论我国现行食品安全问题的策略

北京地区建筑农民工工作和生活状况调查

本文通过问卷调研和现场采访,在北京地区采集了与建筑农民工工作和生活状况相关的信息,共回收有效问卷931份.总结了农民工的年收入、工作经历、劳动合同、安全及饮食等基本情况,发现建筑农民工对工作的满意程度主要与其是否被拖欠工资、合同签订情况、年收入以及工作经历有关.本文还指出农民工对安全状况的满意程度主要与培训情况有关,并针对饮食条件说明了目前在一些工地存在的问题,最后提出了几点建议.

A discussion paper on challenges and limitations to water reuse and hygiene in the food industry

Drinking water is becoming a scarce resource in many areas and both use of water and wastewater outlet are of major ecological and economical importance in many countries. Consumption and discharge may be considerably minimized by means of water reuse. The food industry has a large consumption of water, but until now very limited reuse has taken place due to legislations constraints and hygienic concerns. Legal space for use of water of qualities other than drinking water has been opened with the current legislation. This will, however, in many cases require careful analyses of individual cases based on a thorough understanding of the hazards involved in order to avoid compromising the safety of the food product and thereby the health of consumers. Implementation of water reuse practices in the food industry presents a great challenge for both companies and public health authorities regarding knowledge, technical expertise and documentation. Regulatory, technological, monitoring, verification and ethical aspects associated with microbiologically safe reuse of water in the food industry are discussed and some examples of the challenges ahead and possible approaches are given.

Bioavailability as an issue in risk assessment and management of food cadmium: a review

The bioavailability of cadmium (Cd) from food is an important determinant of the potential risk of this toxic element. This review summarizes the effects of marginal deficiencies of the essential nutrients zinc (Zn), iron (Fe), and calcium (Ca) on the enhancement of absorption and organ accumulation and retention of dietary Cd in laboratory animals. These marginal deficiencies enhanced Cd absorption as much as ten-fold from diets containing low Cd concentrations similar to that consumed by some human populations, indicating that people who are nutritionally marginal with respect to Zn, Fe, and Ca are at higher risk of Cd disease than those who are nutritionally adequate. Results from these studies also suggest that the bioavailability of Cd is different for different food sources. This has implications for the design of food safety rules for Cd in that if the dietary source plays such a significant role in the risk of Cd, then different foods would require different Cd limits. Lastly, the importance of food-level exposures of Cd and other potentially toxic elements in the study of risk assessment are emphasized. Most foods contain low concentrations of Cd that are poorly absorbed, and it is neither relevant nor practical to use toxic doses of Cd in experimental diets to study food Cd risks. A more comprehensive understanding of the biochemistry involved in the bioavailability of Cd from foods would help resolve food safety questions and provide the support for a badly needed advance in international policies regarding Cd in crops and foods.

The impact of the targeted subsidies policy on household food security in urban areas in Iran

Ensuring food security is an important consideration in developing countries. It typically requires bringing people out of poverty and structural changes in the agriculture sector. A common policy tool to help reduce food insecurity is to subsidize food, but there have been insufficient analyses of the impacts of different subsidy regimes. In this study, we examined the effect of the implementing Targeted Subsidies Policy (TSP) on various food commodities on the household food security in urban areas of Iran. The changes in the elasticity of the calorie prices and expenditure following the TSP were considered for 13 food groups. The results showed that the TSP effect on food security in the urban households was positive for some food items (such as red meat and fish) and was negative for other items (such as poultry and cereals). The impacts result from substitution and complementary effects among the foodstuffs. Market regulation of the goods in the food basket of the country in urban areas is necessary and strongly recommended.
