本文研究了面片的热风干燥(Hotairdrying,HAD)、真空冷冻干燥(freeze-drying,FD)、微波干燥(microwavedry,MD)、微波真空干燥(Microwave vacuum drying,MVD)和热风-微波联合干燥(hot air followed by microwave drying,HAD+MD)五种不同干燥方法及其对面片物理特性和微观结构的影响。通过以上研究表明:不同干燥速率为MVD>MD>HAD+MD>HAD>FD;面片复水率为FD>MVD>MD>HAD+MD>HAD;面片总色差值FD面片和MVD面片最低并无差异性显著(p>0.05),HAD总色差值最高,为19.56,面片色泽较差。HAD+MD和MD面片总色差值无差异性显著(p>0.05)。面片复水4 min后质构测定发现MD、MVD组延展性最好,分别为81.58 g/sec、72.58 g/sec,FD组剪切力各指标都表现较差,HAD组硬度和咀嚼性较大,分别为1652.88 g、5294.77g.sec。面片扫描电镜观察中,FD面片和MVD面片均观察到均匀密集的孔隙结构,MD面片和HAD+MD面片有明显不均匀孔隙结构,而HAD面片几乎观察不到孔隙结构。各干燥方式对面片的感官评价中FD面片总体评价最佳,MVD、MD面片其次,HAD+MD,HAD面片感官评分最差。综合看来,MVD干燥可以作为开发新疆汤饭产品中面片的适合脱水方式。  相似文献

The effect of low‐temperature blanching and drying processes on the ultrastructural and physical properties of Anaheim chilli pepper was studied and optimum conditions to provide a final product with maximum firmness were determined. Lots of Anaheim pepper were blanched in water for 4 min at 48, 55, 65, 75 and 82 °C and maintained for hold times of 35, 45, 60, 75 and 85 min, blanched again for 4 min at 96 °C and dehydrated at 53, 60, 70, 80 and 87 °C. After treatment the samples were rehydrated in water at 30 °C. Rehydration ratio, texture and structural changes were evaluated. Optimisation used a second‐order rotatable central composite design. Texture and rehydration ratio were affected by blanching temperature and the interaction of blanching temperature with hold time (p ≤ 0.05); drying temperature did not show a significant effect. The best results, ie those which gave greatest firmness, were obtained by blanching at 64 °C for 4 min, holding for 55 min after blanching, followed by a second blanching at 96 °C for 4 min and then drying at 70 °C. Evaluation of the rehydrated dried pepper by microscopy showed that low‐temperature blanching close to the optimum conditions provided a protective effect in maintaining cell wall integrity. The effect of microwave power on colour change kinetics of bamboo shoot slices was investigated during microwave drying. Colour changes were quantified by tri‐stimulus Hunter L (whiteness/darkness), a (redness/greenness), and b (yellowness/blueness) system. These values were also used for calculation of total colour change (ΔE), chroma, hue angle, and browning index (BI). Microwave drying as expected changed colour parameters because of browning. The values of L and b decreased, while values of a and ΔE increased during drying. Mathematical modelling of colour change kinetics indicated that L, b, chroma and BI could be defined using a first‐order kinetic model, while a, ΔE and hue angle could be defined using a zero‐order kinetic model. Considering together colour deterioration and quality of dried bamboo shoot slices at higher power reveals the need of process standardisation for getting good quality product.  相似文献

Freeze-drying (FD) and three different combinations of drying methods: freeze-drying combined with hot air drying (FD?+?AD), freeze-drying combined with vacuum drying (FD?+?VD) and freeze-drying combined with microwave vacuum drying (FD?+?MVD) were used to dry button mushroom slices. A comprehensive analysis of dried products was performed on their colour, texture, nutrient retention, microstructure and energy consumption. The results showed that, under conditions of 38 % moisture content changing point, most of the parameters including L* values, a* values, average density and hardness of FD?+?VD and FD?+?MVD samples had no remarkable changes (p?>?0.05) compared with FD samples. However, only FD?+?MVD method can reduce drying time by 35.63 % in comparison of FD method, although all the combination drying methods can reduce the energy consumption. Moreover, FD?+?VD and FD?+?MVD products were better than FD?+?AD products in nutrient retention except that content of vitamin C was comparatively lower during FD?+?MVD process. In conclusion, the FD?+?MVD method has advantages in terms of efficiency and energy saving and could be preferred to produce high-quality products.  相似文献

This study is to investigate the effects of hot air drying (HD) at 60–80 °C (HD-60, HD-70 and HD-80), microwave pretreatment combined with HD (MHD), ultrasound pretreatment combined with HD (UHD) and vacuum freeze drying (FD) on the quality of Boletus aereus slices. Key characteristics, including colour, free amino acids, microstructure, volatile aroma components, phenolic profile and antioxidant activity, were studied. Amongst these drying methods, FD was the best way to preserve colour and volatiles of Boletus aereus slices. Fifteen amino acids were detected in Boletus aereus slices, and HD-60 showed a higher content of total amino acids than other drying regimes. Two phenolic acids were identified in Boletus aereus slices, namely, protocatechuic acid and p-hydroxybenzoic acid. MHD presented the highest content of phenolic compounds, followed by FD. Antioxidant capacity was positively correlated with phenolic compounds of Boletus aereus slices. Moreover, the cell structure of Boletus aereus slices was damaged after drying, and FD had a more porous structure than other drying methods. These results will be beneficial to the further industrial production of Boletus aereus slices.  相似文献

In this study, the drying characteristics, colour, oxygen reactive antioxidant capacity (ORAC) and beta‐carotene contents of two apricot varieties dried at different temperatures were compared. The hot air drying of apricot slices for both varieties consisted of a constant rate period (CRP) and two of falling rate periods (FRP). The CRP drying rate and the first and second FRP drying coefficients increased with drying temperature for both apricot varieties. The first and second FRP of both apricot varieties gave activation energies of 23.5–28.7 and 25.6–29.3 kJ mole?1, respectively. The colour values (L*, a* and b*) of both dried apricot varieties decreased with increasing temperature, while the total colour change of both dried apricot varieties increased with temperature. The chroma, hue angle and browning index values of both dried apricot varieties decreased with increasing temperature, and the hydrophilic ORAC and beta‐carotene contents increased with drying temperature.  相似文献

Three different combined microwave (MW) drying methods were compared, namely microwave‐assisted vacuum drying (MWVD), microwave‐assisted freeze drying (MWFD), microwave‐enhanced spouted bed drying (MWSD), in terms of drying rate, drying uniformity, product colour, rehydration ratio, retention of βcarotene and vitamin C, and energy consumption. The drying rate of MWVD and MWSD were much faster than that of MWFD. The largest drying rate was obtained in MWSD with 3.5 W g?1. In general, the colour of MWSD products was very uniform. Rehydration ratio of MWFD carrot pieces was almost the same as the freeze‐dried (FD) products and better than MWVD and MWSD products. In addition, the highest retention of carotene and vitamin C was observed in MWFD carrot pieces. No significant differences were observed in carotene and vitamin C between MWVD and MWSD products. However, the energy consumption in MWFD was the highest.  相似文献

为获得复水性较好的干香菇,研究了热风干燥(hot-air drying,HAD)、中短波红外干燥(infrared radiation drying,IRD)和真空冷冻干燥(freeze drying,FD)香菇的复水特性及复水后的综合品质。结果表明:FD香菇具有均匀的多孔结构,使得干香菇的复水速率明显高于HAD香菇和IRD香菇,复水60?min即可达最大复水体积比(9.22),且复水香菇的外观与鲜样接近。同时,复水后FD香菇的剪切力(1?352.99?g)和咀嚼性(232.54?g)最小,表明其质地柔软、易被切分。此外,FD复水香菇和其他两种复水香菇具有相似的电子鼻响应值曲线,表明其香气无差异。复水时FD香菇的蛋白质和VB2的溶出率最高,分别为0.42?mg/g和0.71×10-3?mg/g,说明FD复水香菇富含营养成分,且加工时较易溶出。综上,FD可作为一种较好的干燥方式来制备复水性较好的高品质香菇。  相似文献

Chili flesh pretreated with or without osmotic dehydration (OD) was dried in the hot‐air drying (AD) oven at 50–80 °C or in the microwave drying (MD) oven at 60–180 W. Results showed that the samples osmotically treated in mixed solution (10% salt + 50% sucrose) had the best dehydration effect as compared with single salt or sugar solutions. During the drying process, osmotically treated samples had one falling‐rate period and their effective moisture diffusivities (Deff) showed a rapidly linear increase with the decrease in moisture content, while directly drying samples showed a three‐phase falling‐rate period and their Deff increased gradually at the initial period and then rapidly at the final period. When the moisture content decreased, the activation energy increased gradually; however, for AD after OD, it decreased. Among all the processes, MD at 60 W after OD presented the largest vitamin C retention rate and the best colour difference, needing less drying time.  相似文献

BACKGROUND: In this study the effects of pulsed electric field (PEF) pretreatment were evaluated during drying and rehydration of carrots. Carrots pretreated with an electric field intensity of 1 kV cm?1 (capacitance 0.5 µF, 20 pulses) or 1.5 kV cm?1 (capacitance 1 µF, 20 pulses) as well as blanched (100 °C, 3 min) carrots were used for the study. Following pretreatment, samples were oven dried at 70 °C and then rehydrated in distilled water (1:30 w/v) at room temperature (24 ± 1 °C). RESULTS: PEF pretreatment increased the drying rate of carrots. However, the rehydration rate of PEF‐pretreated carrots was lower than that of blanched carrots. There were no colour differences between PEF‐pretreated and blanched carrots before drying and after rehydration. In terms of texture, PEF‐pretreated carrots were firmer than blanched carrots. PEF pretreatment reduced the activity of peroxidase by 30–50%, while blanching completely inactivated the enzyme (>95%). CONCLUSIONS: Overall, the results suggest that PEF could be an effective pretreatment during drying and rehydration of carrots. Copyright © 2009 Society of Chemical Industry  相似文献

Purple‐fleshed potatoes (PFP) and red‐fleshed potatoes (RFP) were dried using hot air. The hardness, anthocyanin content and colour in PFP and RFP during drying were evaluated at 60, 70 and 80 °C. The hardness was characterised by a softening stage in the early drying period, followed by a hardening stage. The times to reach at the transition were 420, 300 and 240 min at 60, 70 and 80 °C, respectively, for PFP, and 480, 360 and 240 min for RFP. However, the moisture content of both PFP and RFP at the transition time was identical at 0.3 (d.b.). The two stages of hardness changes were well described by combining two modified first‐order kinetics models. The activation energy (Ea) for the degradation of anthocyanin in PFP and RFP was 25.12 and 28.43 kJ mol?1, respectively. The Ea values demonstrated that the thermal sensitivity of PFP was higher than that of RFP.  相似文献

In this study, hot air drying (HAD), hot air-/microwave-assisted vacuum drying (HAMAVD) and hot air-assisted microwave drying (HAAMD) were applied to lactic acid-fermented Pyracantha fortuneana fruit (PFF). Influences of different drying methods on fluidity and dispersion, microstructure, hygroscopicity, rehydration, colour change, sourness and energy consumption were investigated. Results showed that HAAMD had the best overall performance on the quality of the PFF powder. HAAMD PFF powder had higher expansion force (1.65 mL g−1) and water-holding capacity (2.68 g g−1), lower degree of compression (9.09%) and energy consumption, smaller colour change and better taste. Organic acids (mainly malic acids) of all drying powders decreased, but HAAMD and HAMAVD could better improve the acidity characteristics of PFF powders, which may be related to the drying time and the temperature change processes. Consequently, this study can provide references for the utilisation of fresh PFF, the design and commercialisation of PFF-related products.  相似文献

Vacuum steam pulsed blanching (VSPB) was employed as a novel blanching technology on Cornus officinalis to soften the tissue for subsequent coring and dehydration. The current work aims to explore its effect on mass transfer behavior, PPO inactivation, drying characteristics, physicochemical properties, antioxidant capacity, and microstructure of C. officinalis. Results showed that VSPB increased water loss, decreased solid gain, and increased weight reduction with increased blanching cycles. Besides, VSPB significantly changed physical properties and extensively reduced drying time which was attributed to the cell wall components dissolving and cell turgor pressure decreasing, also verified by observing microstructure alteration. PPO was completely denatured after blanching in 6 cycles, but phenolic compounds were still diffused or degraded. Notably, the content of flavonoids and antioxidant capacity significantly increased compared to fresh samples probably due to increased extractability caused by the disrupting cell structure. Besides, the carotenoids and ascorbic acid could be well preserved.  相似文献

以麻竹笋为实验原料,研究麻竹笋罐头在常温(25 ℃)和低温(4 ℃)贮藏过程中质构、果胶和色泽的变化,并探讨麻竹笋罐头的硬度与果胶变化的相关性。结果表明:麻竹笋罐头在贮藏过程中硬度、原果胶和水溶性果胶含量逐渐下降,贮藏120 d后,常温贮藏和低温贮藏条件下麻竹笋的硬度分别下降39.5%和27.1%,原果胶含量分别下降66.4%和62.8%,水溶性果胶含量分别下降68.1%和75.7%。各果胶组分与硬度之间呈现较好的相关性,而原果胶与硬度之间的相关性高于水溶性果胶与硬度之间的相关性。麻竹笋罐头贮藏过程中亮度值L*和红绿值a*逐渐减小,黄蓝值b*逐渐增加;常温和低温分别贮藏30 d和70 d时,总色差ΔE>2。  相似文献

The objective of this work was to characterise the foams of purple Brazilian cherry (Eugenia uniflora L.) pulp made with different additives, aiming at foam‐mat drying. Characterisation was made through analyses of moisture, pH, acidity, soluble solids, density, water activity, colour, total and reducing sugars, protein and ashes. Drying was done at 55 °C for 2 h. Dried Brazilian cherry juice powder was rehydrated for acceptance test. It is concluded that the physicochemical characterisation of fresh Brazilian cherry pulp was satisfactory and was in accordance with the Brazilian standards for agro‐industrial products. Albumin was the best foaming agent that produced a good‐quality powder in a short period. The foam‐mat drying of Brazilian cherry pulp using albumin and Superliga® (Duas Rodas Industrial ltda, Santa Catarina, Brazil) as foaming agents produced a powder with good physicochemical properties and sensory quality and most preferred juice.  相似文献

Influences of pretreatment methods (washing, blanching, soaking in ethanol), drying methods (hot air‐drying, infrared‐drying, microwave‐drying) and drying temperature on selected characteristics of dietary fibre powder from orange pulp residues were investigated. Pretreatments improved the hydration properties, oil‐holding capacity and glucose dialysis retardation index, but led to losses of fibres, decreased α‐amylase inhibitory activity and aflatoxin B1 adsorption capacity. Hydration properties, oil‐holding capacity and glucose uptake depended on the structure and porosity of the fibre, while the ability to inhibit α‐amylase and AFB1 adsorption depended more on the content and molecular fingerprinting of the fibre. Drying condition did not significantly affect functional properties of the fibre, except for the ability to uptake glucose, inhibit α‐amylase and adsorb AFB1 ( 0.05). Hot air‐drying at 60 °C resulted in fibre with the highest ability to decrease the rate of glucose and AFB1 adsorption.  相似文献

In order to exploring a feasible pretreatment technology of red pepper, an emerging thermal pretreatment technology namely high-humidity hot air impingement blanching (HHAIB) was employed and its effect on drying behavior and related mechanisms were explored through analyzing the ultrastructure, the contents and composition of cell wall pectins, water state of red pepper during the blanching process under blanching temperature of 110 °C and relative humidity of 35%–40% for various exposure times ranging from 0 to 150 s. Results indicated HHAIB can extensively reduce the drying time from 11 h for the un-blanched samples to 8 h for the samples blanched for 90 s. In addition, HHAIB reduced the products' hardness by 8.19%–47.91% compared to the untreated samples. The cellular structure and water state experienced a significant alternation with the increasing blanching time. The content of water-soluble pectin (WSP) increased, while the contents of chelate-soluble pectin (CSP) and sodium‑carbonate-soluble pectin (NSP) decreased during the blanching process. Overall, HHAIB treatment is a promising blanching technology for red pepper as it can accelerate the drying process through softening tissue and altering the ultrastructure and moisture binding state.Industrial practiceDrying is one of the most frequently used methods for red pepper preservation as it can effectively reduce the moisture content so as to hinder the growth and reproduction of microorganisms and the moisture-mediated deteriorative reactions. While the existence of waxy hydrophobic layer covered the surface of red pepper results in long drying time and poor products' quality. In industrial practice chemical dipping is often used to remove the wax layer and enhance the drying rate of red pepper. However, the chemical residues can trigger food safety issues and how to deal with the highly corrosive chemical dipping solution is also a challenge. Therefore, it is very tempting for industry to explore innovative pretreatment for red pepper drying. The current work indicated that HHAIB is a promising alternative technology to replace the chemical dipping method as it extensively enhances the drying process of red pepper.  相似文献

Durian cv. Monthong with two ripening stages (unripe and fully ripe) was subjected to microwave vacuum drying (MWD) at 5.49 W g?1 and hot air drying (HAD) at 60 °C. With an increase in ripening degree, the starch content was significantly (P ≤ 0.05) decreased from 40.08–40.42% to 9.44–11.76%. X‐ray diffraction indicated that the crystalline pattern was changed from starch to sucrose. The starch granule morphology of durian flour was conserved for both drying conditions. Peak gelatinisation temperatures of MWD and HAD flours were increased significantly (P ≤ 0.05) from 56.71–57.32 to 60.71–61.23 °C. Using different drying methods, MWD flour had less a*‐value (P ≤ 0.05) than HAD flour. The peak viscosity and trough of the HAD unripe durian flour (5.92 RVU and 3.45 RVU, respectively) were significantly (P ≤ 0.05) lower than those of the MWD unripe durian flour (34.32 RVU and 11.57 RVU, respectively).  相似文献

The effect of ozonation on the rheological and colour characteristics of guar, carboxyl methyl cellulose (CMC), and pectin dispersions was investigated. Guar 1%, CMC 1% and pectin 2% (w/v) dispersions were ozonated at varying ozone concentrations of 2.4%, 4.0%, 5.6% and 7.8% (w/w) for 3, 5, 7 and 10 min processing times at 20 ± 1.0 °C. Flow and dynamic rheological properties together with Hunter colour parameters (L*, a*, b*) were measured for control and treated samples. Significant differences were observed in the rheological characteristics and colour of all ozonated hydrocolloid dispersion studied. No recovery was observed in the structure breakdown after a 24 h storage period. This study indicates that ozonation has a significant effect on both the rheology and colour of hydrocolloid dispersions and that due attention should be given before incorporating these hydrocolloids in food formulations which are subsequently ozonated in food processing and preservation processes.  相似文献

Restructured fish slices from silver carp (Hypophthalmichthys molitrix) were dried using air drying (AD), freeze drying (FD), and vacuum drying (VD) (4 mm thickness) and microwave-vacuum drying (MVD) (2, 4, 6, and 8 mm thickness). Quality attributes of the dried products were compared in terms of their rehydrated characteristics, change in dimensions, color, texture, sensory values before and after rehydration, and change in volatile compounds. AD, FD, and VD resulted in the different levels of shrinkage while MVD caused some expansion in diameter and thickness in the 4-, 6-, and 8-mm-thickness samples. Rehydration caused significant swelling in AD, FD, and VD products (p?<?0.05) but insignificant change in MVD products (p?>?0.05). Drying methods significantly affected the color and texture of both dried and rehydrated products (p?<?0.05), but slice thickness had no significant effect on the color in MVD products (p?>?0.05). MVD products rehydrated faster and had higher rehydration ratio as well as lower water hold capacity, hardness, springiness, cohesiveness, and chewiness than others. In sensory evaluation, MVD products alone exhibited acceptable crispness and favorable odor. The rehydrated dried products were acceptable by the sensory panelists and were preferred in the order: FD, VD, AD, MVD. Gas chromatography-mass spectrometry revealed that drying significantly decreased the n-alkanals and 1-octen-3-ol content (p?<?0.05) and produced new aldehydes including 2-methyl-propanal, 3-methyl-butanal, and furfural in MVD products. This study demonstrated that drying restructured fish meat can be potentially used to develop the new dried fish products using optimal drying conditions.  相似文献
