The aim of this work was to focus on the study of the volatile composition of white and rosé base wines elaborated from different autochthonous grape varieties in Spain (Verdejo, Viura, Malvasía, Albarín, Godello, Prieto Picudo and Garnacha) and the evolution of the sparkling wines elaborated from them following the “champenoise” method. The amino acids and biogenic amines were also studied. Multivariate analyses (factorial and stepwise discriminant) were carried out to study the influence of these compounds all together. Base and sparkling wines from Albarín, Verdejo, Godello and Prieto Picudo were the richest in most of the volatile compounds analyzed, especially of ethyl esters and alcohol acetates, compounds that contribute to the fruity aroma of wines. During the aging on lees in the bottle of sparkling wines, an increase in branched ethyl esters, ethyl lactate and γ-butyrolactone, and a decrease in terpenes (mainly citronellol and geraniol) were observed. In general, the levels of biogenic amines in all the sparkling wines studied were very low, which does not represent a negative effect on their quality and safety.  相似文献

选用陕西地区的鲜食葡萄品种户太八号、夏黑和酿酒品种爱格丽、嘉年华、玫瑰香为原料,酿制小容器起泡葡萄酒,并对不同品种葡萄酿造的起泡葡萄酒进行酚类物质、香气物质及感官指标进行定量描述分析(QDA)比较。结果表明:不同品种葡萄果实及起泡葡萄酒总酚含量存在显著差异(P<0.05),鲜食葡萄品种的总酚含量高于酿酒葡萄品种,夏黑葡萄果实中的总酚含量最高,为(97.95±2.93) mg/g,5种起泡葡萄酒的基本指标均符合国家标准,其中酿酒品种中嘉年华及鲜食品种里户太八号起泡葡萄酒的酚类物质含量较高;5种起泡葡萄酒共检测出香气物质50种,其中玫瑰香起泡葡萄酒香气物质种类最多(33种);QDA分析结果表明,爱格丽及夏黑起泡葡萄酒感官品质较佳,分别得分75.99分和81.80分。  相似文献

A comparison of the effect on base wines of pre-fermentative clarification between a fining mixture (potassium caseinate, bentonite and cellulose microcrystalline) and bentonite was carried out. Fining agents were added to two grape juices from different cultivars: Macabeo and Parellada. These varietal wines are used for making sparkling wine within the appellation (certified brand of origin) Cava. Vinification was done in parallel on an industrial scale (100 000 l). The use of the fining mixture in grape juice made the fermentations more complete and gave wines with less browning ability, more foam stability time and a lower content of nitrogenous fraction, polyphenols and some volatile compounds than the wines treated with single bentonite. Sensorial analysis showed that the wines produced with the use of different fining agents had different organoleptic characteristics. In addition, the effect of fining agent added pre-fermentatively was observed on some components of sparkling wines.  相似文献

The Brachetto variety is the most important aromatic red grape used for the production of sweet sparkling wines in Italy. The phenolic composition and chromatic characteristics were studied in base and red sweet sparkling wines made from this variety. The present work represents the first study on sparkling wines manufactured with Brachetto grapes. The amount of pigments extracted in the base wine was low as a consequence of the necessity for short maceration time (48 h) and low alcohol content (< 3.5% v/v). The second fermentation (prise de mousse) caused a pigment content decrease, accompanied by both a color intensity decrease and a tonality increase. In terms of phenolic compounds and chromatic characteristics, lightly sparkling wines (final bottle pressure < 1.7 bar) agreed with fully sparkling wines (final bottle pressure > 3.0 bar) at the end of the second fermentation and, therefore, the chromatic quality was independent on the winemaking methodology used, excepting for lightness and color intensity.Response surface methodology was applied to predict the effect of two independent variables, namely time and temperature of storing, on the phenolic composition and chromatic properties in both lightly and fully sparkling wines. So, it is possible to evaluate the development of two types of sweet sparkling wines during their ageing in bottle and their commercial shelf-life. A central composite design (CCD) and response surface methodology (RSM) were used for this purpose. Quantitative changes were observed in the color parameters. Although the time variable strongly influenced them, the two sparkling wines were stable enough only at low temperatures after 12 months of ageing. During the wine ageing in bottle, an increase in the formation of polymeric red pigments can be suggested taking into account the losses observed in monomeric anthocyanins. The results obtained showed that the color of fully sparkling wines was more stable than that of lightly ones and, therefore, the shelf-life of the former ones could be longer.  相似文献

Fining agents can also have an effect on the flavor components of the must, and other compounds which are important for the sensory characteristics and in the case of sparkling wine, the foam quality. The influence of fining agents and tirage solution, on volatile compounds, and foam characteristics of sparkling wines made from grapes of the Bobal variety was studied. The data obtained show how the fining agent affects the foam properties and the final volatile composition of sparkling wines. In this study, it was bentonite with gelatine that produced amounts of acetates and esters. The use of Colle 2P in the tirage solution means that more aromatic sparkling wines with better foam characteristics can be obtained.  相似文献

The aim of this work was to study the influence of nitrogen compounds on the formation of volatile compounds during the alcoholic fermentation carried out with 4 nonaromatic grape varieties collected at 2 different maturation stages. To do this, Monastrell, Merlot, Syrah, and Petit Verdot grapes were collected 1 wk before harvest and at harvest. Then, the musts were inoculated with the same Saccharomyces cerevisiae yeast strain and were fermented in the same winemaking conditions. Amino acids that showed the highest and the lowest concentration in the must were the same, regardless of the grape variety and maturation stage. Moreover, the consumption of amino acids during the fermentation increased with their concentration in the must. The formation of volatile compounds was not nitrogen composition dependent. However, the concentration of amino acids in the must from grapes collected 1 wk before harvest can be used as a parameter to estimate the concentration of esters in wines from grapes collected at harvest and therefore to have more information to know the grape oenological capacity. Application of principal components analysis (PCA) confirmed the possibility to estimate the concentration of esters in the wines with the concentration of nitrogen compounds in the must.  相似文献

This paper studies the influence of different maceration times (5, 10 and 20?days) during the elaboration of Monastrell, Syrah and Cabernet Sauvignon wines on the proanthocyanidin composition and sensory characteristics of the resulting wines. Significant differences were found between wines elaborated with different maceration times. The different maceration times affected the qualitative and quantitative proanthocyanidin composition of the resulting wines, the total proanthocyanidin content increasing with the maceration time. The percentage of skin-derived proanthocyanidins was always higher than that of seed-derived proanthocyanidins for all the maceration time assayed, although the contribution of seed proanthocyanidins to wine composition increased for the longest maceration time. However, the study also shows that differences exist between wines elaborated with the same maceration time but with different varieties, indicating the importance of two factors, the initial concentration of grape phenolic compounds and their extractability, on the final concentration of wine proanthocyanidins. In this way, the wines obtained from Syrah had the highest proanthocyanidin content compared with the corresponding wines from Cabernet Sauvignon or Monastrell, even though Syrah grapes presented the lowest proanthocyanidin content in skins and similar seed proanthocyanidin content to Cabernet and Monastrell grapes.  相似文献

Thirty-seven China wines, produced from different geographical origins, were examined in this study. The antioxidant activity of wines was measured by different analytical methods: oxygen radical absorbance capacity (ORAC), reducing power, 2,2-azino-di-(3-ethylbenzothialozine-sulphonic acid) (ABTS), 2,2-diphenyl-1-picrylhydrazyl (DPPH·), hydroxyl radical-scavenger activity, superoxide radical-scavenger activity, lipid peroxidation and chelating capacity. Furthermore,total phenols, total flavonoids, total flavanols and total anthocyanins of wines were determined. As expected, the red wines had much higher phenolic content and antioxidant capacity than rosé wines or white wines. Among the red wines, Cabernet Sauvignon and Muscat Hamburg, respectively, represented the wines with the highest and lowest phenolic contents and antioxidant capacity. Among the white wines, Italian Riesling had the lowest phenolic content and antioxidant capacity. Taken together, a close relationship between phenolic contents and antioxidant capacity, for all wines, was observed.  相似文献

 Analysis of the volatile compounds of wines from seven clones of Monastrell grapes was performed using ultrasound extraction of the compounds. Significant differences were found for some of the compounds and these compounds were used in order to characterize and differentiate among the clones. Linear discriminant analysis allowed some grouping of the clones, showing that differentiation among clones of a neutral grape variety is possible. Herein, we evaluate the applicability of previously characterized commercial and indigenous Saccharomyces cerevisiae strains and non-S. cerevisiae species for the deacidification of white and red wines at a pilot scale. The effect of the refermentation process (mixture of acidic wine with musts from freshly crushed grapes or with residual marc) as well as micro-oxygenation (MO) on acetic acid removal efficiency and wine aromatic composition was also assessed in a red wine. The commercial strains S26 and S29 efficiently reduced both acetic acid (43 and 47%, respectively) and sugar (100%) after 264 h of refermentation of an acidic white wine that was supplemented with grape must. Similar results (60-66% of acetic acid removal) were observed for red wine deacidification using grape must, independently of MO. When residual marc was used for deacidification, strain S26 removed 40% of acetic acid, whereas strain S29 did not initiate refermentation with or without MO. Wines obtained by refermentation with the must had significantly lower acetic acid and a higher total SO2 concentration in comparison to the wines deacidified by the grape marcs. The volatile aroma compound's composition of deacidified red wines was dependent on the refermentation process used, rather than on MO. The marc-deacidified wine obtained by the use of strain S26 and without MO achieved the best sensory classification. When data from all analytical and sensory evaluation were combined, Principal Component Analysis (PCA) separated the wines into three distinct groups according to the strain and the refermentation process independently of MO. We successfully established an efficient and cheap enological solution for the rectification of volatile acidity of wines.  相似文献

To detect differences among three strains of Saccharomyces cerevisiae used in the manufacture of sparkling wines and to study the changes in nitrogen compounds during autolysis, a model wine system was used. Significant differences were observed between the mean values of the autolytic capacity of the three strains. The amount of nitrogen (total, protein, peptide and amino) present in the autolysates and the concentration of most free amino acids was significantly affected by the strain. These findings suggest that the strain of yeast used in the manufacture of sparkling wines can play an important role in the aging process and can affect final composition.  相似文献

Characteristics of 106 wines from 5 major grape varieties and 3 typical geographic regions in China were investigated by means of profiling of organic acids and phenolic compounds analysis. An ultra‐performance liquid chromatography method was developed and thus, large number of samples could be determined in a quick and reliable way. The results showed that different origins and varieties were characteristic of various profiles of organic acid and phenolic compounds. In order to investigate possible correlation between organic acids and phenolic compounds content and grape variety and/or geographical origin, analysis of variance and linear discriminant analysis (LDA) were conducted. A satisfactory LDA result for red wines according to geographic origin was obtained, in which the correct classification was 100% and the leave‐one‐out validation accuracy was 90%. The corresponding results of white wines were 91% and 86%, respectively. When LDA was processed, according to grape varieties, the proportionality of successfully classified wines was 96%, while the leave‐one‐out validation accuracy was 94%. The organic acids and phenolic compounds profiles were useful in the classification of Chinese wines according to grape variety and geographic origin.  相似文献

采用气相色谱-质谱联用法和感官分析排序法,研究橡木桶陈酿前添加葡萄籽单宁(200 mg/L)对陈酿12 个月后‘赤霞珠’和‘马瑟兰’干红葡萄酒香气组分和感官特征的影响。结果表明:添加葡萄籽单宁对2 个品种葡萄酒香气的影响各异。葡萄籽单宁添加促进了橡木桶陈酿期间‘赤霞珠’葡萄酒中香草酸、香草醛、香草酸乙酯、糠醛、乙酰呋喃和糠醇等橡木来源香气物质的浸出,而抑制‘马瑟兰’干红葡萄酒中糠醛、乙酰呋喃、糠醇、5-甲基糠醛和5-羟甲基糠醛等橡木来源香气物质的浸出。添加葡萄籽单宁后,‘赤霞珠’葡萄酒的生青味和浆果香降低,烘烤味增强,‘马瑟兰’葡萄酒的生青味和花香略有增强,对陈酿型干红葡萄酒的生产具有重要指导作用。  相似文献

Marmajuelo and Malvasía are two white grape varieties grown in Spain (Canary Islands), the former only in the Canary Islands, while the latter is a variety widely spread throughout the world. At the present time, the oenological potential of these varieties grown in the Canaries has not yet been studied. Aroma precursors in musts and skins, and free volatiles in wines were determined in samples of both varieties. Aroma precursors of must and skins were isolated by absorption on XAD-2 resin, and the aglycone liberated by means of acid hydrolysis. Free volatiles from wines and from aroma precursors were extracted with dichloromethane and then analysed by GC–MS. The analysis of glycosidic aroma precursors showed that Malvasía variety presented higher contents of terpenes in grapes than those of Marmajuelo variety. In addition, some precursors of benzenic compounds presented higher contents in the musts of Malvasía with respect to those in the musts of Marmajuelo. The main difference in wine volatile composition was that cis-3-hexen-1-ol, ethyl acetate and γ-nonalactone compounds showed a significantly higher mean content in Malvasía wines than in Marmajuelo wines. Among the aroma precursors analysed, only α-terpineol, linalool oxides, 4-allyl-2,6-dimethoxyphenol, 2-methoxy-4-vinylphenol, 4-hydroxybenzaldehyde, vanillin and benzyl alcohol showed contents in grapes comparable to the levels observed in wine volatile compounds.  相似文献

BACKGROUND: The main object of the present study was to investigate the different proanthocyanidin fraction (monomeric, oligomeric and polymeric fraction) contents, antioxidant capacity and scavenger activity of the most important and representative commercial sparkling wines available in Bairrada Portuguese Appellation of Origin. RESULTS: The white commercial sparkling wines tested had much less total phenolic, proanthocyanidin content, antioxidant capacity and scavenger activity than the sparkling red wines. For all white and red sparkling wines the polymeric fraction of proanthocyanidins was the most abundant fraction quantified. The antioxidant capacity was positively correlated with the different proanthocyanidin fractions studied. However, in general, higher correlations between total polyphenols, different proanthocyanidin fractions and antioxidant capacity were found only for red sparkling wines. CONCLUSION: The results confirm that Portuguese sparkling wines from Bairrada Appellation of Origin are good sources of antioxidants when compared with other wines elaborated from other grapes varieties and from other regions. At same time, good linear correlations between the levels of each different proanthocyanidin fractions and total polyphenols with antioxidant capacity were found for the commercial sparkling wines analysed. BACKGROUND: Grape skin cell walls form a barrier against the diffusion of colour. The colour of red wines is mainly due to anthocyanins, although their concentration in wine is not always correlated with the anthocyanin content of grape skins. The cell wall composition changes during fruit ripening, so it was thought that a study of the ripening behaviour of four premium varieties might provide information on how the composition changes during ripening and explain the technological differences. RESULTS: The largest quantities of skin cell wall material (CWM) were isolated from Monastrell grapes, probably owing to the greater number of cell layers they contain and the thicker cell walls. During ripening, a loss of skin CWM (e.g. 120–60 and 65–45 mg CWM g?1 fresh skin for Monastrell J and Cabernet Sauvignon respectively) and galactose (e.g. 36–20 and 55–30 mg g?1 CWM for Cabernet Sauvignon and Monastrell J respectively) was observed, together with a decrease in the degree of pectin methylation and acetylation, except in Syrah, in which pectin methylation remained unchanged. These changes were accompanied by the accumulation of glucose, while other neutral sugars showed no significant variations. A correlation was found between the degree of ripening and those constituents changing in the grape skin cell wall. CONCLUSION: The cell wall composition differs sufficiently between grape varieties to allow discrimination between them. Ripening was associated with a decrease in the quantity of CWM and galactose in the cell walls. Monastrell showed the largest quantities of both throughout ripening. This study evaluated the effect of grape sour rot on wine fermentation and characterized the chemical composition and the sensory changes in wines produced from rotten musts. Microvinifications were performed during two vintages using healthy Trincadeira and Cabernet Sauvignon red grape varieties to which were added grapes affected by sour rot. Increasing sour rot percentages, up to 50%, contributed to a clear decrease in free run must and final wine yields and induced significant changes in grape must chemical composition expressed by the increase in sugar content, total acidity, volatile acidity, anthocyanins, total phenols, and color intensity. After malolactic fermentation, wines from rotten grapes showed higher values of alcohol content, dry extract, reducing sugar content, total and volatile acidity, anthocyanins, total phenols, and color intensity. Despite the higher levels of reducing sugars, the microbial stability was similar to that of healthy wines. The sensorial evaluation, after malolactic fermentation, showed that both types of wine were not statistically different regarding color, aroma, taste, and overall quality. During 6–8 month storage, wines from rotten grapes showed a significant higher percentage of color loss, suggesting that sour rot is responsible for the decrease in color stability. Nevertheless, the results of sensorial analysis demonstrated that the fermentation of grape musts containing up to 30% sour rot yields wines with similar or even higher-quality scores than wines made with healthy grapes.  相似文献
