Five commonly consumed vegetables in Malaysia namely, four-angled bean (Psophocarpus tetragonolobus D.C.), French bean (Phaseolus vulgaris L.), long bean (Vigna sesquipedalis L.), snow pea (Pisum sativum var. macrocarpon L.) and snap pea (Pisum sativum) were blanched in boiling water for 10 min. The contents of total phenolics, ascorbic acid and β-carotene, and the antioxidant capacity as typified by β-carotene and free radical scavenging activity (DPPH) assays were determined for the raw and blanched vegetables. The study revealed that blanching caused a significant (p < 0.05) increase in β-carotene content [fresh (389–539 µg/100 g), blanched (510–818 µg/100 g)], except in snow pea. Conversely, there was a significant (p < 0.05) decrease in ascorbic acid content [fresh (1.2–7.8 mg/100 g), blanched (0.67–3.8 mg/100 g)]. After blanching, the total phenolic content and antioxidant activity either decreased or increased depending on the type of vegetables. The total phenolic content was positively correlated with the antioxidant activity of the studied vegetables to some extent, but not with ascorbic acid or β-carotene.Industrial relevanceBeans (four-angled bean, French bean and long bean), and peas (snow and snap pea) are commonly consumed vegetables in Malaysia. However, the scientific information regarding blanching and its effect on the total phenolic content and antioxidant activities is very limited. This work showed that blanching caused an increase in the carotene, total phenolic content and antioxidant activities in some of the selected vegetables. Three underutilized legumes from Nigeria, Brachystegia eurycoma, Tamarindus indica and Mucuna flagellipes, have been subjected to standard analytical techniques in order to evaluate proximate composition, physicochemical properties and contents of nutritional valuable elements and fatty acids of the seeds and oils. The proximate analysis indicated that the oil content was 5.87 ± 0.30, 7.20 ± 0.45 and 3.77 ± 0.21 g/100 g for B. eurycoma, T. indica and M. flagellipes, respectively. The seeds are rich in protein and carbohydrate, the protein content ranging from 11.82 ± 0.25 g/100 g–24.94 ± 0.18 g/100 g dry matter. These compare favourably with high protein animal sources like oyster, beef, pork and marine fishes. The iodine value of two of the oils place them in the non-drying group of oils, while the composition of all the oils compare well with those of rape seed, sesame, sunflower and groundnut seed oils. This suggests their use as edible oils.Analyses of the oils for fatty acids indicate that the oils contain linoleic acid which is one of the three essential fatty acids. The dominant fatty acids however are linoleic, palmitic, oleic and stearic acids with oleic acid having the highest percentage 24.13–31.50%. Eight nutritional valuable minerals were determined in the seed flours. The seeds are rich in potassium 52.1 mg/100 g–131 mg/100 g. They also contain significant concentration of iron 4.55 mg/100 g–8.20 mg/100 g.  相似文献

The polyphenols, carotenoids, ascorbic acid, and protein were determined in 24 underutilized medicinal vegetables from Indonesia. Anacardium occidentale, Sauropus androgynus (L.) Merr., and Moringa pterygosperma Gaertn. leaves were rich sources of flavonoids, with 118–144 mg/100 g fresh weight. Quercetin, kaempferol, and chlorogenic acid were the predominant polyphenols among those measured in vegetables. Polyscias pinnata leaves and Solanum torvum Swartz fruits had the most phenolic acids, with 53 and 36 mg/100 g, respectively. Moringa pterygosperma had the most carotenoids among vegetables, with 14 mg β-carotene equivalents (βCE)/100 g. Ascorbic acid content of fresh vegetables was 12.03–494.43 mg/100 g. A. occidentale, S. androgynus, Ocimum americanum L., Cosmos caudatus H.B.K., and Carica papaya L. (papaya) leaves had more than 100 mg ascorbic acid/100 g. Thus, a number of underutilized vegetables from Indonesia may be rich sources of functional components including polyphenols and ascorbic acid.  相似文献

Samples of beach pea (Lathyrus maritimus L.) seeds and plant parts were analyzed for their chemical composition, total and free amino acids as well as minerals. The crude protein content of plant parts was from 10.7–28.0%, soluble proteins from 190–709 mg/100 g, lipid from 1.3–6.0%, ash 2.2–6.8%, crude fibre 10.7–35.5%, soluble sugars 0.1–12.2%, starch 0.8–26.5%, carbohydrate 55.8–81.5% and phenolic compounds from 0.5–3.0%. The amino acid profile of proteins of seeds and other plant parts of beach pea showed that they were deficient in sulphur-containing amino acids. Tryptophan was another limiting amino acid in plant parts, except in leaves (1.35 g/16 g N). The content of free amino acids was highest in branches plus stems (3148 mg/100 g) and lowest in pod shells (151 mg/100 g). Beach pea plant parts were a good source of minerals such as K, P, Ca, Mg, Na, Fe, Al and Zn.  相似文献

Different brands of sardines canned in soybean oil and tomato sauce, that are commercialized in Brazil, had their proximate composition, cholesterol content and fatty acids composition analyzed. Protein contents were equivalent to the values found for sardines in natura, ranging from 19.8 to 24.4%. High variations of the total lipids content (5.30–16.8%) were verified; the highest levels were found for sardines canned in soybean oil. The cholesterol content ranged from 50.4 to 65.1 mg/100 g. The highest levels of essential C18:2n  6 and C18:3n  3 fatty acids were found in sardines canned in soybean oil. The EPA (C20:5n  3) and DHA (C22:6n  3) concentrations ranged from 5.39 to 15.1% and from 3.89% to 9.51%, respectively, and the highest levels were observed in sardines canned in tomato sauce.  相似文献

Eight popularly consumed green leafy vegetables in Nigeria namely: Structium sparejanophora, Amarantus cruentus, Telfairia occidentalis, Baselia alba, Solanum macrocarpon, Corchorus olitorus, Vernonia amygdalina, and Ocimum gratissimum were blanched in hot water for 5 mins. The antioxidant properties of the fresh and blanched green leafy vegetables were subsequently determined. The total phenol, ascorbic acid and the antioxidant potentials as typified by reducing property and free radical scavenging activity was also determined. The results of the study revealed that blanching cause a significant (P<0.05) increase in the total phenol [fresh (0.1–0.3 g/100 g), blanched (0.2–0.6 g/100 g)] content of the green leafy vegetables except in Amarantus cruentus and Vernonia amygdalina where there was no change. Conversely, there was a significant (P<0.05) decrease in the vitamin C [fresh (43.5–148.0 mg/100 g), blanched (15.8–27.3 mg/100 g)], reducing property [fresh (0.5–1.5 absorbance), blanched (0.1–0.6 absorbance)] and free radical scavenging ability [fresh (20.0–51.4%), blanched (16.4–47.1%)] of the blanched green leafy vegetables except in Structium sparejanophora, where there was no change in the reducing property (0.6 absorbance) and free radical scavenging ability (59.8%) of the blanched vegetable. In view of this it could be concluded that blanching of vegetables though makes green leafy vegetables more palatable and less toxic, however it reduces their antioxidant properties drastically.  相似文献

This study was carried out to determine the chemical composition, antinutrient and phytonutrient contents of some wild fruits, namely African star apple (Chrysophyllum albidum G. Don.), hog plum (Spondias mombin Linn.), bush mango (Irvingiagabonensis Baill) and monkey cola (Colamillenii K. Schum). Samples of the wild fruit commonly consumed were collected from some villages in Ido Local Government Area, Oyo State Nigeria. The wild fruits were analysed for phytonutrients, antioxidants and mineral composition. Ranges of total phenolics and total anthocyanin content of these wild fruits were 27.78 ± 6.01 in I. gabonensis, 57.42 ± 4.47 in S. mombin, 121.29 ± 4.97 in C. millenii and 398.23 ± 0.00 in C. albidum respectively. Significant differences (p < 0.05) were found in antinutrient, phytonutrient and mineral composition of C. albidum, I. gabonensis and C. millenii. The analysis of variance revealed that calcium and manganese contents of I. gabonensis were significantly (p < 0.05) higher than those of C. albidum and C. millenii. The antioxidants especially vitamin C content ranged from as low as 15.87 mg/100 g in C. albidum to as high as 204.86 mg/100 g in S. mombin. The values for total carotenoid ranged from 172.77 μg/100 g (in C. millenii) to 1380.17 μg/100 g (in C. albidum). The wild fruits are sources of phytonutrients, antioxidants such as vitamin C, total carotenoids and some minerals. Planting of the wild fruit trees or the incorporation in farming systems should thus be encouraged to increase production and availability to consumers and as industrial raw materials.  相似文献

The samples of 14 honeys, retained from Estonian beekeepers, were analyzed for parameters such as pH, moisture content, free acidity, electrical conductivity, diastase activity, hydroxymethylfurfural (HMF) content and mineral content, including sodium (Na), potassium (K), magnesium (Mg) and calcium (Ca). Fructose, glucose and disaccharide content were also identified and fructose/glucose ratio was calculated. In addition melissopalynological analyses were carried out for characterization of honeys. The mean values of analyzed honeys were: pH 3.8; moisture 17.3%; free acidity 20.4 mmol/kg; electrical conductivity 0.2 mS/cm; diastase activity 23.1 DN and HMF was below 3.8 mg/kg. Within the mineral content, potassium was quantitatively the most important mineral in the range of 125.79 to 1381.53 mg/kg followed by calcium of 20.37-63.65 mg/kg, magnesium 5.53-25.49 mg/kg and sodium 4.77- 19.44 mg/kg. The predominant sugar in honey samples was fructose having the mean value of 35.91 g/100 g followed by glucose 35.00 g/100 g. The disaccharide average content was 6.00 g/100 g. The melissopalynological analyzes showed that the most dominant pollens in honey samples were cruciferous (Cruciferae)-mainly rape (Brassica napus); rosacean (Rosaceae)-mainly raspberry (Rubus idaeus); white clover (Trifolium repens); sweet clover (Melilotus officinalis) and willow (Salix). The results of honey pollen profile analysis and calculated fructose/glucose ratios (0.89-1.17) both indicated to flower honeys. All of the analyzed honeys were found to meet European Legislation (EC Directive 2001/110) for all parameters.  相似文献

The chemical and volatile composition as well as sensory profile of five brown edible seaweeds collected in the United Kingdom, was evaluated. The ash content was 190–280 mg/g, NaCl 35.1–115.1 mg/g, protein 2.9–6.0 g/g, and fat 0.6–5.8 g/g (dry basis). Fucus vesiculosus, Fucus spiralis and Ascophyllum nodosum showed higher antioxidant activities (DPPH and FRAP). Nucleotide concentrations were of the same order of magnitude as reported in other foods such as tomatoes or potatoes, except for F. vesiculosus where levels of nucleotides were 10 times higher. The fatty acids profile was dominated by oleic acid (21.9–41.45%), followed by myristic (6.63–26.75%) and palmitic (9.23–16.91%). Glutamic and aspartic acids (0.15–1.8 mg/g and 0.05–3.1 mg/g) were the most abundant amino acids. Finally, sensory and volatile analyses illustrated that Laminaria sp. had the strongest seaweed and seafood-like aroma and taste.  相似文献

Chagalapoli (Ardisia compressa K.) is a tropical fruit of deep purple color with a high content of pigments. Anthocyanins, polyphenol composition, antioxidant activity and physicochemical characteristics of chagalapoli fruits (CF) are analyzed. The proximal and mineral composition is similar to that found in common berries (strawberry, blackberry and blueberry). A high content of total phenolics (1051.3 ± 43.5 mg of gallic acid equivalents/100 g of FW) is present, among which anthocyanins predominated (796.0 ± 2.3 mg of cyanidin 3-O-glucoside equivalents/100 g FW). Twelve anthocyanins were separated and ten of them identified by HPLC–DAD–MS. The main anthocyanins were malvidin-3-O-galactoside (35%), delphinidin 3-O-galactoside (28%) and petunidin 3-O-galactoside (19%). Other polyphenols identified included: flavonols, flavan-3-ols (catechin and proantocyanidin dimers) and hydroxycinnamoyl derivatives. The antioxidant activity of CF was 40% higher than that found in common berries, which were simultaneously analyzed. The high content of anthocyanins in CF and its peculiar anthocyanin profile make this under-utilized fruit a promising source of pigments and phenolic nutraceuticals.  相似文献

Accumulation of histamine, trimethylamine (TMA), and total volatile base nitrogen (TVB-N), as well as microbial population incidence in Indian anchovy (Stolephorus indicus) during storage in ice and at 15 and 35 °C were investigated. Histamine was as low as 1.9 mg/100 g in 15 days at ice storage, but it increased to 19.0 mg/100 g after 32 h at 15 °C. Histamine rapidly increased to 25.4 mg/100 g when stored at 35 °C for 8 h. TVB-N and TMA began to sharply increase after 11 days in ice storage, but abruptly increased after 16 and 8 h of storage at 15 and 35 °C, respectively. A high number of Enterobacteriaceae (1010–1011 cfu/g) was detected and shown to be the dominant group of microbial flora during spoilage of Indian anchovy at both 15 and 35 °C. A total of 153 bacterial strains were selected from the prescreening step using various selective media. Only 75.8% of these selected isolates showed a positive reaction in Niven's differential medium, and 27.6% of the positive isolates were true histamine formers when confirmed by the enzymatic method. Prolific histamine formers were identified as Morganella morganii, Proteus vulgaris, and Enterobacter aerogenes, and produced high histamine content of 104.1–203.0 mg/100 ml. Optimum growth and histamine production of selected strains of these three species was at 35 °C in histamine evaluation broth (HEB) containing 0.5% NaCl, pH 5. E. aerogenes produced the highest histamine of 500 mg/100 ml at the optimum condition. All studied strains did not produce histamine at ⩾10% NaCl.  相似文献

The distribution of phenolic acids (free and bound), proanthocyanidins, and lignans in defatted triticale bran and straw was determined. For comparison, wheat, rye and oat brans as well as triticale flakes and leaves were also assayed. Most phenolic acids were present in the bound form (89–98%), and released under alkaline extraction conditions. The content of phenolic acids ranged from 65.2 to 252.5 mg/100 g in samples in which ferulic acid predominanted. Triticale straw was the richest source of proanthocyanidins, containing 862.5 mg/100 g (catechin equivalents) of tissue. Triticale straw contained 0.27 mg/100 g of lignan secoisolariciresinol diglucoside (SDG), whereas the bran had only 0.01 mg/100 g. The oxygen radical absorbance capacity (ORAC, μM Trolox equivalents/g defatted material) showed that antioxidant activity of bound phenolics was higher than those of free phenolics. This is the first report on phenolic acids, proanthocyanidin, and lignans content of Canadian triticale by-products, indicating that they may have the potential for use as nutraceuticals and/or functional food ingredients.  相似文献

Corchorus olitorius leaf is consumed in various parts of the world as leafy vegetable and folk remedy for the management of some degenerative diseases with dearth of information on its biochemical rationale. Therefore, this study sought to characterize the inhibitory action of polyphenol-rich extracts (free and bound) of C. olitorius on α-amylase, α-glucosidase and angiotensin I converting enzyme (ACE), as well as to identify the phenolic compound responsible for these activities. Our findings revealed that the extracts inhibited α-amylase and α-glucosidase (12.5–50.0 μg/mL), and ACE (10.0–50.0 μg/mL) in dose-dependently with free extracts having significantly (P < 0.05) higher α-amylase (17.5 μg/mL), α-glucosidase (11.4 μg/mL) and ACE (15.7 μg/mL) inhibitory activities as revealed by the IC50. Reversed-phase HPLC analysis of the extracts revealed chlorogenic acid (7.5 mg/100 g) and isorhamnetin (51.1 mg/100 g) as the main phenolics in the free extract and caffeic acid (58.1 mg/100 g) in the bound extract. Therefore, the enzyme inhibitory activity of C. olitorius extracts may be attributed to the presence of caffeic acid, chlorogenic acid and isorhamnetin, thus justifying its use in folklore for the management of diabetes and hypertension.  相似文献

Anthocyanins are ubiquitous plant pigments. They are hydrophilic, and have high tinctorial value hence, used as natural food colorant. The main aim of this study was characterization of Santalum album L. berries for its pigment content, nutritionally important phytoconstituents and functional attributes. Major pigment identified was cyanidin-3-glucoside (0.21% FW) as confirmed by spectral characteristics including LC–MS. Nutrients such as total carbohydrates (8.5), proteins (5.8), free amino acids (0.8 g), oil (1.5 g), ascorbic acid (1.5 μg), tocopherols (0.3 mg) and niacin (5.2 mg) per 100 g berries were determined along with total soluble solids (13.4°Brix) and phenols (3.1 mg GAE/g). Reducing power and DPPH· scavenging assays showed highest activity in methanol extract, which also efficiently protected bleaching of β-carotene (EC50 285 μg/mL) in β-carotene–linoleate model. Pigment rich crude extract was not toxic to HepG2 cells during 24 h exposure, whereas cyanidin-3-glucoside was cytotoxic (IC50 0.1 μg/mL).  相似文献

Seeds coat of four lima beans (Phaseolus lunatus) varieties were subjected to standard analytical techniques in order to evaluate proximate, amino acid, mineral composition and protein solubility. The proximate analysis indicates moisture content in the range of (3.17–4.96%), crude protein (14.53–15.93%), fat (0.62–0.74%), crude fibre (32.59–33.59%), ash (2.43–3.88%), and carbohydrate (47.11–48.62%) on dry weight basis. The most abundant mineral element in the studied seeds coat was potassium 361.20–459.51 mg/100 g followed by sodium 71.27–102.51 mg/100 g and magnesium 83.20–95.23 mg/100 g. Calcium, phosphorus, iron and zinc were also present in significant amount while lead, cobalt and nickel were not detected. The amino acid profile demonstrates nutritionally acceptable results for the samples due to the high levels of essential amino acids in g/100 g protein such as lysine 6.42–7.41, leucine 7.51–8.37, arginine 4.42–7.02 and phenylalanine 5.01–5.49; when compared with FAO/WHO standard; with essential amino acids (TEAA) 49.47–51.07 g/100 g protein. Glutamic and aspartic acid were the most abundant amino acid in all the samples. The protein solubility profiles showed minimum values at pH 4 and more than 70% soluble at pH 10. The study has shown the potentials of lima bean seeds coat, an agro by-products in the development of new functional ingredients for food enrichment to provide an economic alternative raw material for food industries.  相似文献

Fatty acid composition and proximate analysis of eight terricolous insects namely dung beetle (Copris nevinsoni Waterhouse), short tailed cricket (Brachytrupes portentosus Lichtenstein), june beetle (Holotrichia sp.), queen caste (Oecophylla smaragdina Fabricius), weaver ant (Oecophylla smaragdina Fabricius), termite (Termes sp.), longan stink bug (Tessaratoma papillosa), cicada (Meimuna opalifera Walker) were determined. Polyunsaturated fatty acid (PUFA) was the most predominant fatty acid found in all analyzed insects, followed by saturated fatty acid (SFA) and monounsaturated fatty acid (MUFA). The concentration of total PUFA ranged from 213 in cicada to 1514 mg/100 g in dung beetle. There were five PUFAs; 18:3n ? 3, 20:3n ? 6, 20:4n ? 6, 20:5n ? 3 and 22:6n ? 3 detected in the insect samples. Two fatty acids, 20:3n ? 6, and 20:4n ? 6 were found in all analyzed insects, while, 20:5n ? 3 was only detected in dung beetle which lives in herbivore faeces, at concentration of 300 mg/100 g accounted for 13% of total fatty acid. The SFA content in ranged from 234 in termite to 733 mg/100 g in dung beetle. Only one MUFA, 18:1 was detected in the all analyzed insects. The protein content of insects ranged from 37% in queen caste to 54% in dung beetle. The highest amount of carbohydrate (16%) was found in cicada. Lipid contents ranged from 5% in june beetle to 37% in queen caste, while ash contents of edible insects ranged from 2% in queen caste to 12% in june beetle. We suggest that the insect could be considered as a good nutritional food source especially for fat and protein.  相似文献

This study aimed to evaluate the effect of adding winter savory (Satureja montana L.) essential oil (EO) at concentrations of 7.80, 15.60 and 31.25 μl/g on color and lipid oxidation (TBARS) in mortadella-type sausages formulated with different sodium nitrite (NaNO2) levels (0, 100 and 200 mg/kg) and stored at 25 °C for 30 days. The EO was extracted by hydrodistillation and analyzed by gas chromatography–mass spectrometry (GC–MS). Twenty-six chemical compounds were identified; the most prominent of which were thymol (28.99 g/100 g), p-cymene (12.00 g/100 g), linalool (11.00 g/100 g) and carvacrol (10.71 g/100 g). Among the nitrite levels tested, a concentration of 100 mg/kg of sodium nitrite appeared to be sufficient for the formation of the characteristic red color. The use of EO at concentrations exceeding 15.60 μl/g adversely affected the color of the product by reducing redness (a1) (p  0.05) and increasing yellowness (b1 h1). The EO antioxidant activity was confirmed by β-carotene bleaching method and DPPH assay. Reduced values of thiobarbituric acid reactive substances (TBARS) (p  0.05) were observed in mortadellas formulated with the lowest concentrations of EO without added nitrite. This significant effect on lipid oxidation was also observed in samples containing EO and reduced amounts of sodium nitrite. The results suggest possible benefits from the combined use of EOs and minimal amounts of sodium nitrite in cured meat products.  相似文献

The meat lipid fraction of psoas major muscle from 20 adult (10 males and 10 females) feral Iberian red deer (Cervus elaphus hispanicus) was characterized by quantification of total fat, total cholesterol, vitamin E and fatty acid (FA) composition, including detailed trans octadecenoate isomers and conjugated linoleic acid (CLA) isomeric profile.The total lipid content revealed a very lean meat (0.99 g/100 g of meat), with total cholesterol content averaging 55.6 mg/100 g of muscle. The FA profile displayed a very high PUFA level for ruminant meat (30.2 g/100 g FA). The 18:2 cis-9,trans-11 content was fairly low (0.26% of total FA) compared with other ruminant meats.The comparison of stags and hinds showed more similarities than differences. Nevertheless, hinds displayed superior contents of α-tocopherol and trans MUFA and a better n−6/n−3 ratio than stags.  相似文献

Conjugated linoleic acid (CLA) concentrations, fatty acid composition and cholesterol content of some Turkish dairy products (butter, processed cheese, Kaymak and cream) were determined by capillary gas chromatography. The CLA and cholesterol content of some Turkish dairy products ranged from 1.50–5.60 mg/g fat and 148.30–369.04 mg/g fat, respectively. The most abundant saturated fatty acids in the dairy products investigated were palmitic acid (C16:0), stearic acid (C18:0) and myristic acid (C14:0). In all dairy products, C18:1 cis-9, 12 unsaturated fatty acid content (23.12–32.78 g/100 g) was considerably higher than others. In all samples studied, there was no correlation between CLA content of products and the linoleic acid content, or any other unsaturated fatty acid. A positive correlation between cholesterol and fat content of dairy products was observed.  相似文献

Citharexylum solanaceum is a native fruit from Brazil, which both bioactive compounds and antioxidant potential were not yet investigated. Thus, the freeze-dried extracts of seed and pulp + skin of C. solanaceum fruits were obtained after solid-liquid extraction with ethanol and their bioactive compounds composition, namely phenolic compounds and carotenoids, were determined. The antioxidant capacity of both extracts against physiologically relevant reactive oxygen species (ROS) and reactive nitrogen species (RNS) was further investigated. Both C. solanaceum extracts showed high contents of phenolic compounds; however, pulp + skin extract presented 2.4-times more phenolic compounds (33.54 mg/g) than the seed extract (14.09 mg/g). Verbascoside (phenylpropanoid) was the major compound identified in both extracts (11–25 mg/g). Regarding the carotenoid composition, all-trans-lutein (14–42 μg/g) and all-trans-β-carotene (13–44 μg/g) were the major compounds in both extracts. The high content of phenolic compounds and carotenoids in pulp + skin extract might explain its higher scavenging capacity against all the ROS/RNS as compared to seed extract. In general, both extracts showed better scavenging capacity for the RNS than for the ROS.
