通过评分检验法对冰淇淋的奶粉味、黄油味、冰晶感、脂肪感、粘稠度、滑腻感、坚实度、口融性等感官品质进行了评价,采用unscramber 9.0数据处理软件对各指标的相关性进行检验,得到优化的冰淇淋感官评价指标为:奶粉味、脂肪感、滑腻感、粘稠度、口溶性.同时,冰淇淋样品的TPA质构分析表明:可以部分使用冰淇淋的黏度、弹性、硬度、胶粘性、咀嚼性、内聚性代替冰淇淋感官评定指标中的滑腻感、口融性、粘稠度.感官评定结果的秩和检验与基于Thustonian模型的ROC检验对比表明:ROC检验可以更准确的定量描述样品间的差异,得到更精细的样品差异显著性分组.  相似文献

Probiotic ice cream was produced by incorporating Lactobacillus acidophilus LMGP‐21381 in a standard ice cream mix at initial population above 107 cfu/g. The ice cream mix was inoculated with either freeze‐dried or activated cultures of L. acidophilus and a control treatment without probiotic was also prepared. The product was assessed for the survival of the probiotic strain during the freezing process and during 45 weeks of storage at ?15°C and ?25°C, and also for its sensory characteristics. The results showed that the freezing process caused a significant decrease in the viability of the freeze‐dried culture, but no significant change in the viable counts of L. acidophilus was observed during frozen storage. The sensory attributes of aroma, taste and texture obtained high scores in the sensory evaluation. It was demonstrated that incorporation of either activated or commercial freeze‐dried L. acidophilus culture resulted in a candidate food for the delivery of high levels of this probiotic strain to consumers.  相似文献

Four milk-based ice cream samples were produced by heating (65°C) the ingredients at different pressures (0.5, 1.0 bar) and times (5, 30 min). Overrun, melting behaviour, particle size, viscosity and sensory analysis were conducted for each time/temperature combination. The 5-min vacuum application resulted in a reduction of overrun and air bubbles size, whereas ice cream viscosity increased. Opposite outcomes were found for the sample treated with vacuum for 30 min, which also showed a significant fat globule size reduction (<3.0 μm). Sensory analysis revealed that the use of vacuum improved sweetness, milky and creamy sensations regardless the treatment times.  相似文献

Ginger juice and paste (from 2 to 8%, ginger candy from 5 to 20%, and ginger powder from 0.5 to 2%) were incorporated into the ice cream mix prior to freezing. Inclusion of the juice and paste reduced total solids, fat, protein and overrun, and increased antioxidant activity and phenols, whereas the ginger candy and powder increased solids, crude fibre, antioxidant activity and phenols, and diminished fat and overrun. Acidity increased with the ginger juice and powder, whereas it decreased with the ginger paste and candy. First dripping time amplified and melting rate declined with all the ginger preparations. Ice cream containing ginger juice, paste, candy and powder at 6, 4, 10 and 1%, respectively, achieved the highest overall acceptability scores.  相似文献

In this study, the effect of adding dried Besni grape (BG) at different concentrations on the physico‐chemical characteristics, colour values, total phenolic and flavonoid contents, glass transition (), melting (), freezing (Tf) and melting (Tm) point temperatures, and sensory properties of ice creams was investigated. Generally, the addition of BG caused a statistically significant (P < 0.01) increase in total solids, ash, fat, viscosity, first dripping times, complete melting times and a* colour values, while it decreased protein, pH, overrun, L*, b*, , , Tf and Tm values. The colour scores of ice cream samples showed a statistically significant increase (P < 0.05) with the increment of BG concentration, while the effects of BG addition on texture, resistance to melting, flavour, gumming structure and overall acceptability scores were not statistically significant.  相似文献

The effect of polyols (xylitol, erythritol, maltitol and isomalt) on physical and sensory properties of probiotic ice cream, as well as the survival of Bifidobacterium BB‐12 during freezing over 28 days of frozen storage, was investigated. The control sample of ice cream, sweetened with sugar, showed a lower pH and higher overrun than those sweetened with polyols. The viable bifidobacteria counts remained above 8 log cfu/g in all samples. The amount of erythritol added was not enough to obtain a similar sweetness as in control, but too high to get an ice cream with good textural properties.  相似文献

食品感官评价是用于唤起、测量、分析和解释通过视觉、嗅觉、味觉、触觉以及听觉而感知到的食品及其他物质的特征或者性质的一种科学方法,已经建立了科学的评价程序与方法,已广泛应用于产品的感官特征评价及产品鉴别、产品开发、市场调查等方面的研究。我国茶叶品类多样,产品风味独具特色。我国茶叶感官质量评价方法仍然是定级评价,采用食品感官评价技术建立更客观、更有效的产品感官质量评价体系十分必要。本文介绍了食品感官评价定义、方法及其在茶叶风味化合物研究,对典型茶叶(绿茶、红茶和乌龙茶)感官描述分析、典型茶叶感官术语及参考物、茶叶及茶产品消费者测试中的研究进展进行了综述,并提出了食品感官评价技术在茶叶感官品质评价研究发展方向。  相似文献

Effect of tannase enzymatic treatment on protein-tannin aggregation and sensory attributes of green tea infusion was investigated. Green tea leaves were extracted with hot water at 85 °C for 20 min, the tea infusion was then treated with tannase. Results showed that both EGCG and ECG of the tea catechins were hydrolyzed by tannase into EGC and EC, respectively, accompanied by production of gallic acid. The tannase-treated tea infusion had a relatively lower binding ability with protein. Changes in the content of tea catechins, formation of tea cream, and turbidity of tea infusion with or without tannase treatment were measured after 4 weeks. Content of catechins in the tannase-modified tea remained almost unchanged, while those without tannase treated (control) decreased significantly (p < 0.05). Meanwhile, better color appearance and less tea cream formation were observed for the tannase-treated green tea, and tea cream formed for the control after storage. Results of the sensory evaluation showed that mouth feeling, taste and the overall acceptance of the tannase-treated green tea infusion were all better than those of the control.  相似文献

The effects of fat replacers (Simplesse® D-100, N-Lite D, and inulin) on the melting characteristics, overruns, hardness, rheological parameters and sensory attributes of reduced (RF, 60.0 g/kg), low (LF, 40.0 g/kg), and nonfat (NF, 1.0 g/kg) ice creams were investigated. The magnitudes of the melting rates were in the order RF>LF>NF for samples that contained Simplesse® D-100 or inulin, but the reverse order was found for samples with N-Lite D. The nonfat ice creams had lowest overrun values of around 10%. Inulin-containing ice creams possessed higher overrun values than others ( P  > 0.05). The use of fat replacer decreased the hardness of ice creams. All ice cream samples showed pseudoplastic (shear-thinning) behavior. The addition of N-Lite D and inulin decreased the flow behaviour index of ice cream samples. The reduced and low fat ice cream samples were rated as similar to the control by a sensory panel. On the other hand, no correlations ( P  > 0.05) were observed between rheological parameters and sensory texture and mouthfeel.  相似文献

Lycopene crystals were incorporated in butter (20 ppm), ice-cream (70 ppm), and mayonnaise (50 ppm) and were analyzed for their sensory characteristics during storage for 4 months. The peroxide value generally increased with the storage time. Higher peroxides and free fatty acids were observed in control samples as compared to that of lycopene-treated products. Lycopene as an antioxidant slowed the development of off-flavor, off-odors, and color changes in lycopene-added butter, ice cream, and mayonnaise during storage as it interrupts the chain of free radicals involved in autoxidation. Results showed that there were insignificant changes in hunter L*, a*, and b* values of butter, ice cream, and mayonnaise during the 4 months of storage. Thus, it could be concluded that lycopene-treated products are in comparison with control market samples. The sensory scores of ice cream, butter, and mayonnaise revealed that the sensory attributes were similar to those of control samples. With increased storage, the sensory scores decreased but a significant decrease was observed in the 4th month of storage for all samples.  相似文献
