The content of bioactive compounds in spent coffee grounds (SGC) was studied. SGC were obtained from Coffea arabica beans of different roasting degrees (light and dark) and different geographical origins (Nicaragua, Columbia and Mexico) processed using four brewing methods (mocha, filtered, drip and infusion). The highest caffeine and chlorogenic acid contents were determined in filtered spent coffee extracts. All extracts of light roasted spent coffee grounds showed lower browning index levels in comparison to that from dark roasted spent coffee grounds. Generally, the highest content of total polyphenolic compounds and highest antioxidant capacity were determined in extracts prepared in drip. In conclusion, the results obtained in this study indicate that the spent coffee grounds produced of domestic levels, especially those obtained from filter coffeemaker, could be considered as a good source of natural antioxidants.  相似文献

The proximate composition of seagrape (Caulerpa lentillifera) from culture ponds in Penghu, Taiwan was analyzed. The phenolic content and the antioxidant activities including the 1,1-diphenyl-2-picryl-hydrazil (DPPH) radical scavenging activity, ferric ion-reducing activity, hydrogen peroxide scavenging activity, and ferrous ion chelating (FIC) activity of the ethanolic extracts of dry seagrape samples using 2 drying methods of freeze drying and thermal drying were compared with the ethanolic extract of Oolong tea as a reference. The contents (dry weight basis) of carbohydrate, crude protein, crude lipid, crude fiber, and ash of seagrape obtained from culture ponds in Taiwan were 64.00%, 9.26%, 1.57%, 2.97%, and 22.20%, respectively. The total phenolic content (1.30 mg gallic acid equivalent [GAE]/g dry weight) of the ethanolic extract of thermally dried seagrape was significantly lower (P < 0.05) than that (2.04 mg GAE/g dry weight) of freeze-dried seagrape, and both were significantly lower than that (13.58 mg GAE/g dry weight) of Oolong tea. At the same phenolic content, the antioxidant activities of freeze-dried seagrape were significantly higher (P < 0.05) than those of thermally dried seagrape. Compared with Oolong tea, seagrape, irrespective of drying method used, generally had strong hydrogen peroxide scavenging activity; but it was weak in DPPH radical scavenging activity, ferric ion-reducing activity, and FIC activity. The antioxidant activity of seagrape and Oolong tea was significantly influenced by their phenolic contents. PRACTICAL APPLICATION: The proximate composition, total phenolic content, and antioxidant activity of seagrape (Caulerpa lentillifera) in Taiwan were determined in this research to indicate nutritionally of this edible seaweed to human health, and compared these results to previous studies.  相似文献

目的:优化蓝莓果汁制备工艺,提高其抗氧化活性。方法:采用湿法超微粉碎结合复合酶法制备蓝莓汁,利用响应面法优化工艺参数并分析蓝莓汁抗氧化活性。结果:不同液料比、粉碎时间、复合酶添加量和酶解时间下蓝莓汁出汁率及活性物质含量存在显著差异,其中酶解时间对出汁率和花色苷含量影响最显著;湿法超微粉碎—复合酶法最优工艺参数为液料比1∶1.7 (g/g)、粉碎时间8.00 min、复合酶添加量0.15%、酶解时间127 min;在该工艺条件下蓝莓出汁率为87.89%、花色苷含量为612.04 mg/L、总黄酮含量2.96 g/L、总酚含量3.43 g/L,样品量为1.6 mL时其抗氧化能力与0.3% 维生素C相当。结论:湿法超微粉碎—复合酶法可提高蓝莓汁的出汁率、最大限度保留其活性物质,使其具有较强抗氧化能力。  相似文献

A rapid and reliable procedure has been developed for the determination of ochratoxin A (OTA) in green and roasted coffee. The method consists of extraction of the sample with methanol–5% aqueous sodium hydrogen carbonate/1% PEG8000 (20:80), followed by immunoaffinity column (IAC) clean-up and, finally, high-performance liquid chromatography (HPLC) determination with fluorimetric detection. Mean recoveries for green and roasted coffee spiked at different levels ranging from 94 and 105% were obtained. The limit of determination (S/N = 3) was 0.032 ng g?1 and the precision (within-laboratory relative standard deviation) was 6%. The method described has been used to assess the influence of roasting and different brewing processes on OTA content in commercial lots of green and roasted coffee. The results provided evidence that roasting led to a significant drop on OTA levels (65–100%). Also, the way coffee is prepared affects the OTA content: brewing using a Moka Express (Italian coffee) led to a significant reduction of OTA concentration (50–75%) since hot water stays in contact with coffee for a short time. On the contrary, Turkish coffee-making (infusion for about 10 min) cause poor reduction in OTA.  相似文献

In this work, some organoleptic and nutritive parameters related to fruit quality (color, firmness, total soluble solids, and total acidity), the content of bioactive compounds (total phenolics and total carotenoids) as well as the total antioxidant activity (TAA) due to hydrophilic (H-TAA) and lipophilic (L-TAA) compounds have been determined in both skin and flesh of 10 flat peach and nectarine genotypes (7 peaches and 3 nectarines). Results showed that genotype plays an important role in determining the organoleptic and nutritive quality, as well as the concentration of bioactive compounds and the related TAA, since these parameters differed largely among cultivars. Overall data suggest that for commercial purposes and consumer's acceptability (based on color, firmness, acidity, and bioactive compounds), the flat nectarine "ASF-06-83" and the flat peaches "Sweet Cap" and "ASF-06-91" could be considered as the best cultivars. Additionally, it is suggested that the content of bioactive compounds should be included as an important factor in future breeding program to obtain new genotypes with enhanced bioactive compounds. PRACTICAL APPLICATION: Genotype of flat peaches and nectarines plays an important role in determining the organoleptic and nutritive quality, as well as the content of bioactive compounds. Given the differences on bioactive compounds concentration and antioxidant activity among peaches and nectarines flat cultivars, these parameters should be included as an important factor in future breeding program to obtain new genotypes with enhanced bioactive compounds.  相似文献

Nine commercial varieties of tomato (Rambo, Senior, Ramillete, Liso, Pera, Canario, Durina, Daniella and Remate) produced in Spain were analysed for their lycopene content, content of phenolic compounds and antioxidant capacity. The phenolic compounds were characterised as flavonoids (quercetin, kaempferol and naringenin) and hydroxycinnamic acids (caffeic, chlorogenic, ferulic and p‐coumaric acids). Antioxidant activity was measured using the DPPH and ABTS assays. The concentrations of lycopene and the various phenolic compounds as well as the antioxidant activity were significantly influenced by the tomato variety. Quercetin, the most abundant flavonoid, was found in concentrations ranging between 7.19 and 43.59 mg kg?1 fresh weight, while naringenin levels were lower than 12.55 mg kg?1. The most abundant hydroxycinnamic acid was chlorogenic acid, with values ranging from 14 to 32 mg kg?1 fresh weight, followed by caffeic acid, while p‐coumaric and ferulic acids showed similar concentrations lower than 5 mg kg?1. The highest content of lycopene was found in Ramillete, Pera and Durina (>50 mg kg?1 fresh weight), while the concentration in the other varieties was between 50 and 30 mg kg?1, with the exception of Liso (less than 20 mg kg?1). The antioxidant activity of tomato extracts varied with the tomato variety and the assay method used. An agitated fluidised bed dryer was employed to dry lixiviated roselle (Hibiscus sabdariffa L.) calyxes. The effects of operational drying variables on the chemical attributes such as the retention of monomeric anthocyanins (MA), phenolic compounds, polymeric colour, antioxidant activity and drying rate were analysed. Drying curves showed only decreasing falling rate period. To determine the kinetic parameters, the drying data were fitted to a Page's model, based on the moisture content ratio vs. the drying time; the k values ranged from 1.58 × 10?5 to 6.28 × 10?2 s?1. The different drying conditions showed significant differences in the chemical parameters. When processing wet feeds, as lixiviated roselle calyxes, the mechanical assisted fluidisation can be considered as an innovative concept.  相似文献

Fruits of date palm ( Phoenix dactylifera L.) are consumed throughout the world and are a vital component of the diet in most Arabian countries. This study has been carried out to evaluate the total phenolic content and the antioxidant activity of four date palm fruit varieties grown in Tunisia. All measurements were made at the 'tamar' stage-the final stage of fruit ripeness. The date varieties were found to be rich in total phenolic ranging from 209.42 mg of equivalent gallic acid/100 g fresh weight in Kentichi to 447.73 mg equivalent gallic acid/100 g fresh weight in Allig. The date varieties studied were characterised by a high antioxidant activity ranging from 866.82 for the Deglet Nour to 1148.11 μmol Equivalent Trolox/100 g fresh weight for Khouet Kenta by the ABTS method. In fact, the DPPH method revealed that Allig having the lowest antioxidant activity (0.72) followed by Deglet Nour (1.53), Kentichi (1.68) and Khouet Kenta variety (1.96). This study suggest that Tunisian date palm fruit may serve as a good source of natural antioxidants and could potentially be considered as a functional food ingredient.  相似文献

This study evaluated the effect of increasing manganese (Mn) nutrition on the content of antioxidative compounds such as vitamin C, lycopene and polyphenols, and the antioxidant activity of tomato (Lycopersicon esculentum Mill., cvs ‘Alboney F1’ and ‘Emotion F1’) fruit. Plants were grown in rockwool using a nutrient solution with the following content of Mn (mg dm–3): 0.0, 0.3, 0.6, 1.2, 2.4, 4.8, 9.6 and 19.2. The level of vitamin C and lycopene decreased with the increasing Mn nutrition. Since the colour of fruits was correlated with the change in carotenoid content, the decrease in lycopene content promoted the reduction of redness and increase of yellowness of fruits. However, total polyphenol content and antioxidant activity significantly increased when plant were exposed to toxic levels of Mn. Observed changes could be the result of the oxidative stress induced by high concentrations of Mn. Polyphenolic compounds play a crucial role in the plant’s response to Mn stress and affect predominantly the total antioxidant properties of fruits, which could be used as a source of phenolics. Moreover, total phenolic content measurement, as an easy and inexpensive method, could be used as an indicator of Mn-induced stress in fruits of tomato.  相似文献

目的:研究热水提取胡柚果皮矿物质、酚类物质的效率及其提取液的抗氧化能力。方法:原子吸收光谱法测定七种主要矿物质;高效液相法测定胡柚皮中七种主要酚酸和六种黄酮;福林酚法、FRAP、DPPH法测定提取液的抗氧化能力。结果:热水提取可以有效提取胡柚果皮中的酚类物质与部分矿物质。抗氧化能力分析表明,热水提取液具有与甲醇提取液相近的抗氧化能力。结论:传统中药煎煮条件(100℃,30min)可以有效提取柑橘类中药的酚类物质与部分矿物质。   相似文献

After supercritical CO2 extraction of hops or formation of lupulin‐enriched pellets (type 45), polyphenol‐rich by‐products remain. These have some industrial and agricultural applications (preparation of polyphenol extracts and in the production of low‐bitterness beers). In this work, both materials were used in pilot‐scale brewing experiments for the production of beer enriched with polyphenols. Samples of beer made from these residues underwent analyses for haze‐active prolamines, total polyphenols, phenolic monomers, antioxidant capacity, bitterness and colour. An almost identical decrease in the content (from hopped wort to final beer) of the prolamines of approximately 30% was detected in standard beer as well as in the beer prepared from the hop residue (HR 1) after supercritical CO2 extraction. In contrast, the level of prolamines was reduced by more than 50% in the beer following addition of the hop residue (HR 2) after production of lupulin enriched pellets. Both hop materials contributed to an increase in the antioxidant capacity of the final beer by 21.5 and 11.9%, respectively. Another part of this work was aimed at the investigation of colour and bitterness changes in beers made ??using hop by‐products. Addition of the material HR 2 into the wort caused an increase in colour and in bitterness of the matured beer by 20 and 11% rel., respectively. Murta (Ugni molinae T.) berries were air‐dried at five temperatures (40, 50, 60, 70 and 80 °C), and the changes in β‐carotene, phenolic acids, total phenolic and flavonoid contents and antioxidant capacities (DPPH and ORAC) were investigated. The berries showed a high content of β‐carotene, which decreased during drying temperature between 40 °C and 80 °C. Free and bound phenolic acids were also determined, showing gallic acid to be the prevalent phenolic acid. Total phenolic and flavonoid contents in the dried berries showed a higher decrease at lower temperature due to longer drying time. The radical‐scavenging activity also showed higher antioxidant activity at higher drying temperatures (70–80 °C) than at lower drying temperatures (40–50 °C). Total phenolic content (TPC) and flavonoids showed good correlation with antioxidant capacity. Murta berries proved to be an excellent source of antioxidants and bioactive compounds and are therefore a potential ingredient for new functional food products.  相似文献
