of criteria to describe process stability and the behaviour of the feed device employed. An appropriate statistical methodology was obtained to process the ‘duration of the short-circuit’ parameter through an appropriate adjustment of empirical distributions to a log-normal model. The self-feed device for coated electrode welding allows the repeatable and reproducible execution of welding beads in the flat position, keeping the arc length based on physical and chemical characteristics of the electrode during welding trials using 125, 140 and 160 A.  相似文献

 The possibilities of reverse-phase high performance liquid chromatography (RP-HPLC) and capillary electrophoresis (CE) when used for separation of cheese peptides are discussed. A CE method using a coated capillary column and a low pH buffer was developed to analyze the water-soluble fraction of a 6-month-old cow’s milk cheese. The CE patterns were compared with the chromatograms obtained by RP-HPLC using a C18 column and a gradient of acetonitrile in water. The CE method gave shorter analysis times but RP-HPLC provided lower coefficients of variation of the retention times and better detection limits. In addition, the elution behavior of peptides in CE strongly depended on the sample matrix. Hydrogen production through sorption enhanced reforming (SER) use a solid CO2 absorbent to increase hydrogen purity (98%) and to perform reforming and WGS reactions in one single step, thus producing high methane conversions and important energy savings. Na2ZrO3 is as an alternate synthetic CO2 solid absorbent for SER applications. The present research is aimed to establish CO2 sorption kinetics parameters; reaction order, rate constant, apparent, intrinsic and diffusional activation energies. Na2ZrO3 sorption kinetics was studied through TGA as a function of CO2 concentration and temperature. A global reaction rate of first order in CO2 and a strong dependence in temperature was found. The approximate solution to the shrinking core model was used to fit the data. Modeling results indicated the surface reaction as the main resistance to the reaction rate, controlling reaction kinetics with only a minor contribution of the product layer diffusion resistance toward the end of the reaction.  相似文献

The Staphylococci populations in different types of Iberian dry fermented sausages from central-west Spain were identified. A simple electrophoretic method of whole-cell proteins and extracellular protein profiling was evaluated for speed of identification. This study was correlated with a 16S rRNA gene sequence analysis and biochemical identification by API Staph. A total of 81 isolates were identified by SDS-PAGE of the whole-cell proteins. These showed stable profiles in the range 99-14kDa that were clearly different for the different species, and were grouped into clusters together with the profiles of the eight reference strains. SDS-PAGE of the extracellular protein extracts provided additional characteristic banding patterns for the characterization of the Staphylococcus species present. The whole-cell SDS-PAGE showed that the predominant species was Staphylococcus saprophyticus (61.7%) followed by Staphylococcus aureus (19.7%). The identifications were confirmed by the 16S rRNA gene sequencing and by a BLAST search of the GenBank database. However, the API Staph biochemical identifications were frequently erroneous at the species level. In sum, SDS-PAGE analysis showed itself to be rapid and accurate in identifying the most commonly encountered Staphylococcus isolates in dry fermented sausages.  相似文献

The design and simulation of a 2nd harmonic based upconverter is introduced. With the proposed upconverter, it is possible to reach a good noise figure with power and area reduction. The design of the circuit was made with the UMC \(0.18\,\upmu \hbox {m}\) Mixed Mode/RF CMOS technology. However, the design methodology can be extended to a different CMOS process. According to the performance exhibited by the purposed mixer, it may be useful in wideband short-range communication technologies, such as certified wireless USB.  相似文献
