The relative influence of genotype, environment and genotype×environment effects on four antinutritional factors (g kg−1) of importance in cowpea were studied using 15 local and improved cowpea genotypes grown in 12 environments, comprising three locations over four seasons per location. The locations Ago‐Iwoye (6°58′N4°00′E), Mokwa (9°17′N5°04E) and Kano (12°00′N8°31′E) were representatives of the major agroecological zones where cowpeas are produced. Genotypes effects were strongest in controlling trypsin inhibitor content, while the environment was the major source of variation for tannins, haemagglutinin and phytic acid contents. Thus, the variability in the levels of these antinutritional factors in cowpea seeds depends largely on the environment where they are grown. This implies that a cowpea genotype grown and consumed safely in an environment can be poisonous when grown and consumed in another environment. Genotype×environment effects were significant for tannins, haemagglutinins and trypsin inhibitor contents. Correlation coefficients (pooled data) from the three locations indicated that trypsin inhibitor was positively correlated to phytic acid (r=0.59, 0.001<P<0.05) and haemagglutinins (r=0.64, 0.001<P<0.05) but negatively correlated to tannin contents ( r=−0.79, 0.001<P<0.05). © 1999 Society of Chemical Industry  相似文献

Whole grains and flours of two cultivars of cowpea ( Vigna unguiculata ) were stored sealed at steady temperatures of 0, 20 and 55°C, and 11–13% moisture for 7 months. The pH, soluble sugars, free amino nitrogen, titratable acidity, and protein digestibility decreased at 55°C. The changes varied with cultivar and between the flours and the grains stored at 0 and 20°C. All changes, except titratable acidity in white cowpea flour, were strongly correlated with increasing storage temperature.  相似文献

Analysis was done of the composition and bioactive factor content of whole meal, processed meal and protein concentrate from a cowpea cultivar (Vigna unguiculata L. Walp var. IT86D‐719) grown in Yucatan, Mexico and of changes in these parameters after soaking and dehulling. Both meals had a high protein content (247.53 and 257 g kg?1 dry matter (DM) respectively). The protein concentrate was rich in protein (786 g kg?1 DM) and lipids (58.47 g kg?1 DM) and had an amino acid profile similar to that of the processed meal. The amino acid profiles of the meals almost covered human dietary requirements based on FAO/WHO/UNU‐suggested profiles but were deficient in sulphur amino acids. Trypsin inhibitor activity was high in both meals compared with levels found in previous studies. Trypsin inhibitor activity in the concentrate was not eliminated but was significantly reduced. Lectin activity, tannin levels, phytate levels and α‐amylase inhibitor activity were relatively low in the meals, and cyanogenic glucosides were not detected. Residual amounts of α‐amylase inhibitors, tannins and phytate were observed in the concentrate, and lectin activity was not detected. Results indicate that V. unguiculata L. Walp var. IT86D‐719 meals and protein concentrate are good potential foodstuffs in the Yucatan region. Copyright © 2006 Society of Chemical Industry  相似文献

The genetic and environmental variability for seed yield (kg ha-1), protein content (g kg-1 DM), lipid content (mg g-1 DM) and essential amino acid composition (g per 16 gN) of cowpea seeds using 15 cultivars grown in three locations (Kano (12°00′ N 8°31′ E), Mokwa (9°17′ N 5°04′ E) and Ago-Iwoye (6°58′ N 4°00′ E)) that differ markedly in climate was studied. The environmental effect accounted largely for the variability observed in yield (93%), protein (71%), lipid (100%), threonine (96%), cystine (80%) and arginine (81%) while the genotypic effect accounted largely for the variability observed in methionine (56%) and lysine (51%) contents. Correlation coefficients (pooled data) from the three locations indicated that yield was negatively correlated to protein content (r=-0·87, P<0·001) and positively correlated to lipid content (r=0·73, P<0·001). Protein content was negatively correlated to lipid content (r=-0·67, P<0·001) and positively correlated to threonine (r=0·66, P<0·01), cystine (r=0·69, P<0·001) and methionine (r=0·88, P<0·001) contents. Similarly, yield was positively correlated to threonine (r=0·22, 0·01<P<0·05), cystine (r=0·38, 0·001<P<0·01) and methionine (r=0·67, 0·001<P<0·01). Yield showed a strong negative correlation with protein content (r=-0·81) and a strong positive correlation with lipid content (r=0·97) at the environmental level. Cystine, methionine and to some extent, threonine were the limiting amino acids in the three environments. This research established the degree of variability for these characters in cowpea and indicated that concurrent selection for yield, lipid content, threonine and sulphur amino acids compositions is feasible. © 1997 SCI.  相似文献

Cowpea (Vigna unguiculata) is a very important crop for people living in the north‐east of Brazil where it constitutes the principal source of protein and carbohydrate. In this study, it was observed that the in vitro digestibility of the seed albumin and globulin fractions extracted from eight Brazilian cowpea cultivars was high when treated with pepsin but resistant to degradation by trypsin or chymotrypsin even after 3 h of treatment. When the albumin and globulin fractions were given to rats by intragastric intubation it was observed that intact proteins or their fragments were immunodetected in the faeces. Immunohistochemical analyses of the gut sections of these rats showed that a proportion of the albumin fraction (or its fragments), but not the globulin one, was bound to the brush border enterocytes in the duodenum. Thus the incomplete enzymatic degradation of both globulin and albumin fractions as well as the albumin binding to the gut may have a bearing upon the growth depression, malabsorption and diarrhoea observed on rats fed on cowpea seeds. Drinking water, cowpea and maize grains were sampled in some potentially exposed agro-ecological areas in Togo and analysed for their contamination by some common organochlorine pesticides. A total of 19 organochlorine pesticides were investigated in ten subsamples of maize, ten subsamples of cowpea and nine subsamples of drinking water. Analytical methods included solvent extraction of the pesticide residues and their subsequent quantification using gas chromatography-mass spectrometry (GC/MS). Estimated daily intakes (EDIs) of pesticides were also determined. Pesticides residues in drinking water (0.04–0.40 µg l?1) were higher than the maximum residue limit (MRL) (0.03 µg l?1) set by the World Health Organization (WHO). Dieldrin, endrin, heptachlor epoxide and endosulfan levels (13.16–98.79 µg kg?1) in cowpea grains exceeded MRLs applied in France (10–50 µg kg?1). Contaminants’ levels in maize grains (0.53–65.70 µg kg?1) were below the MRLs (20–100 µg kg?1) set by the Food and Agriculture Organization (FAO) and the WHO. EDIs of the tested pesticides ranged from 0.02% to 162.07% of the acceptable daily intakes (ADIs). Population exposure levels of dieldrin and heptachlor epoxide were higher than the FAO/WHO standards. A comprehensive national monitoring programme on organochlorine pesticides should be undertaken to include such other relevant sources like meat, fish, eggs and milk.  相似文献

The inheritance pattern of protein content in seeds of two crosses of cowpea (Vigna unguiculata (L) Walp) was studied. It was observed that, in both crosses, inheritance of the character involved both additive and non-additive gene effects. Heritability in the broad sense was 0·70–0·78. A significant effect of pollen source was detected in one of the two crosses. In both crosses, comparison of seed protein content of reciprocal segregating generations indicated the influence of cytoplasmic factors.  相似文献

Seeds of Brazilian Vigna unguiculata (L) Walp cultivars (EPACE 10, EPACE 11, Pitiuba, TVu 1888, IPA 206 and Olho de Ovelha) were analysed to establish their proximate composition, amino acid content and presence of antinutritional and/or toxic factors. The seed protein, carbohydrate and oil contents ranged from 195 to 261 g kg−1 dry matter, from 678 to 761 g kg−1 dry matter and from 12 to 36 g kg−1 dry matter respectively. EPACE 10, EPACE 11, Pitiuba, TVu 1888, IPA 206 and Olho de Ovelha cultivars are rich in glutamin/glutamic acid, asparagin/aspartic acid and phenylalanine + tyrosine. The essential amino acid profile compared with the FAO/WHO/UNU scoring pattern requirements for different age groups showed that these seeds have methionine + cysteine as the first limiting amino acid for 2–5‐year‐old children. However, only Pitiuba, IPA 206 and Olho de Ovelha are deficient in methionine + cysteine for 10–12‐year‐old children. The contents of threonine, valine, isoleucine, leucine and methionine + cysteine of all cultivars were lower than those of hen egg. Haemagglutinating activity measured against rabbit erythrocytes was found to be present in the six cultivars, but only after the red cells were treated with proteolytic enzymes. All cultivars displayed protease inhibitor activity which varied from about 12.0 to 30.6 g trypsin inhibited per kg flour. There has been growing interest in the use of resistant starch (RS) as a prebiotic for physiological benefits and to reduce the risk of chronic diseases. In this study, RS was isolated from samples of five cowpea cultivars (DT129-4, TVU 11424, PAN 311, Fahari and Bechuana White) seeds to determine their potential prebiotic effects, and proximate and mineral composition. Results obtained showed samples of five cowpea cultivars to be high in protein (18.0–28.7%) and carbohydrates (54.9–66.0%) and low in fat (0.6–3.7%). The RS from cowpea samples ranged between 9.3 and 12.1% with cultivar DT129-4 having the highest amount. Fermentation of RS using mixed and pure cultures was done, and bacterial growth was monitored over a 24-h period. Resistant starch isolated from all cowpea samples fulfilled the criteria to be classified as a prebiotic which have a wide range of beneficial effects on the host, with cultivar DT129-4 showing the most prebiotic potential amongst cowpea samples tested.  相似文献

ABSTRACT

In this study, 81 samples of two cowpea varieties (brown: 54; white: 27) collected from various markets in southwestern Nigeria were examined for fungal and mycotoxin contamination. Moulds belonging to Aspergillus, Fusarium, and Penicillium were recovered from 99% of the samples. In both cowpea varieties, Aspergillus (52–53%) dominated Fusarium (29–30%) and Penicillium (17–20%). The interactive effect of cowpea variety and sampled location was significant (p = .013) on the occurrence of Fusarium species. Aflatoxins were detected in one brown and two white cowpea samples at concentrations reaching 209 and 84 µg/kg, respectively. Additionally, beauvericin was found in two samples of each cowpea variety, albeit at low concentrations. Cowpea presents as an alternative vegetable protein source to groundnuts in household nutrition with respect to mycotoxin contamination. Simple techniques to prevent mycotoxins in dry cowpeas are discussed.  相似文献

Cowpea seeds were treated to various gamma irradiation doses, and their colour, cooking quality and pasting properties studied. Irradiation at 50 kGy resulted in significant browning (indicated by decreases in L colour value) of cowpea seeds. At 2 and 10 (but not at 50) kGy, irradiation led to significant reduction in cooking time of cowpea seeds possibly through irradiation‐induced degradation of starch and pectic substances (indicated by decreases in peak and final viscosities) leading possibly to enhanced heat and mass transfer within the seed cotyledon and cell wall, respectively. At 50 kGy, the cooking time of cowpea seeds was prolonged significantly owing possibly to extensive polymer cross‐linking occurring within the seeds at this high dose. Splitting of cowpea cotyledons during cooking decreased significantly at 50 kGy, but was unaffected at 2 and 10 kGy. Irradiation resulted in significant leaching of nutrients from cowpea seeds during cooking in a dose‐dependent manner.  相似文献

Protein, oil and fatty acid composition ere determined on seed samples of Lupinus albus L cultivars gron in to different locations, Villafranca and Córdoba. Seeds planted in the latter location ere inoculated ith Rhizobium leguminosarum f lupini as soil pH as 7·5-7·9. Locations clearly caused differences in both protein and oil contents. Interactions beteen localities and genotypes ere not significant. Environmental effects ere much greater than the genotypic factors except for oleic and linoleic acids. Both locality and genotype effects ere clearly significant for all fatty acids studied except for palmitic acid. A negative correlation as found beteen protein and oil content. Oil and oleic acid contents ere positively correlated to each other. Linoleic acid content seemed not to be correlated ith any other fatty acid except oleic. Linolenic acid content as also negatively correlated ith that of oleic acid. Covariance analysis shoed a strong positive genetic correlation beteen oil and oleic acid contents; the genetic correlation as higher than the environmental one. Oil content is strongly negatively correlated ith both linoleic and linolenic acid contents at the genotypic level.  相似文献

ABSTRACT: Wet-milling of soaked, decorticated cowpeas generated large amounts of coarse cell wall material (CWM) and soluble protein (SP). CWM with high water-holding and swelling capacities contributed to excellent paste hydration and flow properties; high SP and paste viscosity resulted in superior foaming characteristics. In hydrated cowpea meal, the presence of coarse cellular material adversely affected paste hydration and flow characteristics; low SP and viscosity resulted in poor foaming. Wet-milling of hydrated meal improved viscosity and functionality. Intense dry-milling increased SP but adversely affected paste viscosity and functionality.  相似文献

The effects of a hydrothermal treatment consisting of tempering (to 41% moisture) and heating to 153 °C (micronisation) on the structural and physicochemical characteristics of two cowpea varieties were studied. The untreated varieties had similar cooking times, although cooked Bechuana white cowpeas were significantly (P ≤ 0.05) softer and had a higher incidence of splitting than Var. 462 cowpeas. This may be due in part to differences in cotyledon structure affecting water uptake during cooking. The hydrothermal treatment changed the physical structure and chemical properties of the cowpea seeds. This led to significant (P ≤ 0.05) reductions in the cooking time of micronised Bechuana white and Var. 462 cowpeas, by 47 and 36% respectively, as compared with control samples. Micronisation caused physical fissuring of the seed coat and cotyledon and significantly (P ≤ 0.05) reduced the bulk density of treated seeds. These changes in the physical structure significantly (P ≤ 0.05) improved the initial water uptake during soaking and cooking, increased the enzyme‐susceptible starch and reduced the protein solubility and hydration capacity of the cowpea seeds. Cooked (60 min) micronised cowpeas also had significantly (P ≤ 0.05) more splits and a significantly (P ≤ 0.05) softer texture than control samples. In developing countries, traditional control methods are commonly used against stored-product insects and mites. In Senegal, the leaves of Cassia occidentalis L. (Caesalpiniaceae) are used to protect cowpea seeds (Vigna unguiculata L. (Walpers)) against Callosobruchus maculatus (Coleoptera: Bruchidae). The biological activity of the leaves, the seeds and oil of C. occidentalis was evaluated in controlled conditions (28 ± 2°C, 45 ± 5% r.h.) against C. maculatus. At the rate of 10% (w/w), both fresh and dry leaves as well as whole and ground seeds had no contact toxicity on the cowpea beetle. In contrast, seed oil induced an increase in mortality of C. maculatus eggs and first larval instar at the concentration of 10 ml/kg cowpea. The basis of the ovicidal and larvicidal activities are discussed in this paper. Several trials using pure compounds have highlighted that several fatty acids (linoleic, oleic and stearic) are responsible for C. occidentalis toxicity. C. occidentalis seed oil did not reduce the oviposition of C. maculatus at 10 ml/kg seed.  相似文献

The influence of newly developed cowpea varieties (IT81D‐699, IT82E‐18, IT84S‐2246‐4 and TVx3236) on the proximate composition, protein quality and sensory properties of akara, a popular West African cowpea‐based food, was investigated and the results obtained were compared with those for akara prepared from a local blackeye cowpea variety. Protein quality was evaluated using weanling albino rats fed diets which were formulated to supply 10% protein using defatted akara samples, with casein as a control. Akara samples prepared from IT81D‐699 and TVx3236 had crude protein contents, texture and overall acceptability comparable to those of akara prepared from the blackeye variety. Also, akara diets formulated using IT81D‐699 and TVx3236 showed significantly (p < 0.05) higher values for weight gain, protein efficiency ratio, net protein ratio and true digestibility than diets formulated with IT82E‐18, IT84S‐2246‐4 and blackeye, suggesting an improvement in the nutritional quality of akara produced using these (IT8ID‐699 and TVx3236) newly developed cowpea varieties.
