The physico-chemical characteristics, proteolysis (classical nitrogen fractions, caseins and their degradation products and free amino acids), and lipolysis (fat acidity and free fatty acids) were studied throughout the ripening of three batches of Babia-Laciana cheese, a Spanish traditional variety made from raw goats’ milk. The main compositional characteristics of this cheese at the end of the ripening are its high content of total solids (TS) (78.0±2.4 g 100 g−1 of cheese) and fat (61.1±1.2 g 100 g−1 of TS), the presence of residual lactose (1.6±0.8 g 100 g−1 of TS) and its low content of sodium chloride (1.1±0.7 g 100 g−1 of TS) and ash (2.8±0.5 g 100 g−1 of TS). Its pH values (4.44±0.72) are extraordinarily low. The evolution and final values of the different nitrogen fractions show that this cheese undergoes a very slight proteolysis, a fact which was corroborated when the caseins and their degradation products were quantified: β-casein did not undergo any modification throughout ripening, while only 21% of the αs-caseins were degraded. Free amino acids content increased by a factor of about 7 throughout ripening, resulting in a high content of γ-amino butyric acid and a low content of glutamic acid at the end of the process. Fat acidity increased very slightly, approximately 4.5 times, during ripening, reaching final values of 3.5±2.2 mg KOH g−1 of fat. The total free fatty acids content showed a similar evolution to fat acidity. At the end of the ripening process, the main free fatty acid was C18:1, followed by C16 and C10.  相似文献

This study investigated the effect of fat fractionation on the conjugated linoleic acid (cis-9, trans-11-C18 : 2) content of bovine milk fat. Anhydrous milk fat was fractionated into hard and soft fractions using controlled cooling and agitation. Fractionation of milk fat pre-melted at 60°C using a temperature programme of 33–10°C and a cooling rate of 0.58°C h−1 yielded a soft fraction containing 63.2% more conjugated linoleic acid (2.22 g 100 g−1 FAME), which was also enriched in polyunsaturated fatty acids and vaccenic acid (trans-11-C18 : 1) compared with the parent fat. Agitation following fractionation was found to have a negative effect on the conjugated linoleic acid content of the soft fraction. Refractionation of the soft fraction did not increase the yield of conjugated linoleic acid. The conjugated linoleic acid and trans fatty acid content of 26 selected food products ranging in milk fat content from 0 to 100% is reported. Conjugated linoleic acid concentrations ranged from 0 to 16.2 mg g−1 fat and were generally lower than the trans fatty acid content which ranged from 0 to 155.7 mg g−1 fat. Spreads containing vegetable oils contained higher trans fatty acid and lower conjugated linoleic acid contents than milk fat-containing products. This study highlights that a milk fat fraction enriched in conjugated linoleic acid may be achieved by dry fractionation.  相似文献

Opportunities for the production of milk and dairy products enriched with cis-9, trans-11 conjugated linoleic acid (CLA) were investigated. Eighteen mid-lactation cows were used in a continuous-design for 7 weeks. During the first week, cows received grass silage ad libitum supplemented with 10 kg per day of a cereal-based concentrate (control) that was replaced with a concentrate containing 50 g kg−1 of rapeseed oil (RO). Changes in milk fatty acid composition were monitored on a weekly basis and milk produced was used to manufacture Edam cheese and butter. Inclusion of RO in the concentrate supplement increased the mean levels of trans-octadecanoic, monounsaturated, CLA and polyunsaturated fatty acid in the milk fat from 1.6, 25.7, 0.46 and 2.8 to 4.3, 35.3, 1.02 and 3.9 g 100 g−1 total fatty acids, respectively. In contrast, the mean level of saturated fatty acids decreased from 71.4 to 60.7 g  100 g−1 total fatty acids. Changes in milk fatty acid composition due to RO occurred within 7 days, with responses reaching a plateau after 21 days. Furthermore, the CLA concentrations in the milk fat from individual cows ranged between 0.37 and 0.65 and 0.43 and 2.06 g 100 g−1 total fatty acids for the control and RO diet, respectively. CLA enriched milk was used successfully to manufacture of Edam cheese and butter with softer textures but with acceptable organoleptic and storage properties. Processing milk into butter or cheese had no effect on the CLA concentrations indicating that enrichment of dairy products is dependent on the content in raw milk fat.  相似文献

Different brands of sardines canned in soybean oil and tomato sauce, that are commercialized in Brazil, had their proximate composition, cholesterol content and fatty acids composition analyzed. Protein contents were equivalent to the values found for sardines in natura, ranging from 19.8 to 24.4%. High variations of the total lipids content (5.30–16.8%) were verified; the highest levels were found for sardines canned in soybean oil. The cholesterol content ranged from 50.4 to 65.1 mg/100 g. The highest levels of essential C18:2n  6 and C18:3n  3 fatty acids were found in sardines canned in soybean oil. The EPA (C20:5n  3) and DHA (C22:6n  3) concentrations ranged from 5.39 to 15.1% and from 3.89% to 9.51%, respectively, and the highest levels were observed in sardines canned in tomato sauce.  相似文献

Coconut milk was extracted from grated coconut meat with addition of water by a hydraulic press. This milk was mixed with emulsifiers (Gum Acacia and maltodextrin) at different ratios of emulsifier to fat (4, 2.75, and 1.5) and different maltodextrin (MD) to Gum Acacia (GA) ratio (0.67, 1.085, and 1.5). The emulsion was sonicated for different time durations (0.5–3.0 min). Particle size analysis of the sonicated coconut milk emulsion revealed that the number fraction of fat globules below 2 × 10−6 m increased as the emulsifier to fat ratio increased. However, at the highest ratio of emulsifier to fat this trend reversed even at higher sonication times. Similar slump in the increasing trend of globules below 2 × 10−6 m were observed at the highest value of ratio of MD to GA (1.5) studied. Modeling of particle size distribution by Rosin–Rambler–Sperling–Bennet relation was found to be a good tool for prediction of uniformity of distribution n and statistical average globule diameter M. The n values varied between 0.981 and 1.318 where as M values lied between 2.11 × 10−6 and 4.12 × 10−6 m. Linear regression fitting of n and M values as function of ratio of emulsifier to fat, ratio of MD to GA and the sonication time resulted in a good fit with relative deviation of 3.96% and 10.77%, respectively. These linear regression equations provided a suitable model to predict the sonication time required to achieve certain degree of size reduction with a relative deviation of 2.33%.  相似文献

The objective of our experiment was to evaluate the effects of prill size of a palmitic acid–enriched fatty acid supplement (PA; 85% C16:0) on feed intake, nutrient digestibility, and production responses of dairy cows. Twenty-four primiparous and multiparous Holstein cows were assigned based on parity and production level to replicated 4 × 4 Latin squares balanced for carryover effects with 21-d periods. Treatments were a control diet (no added PA), or 2.0% PA added as a small prill size (PA-SM; 284 ± 12.4 µm), a medium prill size (PA-MD; 325 ± 14.7 µm), or a large prill size (PA-LG; 600 ± 17.4 µm) supplement. Overall, PA treatments increased milk fat content (4.25 vs. 3.99%), milk fat yield (1.48 vs. 1.39 kg/d), 3.5% fat-corrected milk (39.2 vs. 37.7 kg/d), and improved feed efficiency (fat-corrected milk:dry matter intake; 1.51 vs. 1.42) compared with control. Compared with control, PA treatments did not affect dry matter intake, body weight, body condition score, or yields of milk, protein, and lactose. The PA treatments increased neutral detergent fiber digestibility (44.8 vs. 42.4%) and reduced the digestibility of 16-carbon fatty acids (72.3 vs. 79.1%) and total fatty acids (76.6 vs. 80.3%). Compared with control, PA treatments reduced the contents of de novo synthesized milk fatty acids (23.0 vs. 25.8 g/100 g of fatty acids) and preformed milk fatty acids (36.3 vs. 39.1 g/100 g of fatty acids), but did not affect their yields. In contrast, PA treatments increased the content (40.8 vs. 35.1 g/100 g of fatty acids) and yield (570 vs. 436 g/d) of 16-carbon milk fatty acids compared with control. The PA prill size had no effect on dry matter intake, yield of milk and milk components, or feed efficiency. However, PA-LG tended to increase milk fat content compared with PA-SM (4.28 vs. 4.22%), and it increased 16-carbon fatty acid digestibility compared with PA-MD (74.2 vs. 71.0%) and PA-SM (74.2 vs. 71.7%). Additionally, PA-LG increased total fatty acid digestibility compared with PA-MD (78.1 vs. 75.6%) and PA-SM (78.1 vs. 76.0%). Results demonstrate that PA increased milk fat content and yield, and feed efficiency. Reducing prill size decreased fatty acid digestibility, but it had no effect on animal performance under the dietary conditions and prill sizes evaluated.  相似文献

Although buffalo milk is the second most produced milk in the world, and of primary nutritional importance in various parts of the world, few studies have focused on the physicochemical properties of buffalo milk fat globules. This study is a comparative analysis of buffalo and cow milk fat globules. The larger size of buffalo fat globules, 5 vs. 3.5 μm, was related to the higher amount of fat in the buffalo milks: 73.4 ± 9.9 vs. 41.3 ± 3.7 g/kg for cow milk. Buffalo milks contained significantly lower amount of polar lipids expressed per gram of lipids (0.26% vs. 0.36%), but significantly higher amount of polar lipids per litre of milk (+26%). Buffalo and cow milk fat globule membranes contain the same classes of polar lipids; phosphatidylethanolamine, sphingomyelin (SM) and phosphatidylcholine (PC) being the main constituents. A significant higher percentage of PC and lower percentage of SM were found for buffalo milks. The fatty acid analysis revealed that saturated fatty acids, mainly palmitic acid, trans fatty acids, linolenic acid (ω3) and conjugated linolenic acid were higher in buffalo milk than in cow milk. Such results will contribute to the improvement of the quality of buffalo milk-based dairy products.  相似文献

The seeds of Telfairia occidentalis have been subjected to standard chemical analysis to evaluate their properties. Proximate analysis indicated a low moisture content (6.30 ± 0.50%). The ash content was slightly higher than the range recommended for compounding of animal feed (3.44 ± 0.06%). The carbohydrate content was low (16.5 ± 0.12%). Starch, however, constituted the dominant carbohydrate (62.5 ± 0.48), while three sugars, glucose, fructose and sucrose were detected in the seed. The crude protein in the seed was high (16.0 ± 0.03%), a value which compared favourably with high protein seeds and nuts. In all, 16 amino acids were detected in the protein. Glutamic acid showed the highest concentration (16.4 g 100 g−1), while lysine showed the lowest (2.6 g 100 g−1). The brown oil extracted from the seed (yield 48.6 ± 0.94) had the following physicochemical properties; acid value, 3.05 ± 0.80 g, saponification value 166 ± 1.34 mg/KOH g−1, free fatty acids, 0.3 g and peroxide value 3.02 ± 0.07 mg Eq kg−1. The iodine value (80.1 ± 0.10)g 100 g−1 indicated a preponderance of unsaturated fatty acid. Four fatty acids were detected whilst unsaturated acids constituted 61.3 g. Triglyceride was the dominant lipid species while hydrocarbons, waxes, sterols and sterol esters and higher alcohols, were detected in the unsaponifable matter. Results of nutritionally valuable mineral elements indicated that potassium occurred at the highest concentration.  相似文献

Is the sensory quality of eggs influenced by adding vegetable lipids, animal and vegetable sources of n  3 polyunsaturated fatty acids (n  3 PUFA), and/or natural antioxidants to the hens diet? To answer this question three feeding experiments were conducted adding either palm butter, grape seed oil, flax seed oil, n  3 PUFA such as flax seed and marine algae and the natural antioxidant rosemary to the hens diet. For each experiment a standard diet was used as control. The results suggested that vegetable lipids (palm butter, grape seed, flax seed), n  3 PUFA (flax seed and marine algae) and rosemary may be used to hens fed diet without affecting the sensory properties of eggs.The sensory quality of eggs was evaluated on hard boiled, scrambled eggs and Madeira cake.In this work, we report the first sensory characterization of eggs and products containing eggs obtained from hens diet based on grape and algae plus vitamin E and rosemary extract.  相似文献

Two hundred fifteen Virginia Holstein herds were used to evaluate the relationship of genetic and environmental herd averages for mature equivalent milk yield with DHIA measures from 1976 to 1980. Herd breeding value was the average of twice the USDA Cow Index for individual cows. Means (±SD) were +243 kg (±107 kg) for genetic value and +685 kg (±757 kg) for environmental value. Herds progressed 31 kg/yr genetically and 122 kg/yr environmentally. Regressions of DHIA variables on genetic and environmental averages were within herd and year. Holding herd and year constant at +250 kg genetic milk, a 600 kg increase in environmental milk resulted in increases of 559 kg herd average milk, 19 kg fat, 13 kg genetic SD, and .08 services per conception and decreases of .64 d dry, 1.6 d open, .48 mo age at first lactation, and .05 mo calving interval. At +700 kg environmental milk, a 150 kg increase in genetic milk was associated with increases of 134 kg milk, 1.9 kg fat, and .05 services per conception; and decreases of .59 d dry, 4.8 d open, .65 mo age at first lactation, and .05 mo calving interval. Within herds, environmental improvement tended to be associated with improvement in reproductive measures, and genetic improvement was not detrimental to most measures of herd performance.  相似文献

To investigate the relationship between metabolic status and the acute phase proteins haptoglobin (Hp) and lactoferrin (Lf) in milk, the concentrations of β-hydroxybutyrate (BHBA), nonesterified fatty acids (NEFA) and Hp were determined in blood samples collected weekly from 4 wk prepartum until 12 wk postpartum. Haptoglobin and Lf were determined in weekly milk samples. The cows (n = 49) were retrospectively classified according to NEFA and BHBA concentrations using different time intervals and threshold values for NEFA and BHBA, respectively. For BHBA, 4 threshold concentrations, (0.8, 1.0, 1.2, and 1.6 mM) were evaluated either at the first week before calving, at wk 1 or 2 postpartum, or when considering the means of wk 2 and 3 postpartum. For NEFA, the tested thresholds were 0.5 and 0.6 mM at wk 1 prepartum, wk 1 or 2 postpartum, or the means of wk 1 and 2 postpartum. All variables showed changes during the interval of observation. Comparing the time course of the acute phase proteins in the subgroups classified according to BHBA or NEFA, consistently greater concentrations of Hp in serum and milk and of Lf in milk were observed in those animals with BHBA concentrations above 1.6 mM during the last week before calving (n = 3/47) than in those with BHBA concentrations below this threshold. For NEFA, analogous differences for Hp in both serum and milk (0.52 ± 0.07 and 18.1 ± 4.6 for NEFA >0.6 mM vs. 0.36 ± 0.04 mg/mL and 8.46 ± 1.63 &micro;g/mL for NEFA <0.6 mM, respectively) and for Lf in milk (130 ± 8.5 vs. 89.2 ± 7.1 &micro;g/mL, respectively) were detected when a threshold of 0.6 mM at wk 2 postpartum was used. Our results indicated that cows having BHBA and NEFA serum concentrations above these thresholds at defined times could be identified.  相似文献

Subacute ruminal acidosis reduces lactation performance in dairy cattle and most often occurs in animals fed a high concentrate:forage ration with large amounts of readily fermentable starch, which results in increased production of volatile fatty acids and lactic acid and a reduction in ruminal pH. Acarbose is commercially available (Glucobay, Bayer, Wuppertal, Germany) and indicated for the control of blood glucose in diabetic patients. In cattle, acarbose acts as an α-amylase and glucosidase inhibitor that slows the rate of degradation of starch to glucose, thereby reducing the rate of volatile fatty acid production and maintaining rumen pH at higher levels. The ability of acarbose to reverse the reduced feed intake and milk fat percentage and yield associated with a high concentrate:forage ration with a high risk of inducing subacute ruminal acidosis was evaluated in 2 experiments with lactating dairy cattle. In 2 preliminary experiments, the effects of a 70:30 concentrate:forage ration on ruminal pH and lactation were evaluated. Ruminal pH was monitored in 5 Holstein steers with ruminal cannulas every 10 min for 5 d. Ruminal pH was <5.5 for at least 4 h in 79% of the animal days. In dairy cows, the 70:30 concentrate:forage ration decreased feed intake 5%, milk fat percentage 7%, and milk fat yield 8% compared with a 50:50 concentrate:forage ration but did not affect milk yield. Early lactating dairy cattle were offered the 70:30 concentrate:forage ration with 0 or 0.75 g/d of acarbose added in a crossover design in 2 experiments. In the first experiment, acarbose increased dry matter feed intake (23.1 vs. 21.6 kg/d) and 3.5% fat-corrected milk yield (33.7 vs. 31.7 kg/d) because of an increase in percentage milk fat (3.33 vs. 3.04%) compared with control cows. In the second experiment, cows were fasted for 3 h before the morning feeding to induce consumption of a large meal to mimic conditions that might be associated with unplanned delayed feeding. In this experiment, acarbose also increased feed intake (22.5 vs. 21.8 kg/d) and 3.5% fat-corrected milk yield (36.9 vs. 33.9 kg/d) due to increased percentage milk fat (3.14 vs. 2.66%) compared with controls. Thus, acarbose reversed the decreased feed intake and low milk fat percentage and yield associated with feeding a high concentrate:forage ration shown to induce subacute ruminal acidosis in Holstein steers.  相似文献

Whole raw milk was processed using a 15 L h−1 homogeniser with a high-pressure (HP) valve immediately followed by a cooling heat exchanger. The influence of homogenisation pressure (100–300 MPa) and milk inlet temperature Tin (4°C, 14°C or 24°C) on milk temperature T2 at the HP valve outlet, on fat globule size distribution and on the reduction of the endogenous flora were investigated. The Tin values of 4–24°C led to milk temperatures of 14–33°C before the HP valve, mainly because of compression heating. High Tin and/or homogenisation pressure decreased the fat globule size. At 200 MPa, the d4.3 diameter of fat globules decreased from 3.8±0.2 (control milk) to 0.80±0.08 μm, 0.65±0.10 or 0.37±0.07 μm at Tin=4, 14°C or 24°C, respectively. A second homogenisation pass at 200 MPa (Tin=4°C, 14°C or 24°C) further decreased d4.3 diameters to about 0.2 μm and narrowed the size distribution. At all Tin tested, an homogenisation pressure of 300 MPa induced clusters of fat globules, easily dissociated with SDS, and probably formed by sharing protein constituents adsorbed at the fat globule surface. The total endogenous flora of raw milk was reduced by more than 1 log cycle, provided homogenisation pressure was ⩾200 MPa at Tin=24°C (T2∼60°C), 250 MPa at Tin=14°C (T2∼62°C), or 300 MPa at Tin=4°C (T2∼65°C). At all Tin tested, a second pass through the HP valve (200 MPa) doubled the inactivation ratio of the total flora. Microbial patterns of raw milk were also affected; Gram-negative bacteria were less resistant than Gram-positive bacteria.  相似文献

Thirty two autochthonous Jezersko–Solčava lambs were used to investigate the effect of production (pasture vs. stable) and weaning system (suckling vs. weaned) on fatty acid composition of Longissimus dorsi intramuscular fat in a 2 × 2 factorial design. Pasture lambs had lower intramuscular fat concentration (P < 0.0001) more PUFA and trans C18:1, more ALA (P = 0.0322), ARA (< 0.0001) and EPA (0.0149) but less SFA (P < 0.0001) than stable lambs. Weaning system affected PUFA (P = 0.0040) and MUFA (P = 0.0070) but not SFA and trans C18:1 fatty acids. The interaction of production system and weaning system was significant mainly for trans C18:1 and trans C18:2 fatty acids. Finally, lamb meat from all four treatments which are traditionally used in rearing of Jezersko–Solčava lambs are favourable from the nutritive point of view, due to their low n  6/n  3 ratio.  相似文献

Trilepisium madagascariense (TM) and Antiaris africana (AA) are two underutilized plants from Nigeria. They have been subjected to standard analytical techniques in order to evaluate the proximate composition, physico-chemical properties, mineral nutrient, fatty acid composition and distribution in the lipid classes of the seeds and seed oils. The carbohydrate composition of these seeds are high; TM is 62.73 ± 0.30% and AA is 53.97 ± 0.50%. Iodine value of TM was found to be 46.10 ± 0.70 mg iodine/g while that of AA was 88.24 ± 0.50 mg iodine/g. The mineral composition of the seeds and the oils varied with K having the highest concentration in the seed and Na the highest concentration in the oils. Linoleic acid is the dominant fatty acid in the oil of AA with the highest composition in the neutral lipids while palmitic acid is the dominant fatty acid in oil of TM. Vitamin E, Gamma-Sitosterol, α and β-Amyrin, Lupeol, Stigmast-4-en-3-one, and hydrocarbons were isolated from these oils. The results of the proximate, mineral nutrient compositions, chemical characterization and fatty acid distribution of these seeds and seed oils shows their possibility as potential resources.  相似文献

The objective of this study was to investigate the influence of interfacial composition on the in vitro digestion of emulsified lipids coated by various emulsifiers by pancreatic lipase. Sodium caseinate, whey protein isolate (WPI), lecithin and Tween 20 were used to prepare corn oil-in-water emulsions (3 wt% oil). Pancreatic lipase (1.6 mg/mL) and/or bile extract (5.0 mg/mL) were added to each emulsion and the particle charge, droplet aggregation, microstructure and free fatty acids released were measured. In the absence of bile extract, the amount of free fatty acids released per unit volume of emulsion was much lower for lipid droplets coated by Tween 20 (13 ± 16 μmol ml−1) than those coated by lecithin (75 ± 20 μmol ml−1), sodium caseinate (220 ± 24 μmol ml−1) or WPI (212 ± 6 μmol ml−1). In the presence of bile extract, there was an appreciable increase in the amount of free fatty acids released in all the emulsions, with the most appreciable effects being observed in the Tween 20-stabilized emulsions. The stability of the emulsions to droplet flocculation and coalescence during hydrolysis was also strongly dependent on emulsifier type, with the WPI emulsions being the least stable and the Tween 20 emulsions being the most stable. Our results suggest that the access of pancreatic lipase to emulsified fats decreases in the following order: proteins (caseinate and WPI) > phospholipids (lecithin) > non-ionic surfactants (Tween 20). These results may have important consequences for the design of foods with either increased or decreased lipid bioavailability.  相似文献

To evaluate the effect of supplementing the diet of Comisana sheep with by-products from industrial tomato manufacture on the fat composition and conjugated linoleic acid (CLA) content of milk fat, two groups of 50 ewes each were fed either total mixed ration standard (TMRS) or total mixed ration with added tomato by-products (TMRA). Milk fat composition was determined by high-resolution gas chromatography (HRGC). The milk fat content for the animals fed the TMRA diet increased by 6.41% (P < 0.01) after six weeks, compared with the animals fed the TMRS diet. The CLA content in the milk fat for the group of animals fed the TMRA diet was 19.8% (P < 0.05) higher than for those fed the TMRS diet, and reached 1.33 g 100 g?1 fat, while the polyunsaturated fatty acid (PUFA) content increased by a 6.43% (P < 0.05) and reached 7.12 g 100 g?1 fat. The fatty acid composition showed an increase in the amount of polyunsaturated fatty acids. The n ? 3:n ? 6 ratio increased by 13% in the milk from sheep fed with the TMRA diet. These observations were confirmed by triglyceride analysis, which showed a decrease in the amount of short-chain (C28–C32) and medium-chain (C34–C42) triglycerides after six weeks, while the opposite was observed for the long-chain triglycerides (C44–C54).  相似文献

A detailed synchrotron X-ray diffraction study on the kinetics of crystallization of anhydrous milk fat (AMF) and milk fat triacylglycerols (MFT) was done in a Couette cell at 17 °C, 17.5 °C and 20 °C under shear rates between 0 and 2880 s?1. We observed shear-induced acceleration of the transition from phase α to β′ and the presence of crystalline orientation, but no effect of shear on the onset time of phase α was observed. A two stage regime was observed for the growth of phase β′. The first stage follows a series–parallel system of differential equations describing the conversion between liquid and crystalline phases. The second stage follows a diffusion-controlled regime. These mechanisms are consistent with the crystalline orientation, the growth of the crystalline domains and the observed displacement of the diffraction peak positions. The absence of the polar lipids explains the faster kinetics of MFT.  相似文献

Milk rich in conjugated linoleic acid (CLA, 42 ± 3 mg g 1 fat) was used to evaluate the impact of high-pressure sterilization (HPS). The pressure, temperature and time needed to reduce 7-log of Bacillus amyloliquefaciens endospores were determined in the presence of nisin (4–64 mg L 1). In addition, the inactivation of alkaline phosphatase was evaluated. After HPS treatment, the remaining CLA and formation of hydroperoxides were monitored during storage up to 60 d at 25 °C. The addition of nisin (≥ 16 mg L 1) to milk significantly enhanced the inactivation of B. amyloliquefaciens (7-log reduction) after treatment at 600 MPa, 120 °C and 5 min of holding time. These conditions were selected to evaluate the impact of HPS on the CLA retention and hydroperoxides formation. Milk with the addition of nisin and treated with HPS delivered higher retention of CLA and a lower concentration of hydroperoxides compared with the UHT equivalent process (125 °C/15 s and 135 °C/10 s).Industrial relevanceHigh-pressure sterilization is a valuable alternative to produce superior quality milk products in cases where traditional thermal treatments have failed. This study evaluated the impact of processing conditions on the conjugated linoleic acid content at conditions where commercial sterilization has been achieved (7-log reduction of B. amyloliquefaciens). Decreased insulin sensitivity (IS) in dairy cows supports milk yield but increases the risk for metabolic and reproductive disorders. Although several inducers of decreased IS are known, it is unclear to what extent it is congenitally determined. The main aim was to investigate differences in IS between neonatal calves of the Belgian Blue (BB) breed, reared for beef production, and the Holstein-Friesian (HF) breed, reared for milk yield. Additionally, a small number of East Flemish (EF) calves, a local dual-purpose breed, were compared with the 2 other breeds. Ten BB, 12 HF, and 4 EF calves with similar age, ration, and housing were selected. In the intravenous glucose tolerance test, blood samples were taken at regular intervals after an intravenous glucose bolus of 150 mg/kg. Area under the curve (AUC), peak concentration, and elimination rate of insulin and glucose were computed. The quantitative insulin sensitivity check index (QUICKI) and revised QUICKI were computed using basal glucose, insulin, and nonesterified fatty acid concentrations. In the intravenous insulin tolerance test, blood samples were obtained from 4 calves of each breed at regular times after an intravenous insulin challenge of 0.05 IU/kg. Based on the decline in glucose concentrations relative to basal levels, the insulin-stimulated blood glucose response was computed. Basal insulin concentrations were higher in HF (1.58 ± 0.40 μU/mL) than in BB calves (0.35 ± 0.09 mmol/L). Compared with BB calves, HF and EF calves had higher basal glucose concentrations (4.40 ± 0.16 vs. 5.70 ± 0.35 and 5.81 ± 0.13 mmol/L, respectively), insulin peak concentrations (4.62 ± 1.09 vs. 9.70 ± 1.45 and 16.44 ± 5.58 μU/mL, respectively), insulin AUC (86.71 ± 18.81 vs. 222.65 ± 45.00 and 293.69 ± 109.22 μU/mL·min, respectively), and glucose AUC (256.22 ± 17.53 vs. 335.66 ± 18.74 and 321.03 ± 10.05 mmol/L·min, respectively). Glucose elimination rates were lower in HF (1.37 ± 0.22%/min) than in BB calves (2.35 ± 0.25%/min). The QUICKI was lower in HF and EF than in BB calves (0.52 ± 0.039 and 0.57 ± 0.068 vs. 0.76 ± 0.038, respectively), and the revised QUICKI was lower in HF (0.86 ± 0.11) than in BB calves (1.59 ± 0.17). The insulin-stimulated blood glucose response did not differ between breeds. Because management differences were negligible, our results suggest breed-specific differences in glucose partitioning and IS. These findings may reflect different rearing purposes of the breeds, although extrapolation of the data to adult animals should be done cautiously.  相似文献
