The concentrations of individual and total glucosinolates were measured in four types of Portuguese cabbage and in one hybrid white cabbage before and after cooking. Typical Portuguese culinary procedures include boiling the cabbage for 10 min but for particular kale types the leaves are first shredded then boiled for 5 min (Caldo verde). Analysis of the fresh cabbage, cooked leaves and cooking water showed that the glucosinolate content of the cabbages is reduced by more than 50%. Almost all of this loss is accounted for as intact glucosinolates in the cooking water, normally used for soups in Portugal.  相似文献

The glucosinolate content of 19 cultivars of pe-tsai and three cultivars of pak-choi Chinese cabbage (Brassica pekinensis Lour) Rupr and (Brassica chinensis L, respectively) has been determined using high performance liquid chromatography. The levels of total glucosinolates were 0.097-0.337 g kg?1 fresh weight (mean 0.198) in pe-tsai and 0.39-0.704 g kg?1 (mean 0.534) in pak-choi. The main components present were (2-hydroxybut-3-enyl-progoitrin), but-3-enyl- (gluconapin), 5-methylsulphinylpentyl- (glucoalyssin) and pent-4-enyl (glucobrassicanapin) glucosinolates, respectively. In comparison with other UK brassicas and American cultivars of Chinese cabbage, both the UK-grown pak-choi and pe-tsai are low in glucosinolates.  相似文献

One cultivar and two breeding lines of forage rape, grown in a glasshouse, were sampled at weekly intervals from 9 to 22 weeks after sowing. Separate determinations of glucosinolate content were made on leaves and stems by HPLC. There were differences in the proportion and concentration of individual glucosinolates between the rapes and between leaves and stems, showing that levels of individual glucosinolates cannot be predicted from total glucosinolate content. Of particular interest was the variation with harvest date in the levels of individual glucosinolates. This has considerable implications for the comparison of levels of individual glucosinolates between cultivars and crops, and suggests that detailed agronomic field studies are required to determine whether the intake by animals of potentially toxic glucosinolates, in particular progoitrin, can be minimised by exploiting these seasonal differences in glucosinolate concentrations. Progress has been made in lowering the level of this glucosinolate, and the possibility of breeding forage rape with very low or zero levels of progoitrin is indicated.  相似文献

The contents of glucosinolates in twenty-four cultivars of calabrese, green sprouting broccoli, have been determined using glucose release and high performance liquid chromatographic methods. The levels of total glucosinolates (range, 42·1–94·5 mg 100 g−1 fresh weight; mean, 62·3 mg 100 g−1 fresh weight) were comparable with those reported previously for cauliflower, but lower than those found in cabbage and, especially, Brussels sprouts. Analysis of the individual components revealed the main species to be 4-methylsulphinylbutyl glucosinolate (glucoraphanin) and, particularly, glucobrassicin and neoglucobrassicin, containing 3-indolylmethyl and 1-methoxy-3-indolylmethyl side chains, respectively. The individual glucosinolate contents of calabrese and cauliflower are compared and differences are considered in the context of biosynthetic pathways. The consequences of these findings for the flavour and biological properties of calabrese are briefly discussed.  相似文献

Although there is no clear evidence to fully describe the mechanism involved in glucosinolate-related effects on animal reproduction, lowered fertility in animals fed diets with rapeseed meal (RSM) inclusion is related to glucosinolate content in the diet. Negative effects can result both from multidirectional action of glucosinolates, malnutrition of mother due to the thyroid dysfunction, transfer of goitrogenic compounds to foetus and reduced transfer of nutritive compounds (e.g. iodine) through the placenta. The degree of reproduction impairment depends both on glucosinolate content and on the type of animal. Pregnant female rats are sensitive to the presence of glucosinolates, and the first symptoms of fertility impairment and lowering of offspring survival rate may occur at low glucosinolate levels, e.g. with diets containing low glucosinolate rapeseed meal (LG-RSM). In the case of swine, the limiting value above which sows fertility may be impaired is 4 μmol of total glucosinolates per g diet and 8 mmol of daily intake of these compounds. Opinions on the permitted RSM inclusion in diet for hens are very divergent. Some authors recommend limiting of the RSM inclusion to 10%, while others did not find any lowering of egg production in hens fed diets with two- or three-fold greater RSM inclusion rates. Most long-term experiments with heifers, cows and ewes indicate that ruminants tolerate the level of glucosinolate in LG-RSM although feeding this fodder as the only high-protein concentrate component may lead to impaired fertility.  相似文献

In this paper, it is demonstrated that many steps in the food production chain of vegetable products can have large influence on the final intake of health protective phytochemicals. The wide variations in levels at each step in the production chain makes an experimental quantification of the dietary intake of phytochemical extremely difficult. We present a concept for predictive modelling of the effects of various processes in the production chain of vegetable products on the intake of phytochemicals with potential health benefits. This approach is intended to be used for the developments of tools to facilitate both product and process development for health products as well as epidemiological input data for bioactive substances in the diet. Protective glucosinolates present in Brassica vegetables are used to illustrate the value of such a predictive model. The described model provides a powerful tool for handling the variation of glucosinolate levels throughout the chain in a quantitative way. Product development, consumer advice and human intervention trials are important areas that could benefit enormously from this approach.  相似文献

Glucosinolates, phenolic compounds and vitamin C were evaluated in two commercial and 12 experimental cultivars of broccoli (Brassica oleracea L var italica) grown under uniform cultural conditions. The predominant glucosinolates in all broccoli cultivars were 4‐methylsulphinylbutyl glucosinolate (glucoraphanin) and 3‐indolylmethyl glucosinolate (glucobrassicin). Other glucosinolates such as 4‐OH‐glucobrassicin and N‐methoxyglucobrassicin were detected in lower amounts. The total glucosinolate concentration ranged from 3.0 µmol g?1 dw (dry weight) in Pentathlon (experimental cultivar) to 28.3 µmol g?1 dw in I‐9905 (experimental cultivar). Flavonoids, caffeic acid derivatives and sinapic acid derivatives were quantified in methanol extracts. The largest content of flavonoids was found in the commercial cultivars Marathon and Lord, around 60 mg kg?1 fw (fresh weight). The vitamin C content of broccoli ranged from 43.1 mg per 100 g fw in Lord (commercial cultivar) to 146.3 mg per 100 g fw in SG‐4515 (experimental cultivar). © 2002 Society of Chemical Industry  相似文献

以玛咖为研究对象,通过高效液相色谱和电子鼻分别测定24?个产区36?个玛咖样品中芥子油苷的总含量和气味传感器的响应值原始数据。基于玛咖样品中芥子油苷的总含量和传感器响应值的相关性分析结果,采用软独立建模分析(soft independent modeling class analogy,SIMCA)算法建立玛咖品质快速鉴定模型。结果表明:T30/1、P30/1、P30/2三根传感器与芥子油苷含量之间存在显著相关性,根据3?根传感器建立的SIMCA模型可以将不同玛咖样品分为3?个等级:一等品(芥子油苷含量≥10?mg/g)、二等品(5?mg/g≤芥子油苷含量<10?mg/g)、三等品(芥子油苷含量<5?mg/g)。运用电子鼻气味检测数据结合SIMCA模型可以快速鉴别玛咖的等级,还可推测出所测样品中芥子油苷的含量区间。  相似文献

Five cultivars of broccoli (Brassica oleracea L. var. italica) were analyzed for individual glucosinolates, S-methylcysteine sulfoxide (SMCSO), aroma volatiles and sensory quality. Total glucosinolate content ranged from 47 to 93 μmol μmol·g dry weight1, and SMCSO ranged from 22 to 57 μmol μmol·g dry weight1. A total of 11 glucosinolates were identified in the broccoli cultivars. The major glucosinolates were: progoitrin, glucoiberin, glucoraphanin, glucobrassicin and neo-glucobrassicin and they accounted for more than 95% of the total content. Glucoiberin was only found in appreciable amounts in purple-headed broccoli. Pentanol, pentanal, hexanal, heptanal and nonanal were the most abundant higher boiling volatiles isolated from cooked broccoli using dynamic headspace trapping on Porapak and solvent desorption with diethyl ether. Sensory analysis by a trained panel showed that scores for cooked vegetable odor (‘hay’ and ‘green peapod’) were significantly different between cultivars. In contrast, scores related to Brassica odor (‘cauliflower’ and ‘mustard’) were not significantly different. The content of individual glucosinolates, SMCSO and higher boiling volatiles in the cultivars is discussed in relation to the sensory quality of the cooked product.  相似文献

Three genotypes of forage rape and two of winter oilseed rape (Brassica napus L), grown in a glasshouse, were inoculated with Delia floralis Fall eggs at 5 weeks and their roots were sampled after a further 6 weeks of larval attack. Individual and total glucosinolates were examined in seed and roots using HPLC. No clear relationship was found between seed and root total or individual glucosinolate content. Major differences in glucosinolate composition were found between uninoculated control roots. In two doublezero oilseed rapes, phenylethyl glucosinolate was predominant whereas, in the three forage rapes, 2-hydroxy-but-3-enyl was the major glucosinolate. Attack by D floralis larvae considerably modified both concentrations and relative proportions of individual glucosinolates in roots. The total glucosinolate content decreased for all of the rapes except double-zero oilseed rape WRG35. In all rapes the proportion of aromatic to aliphatic glucosinolates increased after attack, largely due to increased levels of indolebased glucosinolates; 1-methyoxy-3-indole methyl glucosinolate increased by over 88%. The total aliphatic glucosinolate content of all rape roots with the exception of WRG35 was reduced by 39–56% after attack. Possible causes for altered glucosinolate metabolism are discussed in relation to observed differences in levels of susceptibility to turnip root fly attack.  相似文献

Seed samples from a range of international rapeseed lines (Brassica napus L and B campestris L) were analysed for glucosinolate content using high performance liquid chromatography (HPLC). This analytical method provided a total profile consisting of eight different glucosinolates, including those used to define the Canola standard. The data indicated that broad categories of distinct glucosinolate profiles existed among the seed lines analysed. Indole glucosinolate content, expressed as a percentage of total glucosinolate content, was higher in the low glucosinolate lines of B napus. The actual contents of all eight glucosinolates in the seed were variable, particularly gluconapin, glucobrassicanapin and progoitrin. The importance of this HPLC procedure in facilitating selection for high or low contents of individual glucosinolates is discussed.  相似文献

Total aliphatic, indolic and aromatic glucosinolates were evaluated in the edible portions of fresh harvested inflorescences of five commercial and three experimental broccoli (Brassica oleracea L var italica) cultivars grown under various climatic and agronomic conditions, ie early (winter) or late (spring) season with poor (15 kg ha?1) or rich (150 kg ha?1) sulphur fertilisation, in an attempt to identify differences due to genetic and agronomic factors. The predominant glucosinolates in all broccoli cultivars were 4‐methylsulphinylbutyl‐glucosinolate (glucoraphanin), 3‐indolylmethyl‐glucosinolate (glucobrassicin) and 1‐methoxy‐3‐indolylmethyl‐glucosinolate (neoglucobrassicin). The results showed no significance differences in total glucosinolates between rich and poor fertilisation, whereas total glucosinolates were detected more significantly in the late than in the early season. All broccoli cultivars showed a higher content of indolic glucosinolates than aliphatic glucosinolates. Clear advantages were detected in the analysed commercial cultivars, as the experimental cultivars yielded lower concentrations of these compounds. © 2003 Society of Chemical Industry  相似文献

A rapid X-ray spectrometric (XRS) method has been developed for the determination of the total glucosinolate content of oilseed rape and other Brassica oilseeds. The method is based on analysis for fully oxidised sulphur (S6+), which includes half the sulphur (S) in the glucosinolate molecule, and the S in sulphate. Results are highly correlated with glucosinolate content determined by glucose release, a standard method widely used in Australia. The relationship is total glucosinolates = (23·97 S6+ -9·43) r2 = 0·987, where the glucosinolate content is expressed as μmol g?1 and the S6+ content in mg g?1. The relationship is applicable to seed of any glucosinolate content and to meal, and is unaffected by changes in protein sulphur content. The correlation of glucosinolates with S6+ is shown to be closer than the correlation with total S. The latter correlation forms the basis of the existing XRS method, used within the European Community in recent years. The advantages of S6+ derive from the linearity of the regression and the elimination of errors caused by variation in protein content. The method should be valuable to the Australian oilseed industry because it allows the rapid screening of breeding lines to ensure low glucosinolate content and the assessment of deliveries for crushing and of meal.  相似文献

Determining ontogenic diversity in vegetables, in general or Brassicas in particular, regarding the bioactive content, is an interesting task since the most promising Brassicaceae foods could have the highest nutritional and health-promoting properties. Therefore, vitamin C, phenolic compounds, glucosinolate content, and total antioxidant capacity were evaluated in commercial cultivars of broccoli (Brassica oleracea var. italica; cv. Nubia, cv. Marathon and cv. Viola) seeds and during the sprouting period. Vitamin C was not detected in dormant seeds and its content increased with the germination, reaching values ranging from 53 (cv. Nubia) to 64 (cv. Marathon) mg/100 g FW, at the end of the monitored period (14days). The total glucosinolate content in seeds and 3-day-old sprouts was higher in cv. Marathon (1005 and 556 mg/100 g FW, respectively), however cv. Viola sprouts registered the highest glucosinolate content 7 and 14 days after sowing (235 and 208 mg/100 g FW, respectively). Aliphatic glucosinolates were more affected by genetic factors than the indolic glucosinolates, being glucoraphanin the predominant glucosinolate in cv. Nubia and cv. Marathon, whereas glucoiberin was the major glucosinolate in cv. Viola. The flavonoid and total phenolic content was significantly higher in cv. Viola. Also, seeds of this cultivar showed the highest antioxidant capacity (2.7 mg Trolox/g FW).  相似文献

A series of canola fractions representing various stages in the protein isolation process were collected to assess the extent of glucosinolate recovery using two ultrafiltration systems. The total glucosinolate level of all fractions was estimated using a diabetic test kit (DTK), One Touch Blood Glucose Meter, to monitor glucose released on hydrolysis of glucosinolates by endogenous myrosinase and results compared to those obtained using gas chromatography (GC). Of the glucosinolates in the meal, approximately 1.9 g/100 g were recovered in the protein isolated from canola meal, regardless of the type of ultrafiltration system. A major reduction in glucosinolates was evident in the ultrafiltration step where, based on GC data, 63% and 39% of the glucosinolates were recovered in the discarded permeate using an Amicon™ stirred cell and Vivaflow™ 200 ultrafiltration, respectively. However, an overestimation of glucose was observed for the DTK results when looking at total glucosinolate recovery, possibly due to the presence of other free glucose in the canola fractions. These findings suggest that low glucosinolate protein isolates can be obtained, in large part due to glucosinolate removal during ultrafiltration of the extracted material. While the DTK method gave good estimates of the glucosinolates in the meal, it cannot be recommended for use with isolation products.  相似文献

ABSTRACT:  Numerous epidemiological studies indicate that Brassica vegetables in general and broccoli in particular protect humans against cancer; they are rich sources of glucosinolates and posses a high content on flavonoids, vitamins, and mineral nutrients. The contents of total intact glucosinolates, total phenolics, vitamin C, and minerals (potassium, sodium, calcium, magnesium, iron, manganese, zinc, and copper) in the edible portions of freshly harvested broccoli (florets), which was subjected to stir-frying treatments, were evaluated. In the present work, the stir-fry cooking experiments were carried out using different edible oils from plant origin (refined olive oil, extra virgin olive oil, sunflower oil, peanut oil, soyabean oil, and safflower oil) known and used worldwide. Results showed that during stir-frying, phenolics and vitamin C were more affected than glucosinolates and minerals. Stir-fry cooking with extra virgin olive, soybean, peanut, or safflower oil did not reduce the total glucosinolate content of the cooked broccoli compared with that of the uncooked sample. The vitamin C content of broccoli stir-fried with extra virgin olive or sunflower oil was similar to that of the uncooked sample, but greater than those samples stir-fried with other oils.  相似文献

BACKGROUND: Feeding of high glucosinolate rapeseed–mustard cakes (RMCs) imparts adverse effects on dry matter (DM) intake, health and overall performance of animals. Recently, plant breeding efforts have resulted in many cultivars of RMCs containing low to moderate levels of glucosinolate in India. The feeding value of RMC cultivars with high and low glucosinolate was evaluated relative to commonly used soybean meal as a protein supplement in growing crossbred calves. RESULTS: Eighteen growing crossbred calves (62.9 ± 3.8 kg body weight) were randomly allocated to three dietary treatments SBM, LG and HG containing soybean meal, low glucosinolate B. napus (15 µmol glucosinolates g?1) and high glucosinolate B. juncea (135 µmol glucosinolates g?1), respectively. Although daily intake of total DM and wheat straw did not differ (P > 0.05) among the dietary treatments, intake (g/kgW0.75) of concentrate moiety decreased quadratically (P < 0.01) with increasing glucosinolate levels in diets. Nutrient digestibility and balances of N, Ca and P by calves were similar (P > 0.05) among dietary treatments. However, average daily gain (g) decreased and feed conversion ratio values increased quadratically (P < 0.05) with increasing glucosinolate levels. Serum metabolic profile and triiodothyronine remained within the normal range; however, thyroxine changed quadratically. CONCLUSION: The results suggested that while high glucosinolate RMCs may reduce the palatability and consequently growth rate in crossbred calves, SBM can be replaced completely by low glucosinolate rapeseed without compromising their performance. Five main cultivars from China and 143 parent materials grown in a greenhouse were used to investigate the glucosinolates in broccoli florets. Eight aliphatic glucosinolates, four indole glucosinolates, and one aromatic glucosinolate were identified and quantified using high-performance liquid chromatography (HPLC). The results showed that glucoraphanin, glucobrassicin, 4-methoxyglucobrassicin and neoglucobrassicin were present in all samples. However, the predominant type of glucosinolate was different among pure lines. The anti-cancer glucoraphanin concentration ranged from 0.06 to 24.17 μmol/g in pure lines and from 1.57 to 5.95 μmol/g in commercial cultivars. The progoitrin concentration in commercial cultivars varied from 1.77 to 6.07 μmol/g with a mean value of 3.20 μmol/g. Significant variations were observed in the concentration of individual glucosinolates and in each class of glucosinolates among broccoli populations. Dozens of specific lines with altered glucosinolate profiles, as well as ten good candidates for breeding high-chemoprotective glucosinolate cultivars, were obtained according to the putative glucosinolate pathway in broccoli.  相似文献

An investigation of the naturally occurring aluminum contents in grains, fruits and vegetables locally planted in some areas of China was conducted, and the aluminum dietary intake from the investigated food was estimated. A total of 2,469 samples were collected during 2013 to 2014 and tested for aluminum content using ICP‐MS method. The results showed that although 77.6% of the samples contained aluminum less than 5 mg/kg, significant variations of aluminum contents were observed in different food groups. Generally, the aluminum contents were found to be relatively high in dried grains and fresh vegetables, and low in fresh fruits. The mean value of aluminum contents in grains was 6.3 mg/kg, with wheat being the highest, followed by soybean and corn. The fresh vegetables had an average aluminum content of 4.7 mg/kg, with leafy vegetables being the highest, followed by bulb and stem vegetables. Most varieties of fresh fruits were low in aluminum, with the mean of 1.3 mg/kg. Based on the food consumption data from the China National Nutrient and Health Survey, the average weekly dietary intake of naturally occurring aluminum from the investigated foods was estimated to be 0.62 mg/kg bw for the general population and 0.55 to 1.00 mg/kg bw for different age groups. Grains and vegetables were the main contributors to the overall intake. Evaluated against the provisional tolerable weekly intake (PTWI) of 2 mg/kg bw, the dietary naturally occurring aluminum intake from the investigated foods was considered to be no safety concern.  相似文献
